what are the dimensions of the cooking area in the main cooking chamger. I know it is 619 sq in but what is width and length?
Answer: There are three main cooking grates in this smoker. Each one measures 17.36" (front to back) x 11.45" (left to right). This gives a total length of 34.35".

Answer: I was solo putting this together and it is heavy. Took me a couple hours from start to finish but with two able bodied people it should not take more than 30-45 minutes. All the nuts, bolts, screws and other parts are easily labeled in the instructions.
Answer: If you are building it exactly as described...hour with a half hour to unpack this beast.
Answer: Took me about an hour, with one other person helping. Spent about another hour customizing it to reduce smoke leakage (worth it, lots of YouTube videos on it if you're interested in that).

Answer: Yea you can just be aware the more wood you use the deeper the smoke flavor will be I mostly use lump charcoal and a piece or two of hickory you will have to experiment with different fuel sources to see which you prefer
Answer: I personally not cook with wood only . I start my fire with coals , then add my wood . The only thing that I’m dissatisfied with in the thin material . . I’m sorry to say that I’ll have to live with this choice for a few years and then get a different brand of smoker .

Answer: How long the fire keeps going depends on the type and amount of fuel you are using. However, the fire can stay lit for quite long periods of time. Please give us a call at 800-318-7744 and we would be happy to provide you with more information on this smoker.
Answer: Very difficult to answer as there are several factors that will go into play. The temperature outside and also how much you open the lid as that will burn your fuel (charcoal, wood chunks) faster also how much of the fuel you initially start with. Best thing to do is to monitor and as the heat starts to die down add additional don't let it go completely out.
Answer: It depends on the fuel you are using I've gotten mine to go up to 2 hours before I've had to add more but I was burning Post oak some fuels will burn faster than others it also depends how dry it is

does the paint come off 1st use? anything to prevent it
Answer: The paint on my fire box started to turn after the second cook but I put cooking oil on the outside to prevent rust. I expected the paint come off the firebox because it gets so hot.
Answer: I have used mine a few times and no the paint does not come off the interior but off the burner part so I just use Hi-temp paint to recover

Answer: This is a great smoker. I would look at a book by Miron Mixon on smoking. He has several with good tips and recipes. If you have never done smoking before the first thing to learn is low and slow. It takes up time. I usually start the smoker with some good charcoal and then switch to wood chunks (you can get these at lowes and home depot in their grill area. I prefer hickory. I would start with somehting easy like ribs or chicken. Plenty of you tube videos as well to watch. Good look.

Answer: It comes with four tuning plates and a charcoal box, plus charcoal and cooking grates for both chambers. I smeared high temp gasket material between the parts to seal everything and it didn't need any further tuning. Even temps all across. Very happy with it.

Answer: You can cook in the main chamber but you are going to have issues with removing the ashes. I recommend using this just for offset smoking with the fuel in the fire box. If you want to grill, I would get a separate grill like the "chargriller". The ash pan is adjustable and has plenty of grilling room. I have the Oklahoma Joe that I use for just smoking and the "Chargriller" for grilling. We always need a reason for another grill!
Answer: I use it for both. Like others have said...cleanup can be an issue. I have an ash broom and just sweep it into the side/fire box and out the side door when I clean it up. Watch your heat though...I have already flaked paint off the bottom of the cooking chamber doing this...and yes the charcoal was on the grates and not the bottom of the chamber.
Answer: It's possible but I think smoker is not designed to do that.
Answer: line the bottome with foil if you are going to do it. that way cleanup is easier. I'd not unless you have something to keep the coals off the body though. excessive heat directly on the drum will lead to paint chipping and rust

Answer: Get the black Silicone RTV 4500 FDA Grade sealant and the 1/2" x 1/8" Lavalock High Temp Nomex BBQ HT gasket smoker seal, self stick grey. That is the two best purchases I made for the smoker.
Answer: If they have never done smoking before, i would only get somehting like a charcoal chiminey which helps in getting charcoal started quicker. Obviously some good gloves can work as well. Other than that, let them learn and discover what they might want and need.
Answer: In addition to the sealant and gasket....I would get two higher end thermometers that you could install at grate level. Tel-Tru or LavaLock are good brands. You could also consider two clamps that could be installed to ensure the lid is held down tight during smoking, LavaLock makes these as well.

