Does it come with butane?

will spice or herb mixes work with this, or can only wood chips be used?

Answer: Some spices and herbs will work with a smoke infuser like this. Just be careful which ones you use and how much as some can be quite potent. Also, avoid anything which might melt and clog the screen. ex: dried fruit. We mostly stick with wood chips for the cocktail smoker, but would love to hear what else works well for you. Please do tell.

Answer: IMO smoke pairs best with whiskey, bourbon, and rum based cocktail, because these liquors are aged in charred barrels. The best part of smoking a cocktail is experimenting with different recipes. Old Fashioneds, Manhattans, and other whiskey and bourbon based cocktails are excellent with smoke. I plan to try it on some smoked rum drinks, martinis, smoked wine, smoked beer, and more can be great as well!

If you are searching for a gift for someone who is hard to shop for and who also loves cocktails, this kit may be what you are looking for. Everything about it screams high quality, from the way it is laid out in the box to the heft and sturdiness of each piece. It comes with everything you'll need to infuse your drinks (or a small quantity of fruit) with smoke. Although it's easy to use, this smoker kit is best suited for one or two drinks at a time since each must be made sequentially..

The kit contains everything you'll need: a two-piece solid oak infuser; a small jar of oak chips; three filters to contain the wood chips; a small butane torch; and a canister of butane. They are all laid out inside the cardboard box on in a flocked surface molded to fit each. I wish that this kit had a wooden or similarly stylish and sturdy box for storage or display. Because the kit is pricey, it demands that kind of container.

To use, you put the bottom of the smoker on top of a glass, add a pinch of oak chips to the filter, ignite with the torch, and cover with the top piece. You can leave the smoker in place for as little as ten seconds or as long as several minutes to infuse both the drink and the glass with smoke. The bottom piece doesn't fit well inside a glass despite the concentric ridges and must be placed carefully on top. It's not wide enough to fit a martini or cocktail coupe glass, so if you want to smoke anything served without ice (say, an Manhattan), you'll have to use an old-fashioned glass.

So how do cocktails taste? Smoky, although not overwhelmingly so. I've made Manhattans and Old Fashioneds using a few different techniques. One, I smoked just the cocktail for about ten seconds. Two, I smoked the glass first, made the cocktail, and then smoked again for two minutes. Three, I smoked the garnishes (Amarena cherry and orange peel), the sugar cube, and the glass of an Old Fashioned for two minutes, made the drink including ice, and smoked again for another two minutes. Not surprisingly, the longer smoke times and two-step processes resulted in greater smoke flavor. If you decide on a multi-step process, you can prepare more than one drink by completing each stage for each before moving on to the next. I like how all three variations taste, although none would be something I'd want to drink regularly. The presentation is both fun and elegant. The ritual of preparing the drink has its own satisfaction.

In addition to smoking drinks, I also put a small quantity of cherries in a tall glass and smoked them twice for five minutes, stirring between ignitions. While the smoke taste wasn't heavy, they did absorb some of the taste.

Although this smoking kit is expensive, it makes a great gift or personal purchase for the home bartender. I like that it adds an element of fun as well as a different taste to drinks. Sipping a freshly made cocktail with visible smoke wafting from the glass makes for a gimmicky but ultimately fascinating drink.