Answer: I don’t know anything about the char grilled BUT the ok joe is one hella. smoker you do need to seal both lids however. Since my purchase I have added two more ok joes to the mix and all three cook the same low and slow. I use the top half of the smoke box,you have to fit a grate on the split my coals and wood burn nice and slow

Answer: I did and I do recommend doing this. There is almost no leakage. It’s cheap and easy to do when it’s new out of the box. It would be more difficult once it has been used. I don’t think it would be the end of the world if you didn’t do it.
Answer: I did both, definitely do the fire box. Then if you have the materials, do the main chambers.

Answer: I am not exactly sure. i have cooked and entire pork shoulder and three full slabs of baby backs at the same time. i would guess you can get 6 full slabs but it depends on the orientation. hope that helps.

Answer: It does not flip down, it removes entirely. My husband stores it inside the smoker when it's covered and not in use, but it could also be easily stored on the lower shelf. He prefers to keep random other stuff there. The welds that it slots into are well done and it's very easy to install and remove, while also being very sturdy and weight bearing.

Answer: It's been a couple years since we bought this, so I'm not sure. I do remember being startled it was only one box that did not seem big enough. As I recall, it was slightly over the length of the big chamber and maybe a foot deeper. Basically packed in the box like a Chinese puzzle, parts just kept coming out and out. Because it was one box, it was extremely heavy. We unpacked it where the shipper placed it and carried it piecemeal into the backyard.

Do the "baffles" also collect grease? I hate the idea of grease just running down the bottom towards some hole.
Answer: Grease does accumulate on them but it also is able to drain through small holes in them. I have noticed the the grease that accumulates on the baffles tends to be thicker and the grease in the bottom of the smoker is very thin. I just wipe them off as well as the bottom once it cools. It actually seems to help season it much like a cast iron skillet.
Answer: The baffles do get greasy, but there are slots cut in one of the baffles to allow smoke to come through. I lay a aheet of heavy duty aluminum foil on the bottom of the cook chamber to minimize grease buildup

B Gammill : Side door (with vent) to firebox does not fit, does not seal.
The door to the firebox does not cover the opening cut for it. It appears that they cut the opening then tried to use the cut out piece of scrap metal instead of fabricating a door that fits. Moreover, they did not even get the piece of scrap metal welded straight. So, my brand new grill has a gap ALL THE WAY AROUND that varies from ~1/32" to ~9/32".
Needless to say this is not acceptable. I will contact Charbroil tomorrow. If they have no solutions , I will return it to their dealer.
update Dec 12, 2018:
Went to Academy and looked at their 2 other in stock samples of the reverse flow model, and while neither of them were as bad, both of them had the same crack around the firebox door. Academy would have swapped their parts for mine, I called Char Broil...Sent pictures to them...They say this meets their spec... So I returned the whole thing, and got a refund.
Anyone who is interested in this unit, I suggest that you either have the welding tools and competence to weld a piece of metal to the inside of the firebox to block the crack, or be prepared to spend money at a fab shop to get that done, or, do what I am doing...keep looking.

Great smoker. Do not use it untill you modify it a bit....seal all doors with nomex felt and all assembled parts with gaps ie; firebox stack with hight temp rtv silicone. Smoker takes a while to get to temperature but maintains steady. Temp range differential accross cook area is 10°

Easy to put together. Instructions were straight forward and it woks great! Reverse flow is the way to go! The smoke box stayed at a much more even temperature than my old one.

Steve N : Recomended, but you'll need to "tweak" it a little.
As other reviews have said, go into it knowing what you're going to get. You MUST use a high temp RTV sealant when assembling the firebox, you REALLY should get a seal kit for the doors. Expect the paint to fall off the firebox. A couple of cheap mods and you're still savings hundreds vs something like a Yoder. I'm very happy with the results of this smoker, just shouldn't have to do this stuff. But again, hundreds saved vs other smokers made of this grade of steel.

Protective coating peeled. Very important for longevity. Now one drop of rain is going to start rusting. I see online and from manufacturer they know it happens every time but the reccomend you buy a sander and quality paint and fix something that could be fixed easily at manufacturing process. I didn’t buy a new smoker as a project fix. I don’t know why it got such high rating. I have the old ok joe been outside for over a decade no rust or peeling

I love this smoker, I did some mod's to it and it works very well. I have to say though, that the paint in the firebox came out during the season burn. But I was expecting that, no big deal for me.

First off. This is the best damn smoker 140 bucks could buy. However, not everything is perfect. I've waited till I've put in over a 100 hundred hours over the course of two months to write this review.
Everything is great except the baffles. I hope Char Broil Inc is reading this. The new owners. The baffles do not do a good job of producing smoke rings and, make you burn more fuel. Without the baffles and a standard flow, I gained better results. In my opinion your better off with a regular highland. And doing your own modifications. I have an engineering background so I have plenty of projects up ahead. I also noticed standard flow produces better "clean blue smoke"

this smoker is the bomb when you do the mods all horizontal l smokers need tuning plates door sealing love them so much i purchased two more Labor Day we had 12 slabs 3 briskets 6 chickens 10 lbs links we stunk up the neighborhood with Hickory and Oak OK JOE SMOKING

This smoker is a great smoker with the correct modifications. OK Joe is not known to be an out of the box perfect smoker. Once you install door seals, seal the firebox, add door latches, and get better thermometers, it holds it's heat perfectly. Now, with that said, you shouldn't have to put extra money into a product that used to be great out of the box, but that was before Char-Broil bought them. But, for about $100 more, you have a smoker than will compete with others twice as much. So, if you know what you're getting into with the OK Joe, you CAN have a great pit.

Great smoker. Do not use it untill you modify it a bit....seal all doors with nomex felt and all assembled parts with gaps ie; firebox stack with hight temp rtv silicone. Smoker takes a while to get to temperature but maintains steady. Temp range differential accross cook area is 10°

This was a gift for my husband, who is a newbie smoker and he loves it. We replaced a "value" version that was too lightweight and leaky to hold heat and almost made him give up on smoking. I'm so happy we bought this OK Joe! I mean, what's not to like about your husband fixing delicious food and having fun learning how to use it best? We did order and install full gasketing (smoker box and fire box), lid clips, and comprehensively RTV sealed the entire unit as we assembled it. Doing it before you have to clean it to accomplish it seemed like the best plan, and smoke comes out where it should and nowhere else. This is a vast improvement on the "value" brand! This has a moveable smokestack depending on whether you want traditional or reverse flow smoking, I did use extra smoker box gasketing around the edge of the cap for the unused smokestack port, I think this would be a big leak point if left alone. Obviously you don't want to use sealer there, gasketing works wonderfully though. I highly recommend the cover made specifically for this by the manufacturer, it has the capability to fit both smokestack positions with zero effort, worth the $ for sure. Many reviews have mentioned paint issues with the firebox peeling pretty much immediately, we've used this several times including a 14hr smoke and have zero issues with this problem. Maybe the manufacturer stepped it up?

I love this smoker, I did some mod's to it and it works very well. I have to say though, that the paint in the firebox came out during the season burn. But I was expecting that, no big deal for me.

Leaks like crazy if you don't use a sealant. The thermostat arrived broken but customer support was really friendly and got me a replacement in no time. The thermostat was pretty accurate for lid-elevation temperatures. Also, if its your first offset, prepare to go through a lot of fuel. It reminds me of my WSM 22". Unfortunately the paint on the firebox has already come off so I expect to repaint it soon. I don't regret buying it, I think it is a good first offset smoker. Feels thick and sturdy. I like the heat plates that help even out the temperature. Tip: I did notice that if I am cooking less food, using less plates (removing the plates from the left) burns less fuel.
Update 12/30/17: I've had it for a year now. The firebox lost tons of paint and started to rust but from what I've read, even the $1,500 offset smokers will peel unless the firebox is insulated. I think good maintenance requires you to wire brush down the rust and repaint with Rustoleom every season. I also noticed that food closest to the firebox still manages to get cooked faster due to radient heat; the heat plates are too thin to completely prevent it. I learned how to cook cleaner smoke with wood splits by controlling the fuel (wood) instead of the oxygen. My BBQ keeps getting better and better. I still like it, even with its downsides. I own or have owned a Kettle, WSM, Akorn, and offset. The offset smoker is still my favorite way to smoke BBQ. Maybe someday I'll get a $1,500 offset to replace it but I have no desire right now.

For the handful of times I have used this smoker I am very pleased. I did add several mods to it right up front though. Added 1 more thermometer, grease drip bucket, gasket seal on fire box and food chamber, temperature probe port seal, and hood hold down latches.

First time using it after a seasoning practice run, nice even temp all the way across, ribs were awesome . I did get the firebox a little to hot at one point and burned the paint off.

I'm in love with my new smoker. It is my first and it's been a ton of fun learning how to control temperatures and cooking techniques. Currently on my 6th cook with it. And mine has lost paint on the firebox but I'm okay with it. It does leak and I have in mind to just go ahead and weld the seams but I dont feel like I absolutely must. You can tell it's not custom built and I broke off the little firebox damper door prong already but since I'm welding the fire box I'll just fix it at that time. Not perfect but honestly great. I'm obsessed with this thing and my family and neighbors are reaping the rewards. Very happy:)
