Answer: Yes for sure. They unlink and I have used anywhere between 1 and 3. I also flip them around and make them fit more closely to air fry tostada shells from tortillas between racks.
Answer: Yes, you can use only one, two, or all three racks. The bottom rack has fixed risers on each side. The other two racks lock into the risers, so you could leave one out.

I found that when I tried to arrange the fruit to be shrunken and then tried to assemble the racks together that things got complicated. l The racks did not want to go together as shown in a photograph. I couldn't discover any helpful hints, only the photograph. I suspect that the manufacturer knew of the problem, but hoped the photograph would suffice without having to reveal any of the steps or tricks the staff had used to assemble the one used in the photograph. I personally hate this way of doing business where profit overrides a concern that customers can make use of the product, Or they have engineered a square peg to fit a round hole.

It fits in 8-qt Instant Pot air fryer. The ability to modify the numbers of racks is very convenient. Soaking it in the pot makes it easier to clean. The liners were used because the fish fillet were skinless. I didn't want the fillet to break apart.

There is a middle bar along the bottom of each rack that makes the surface not flat hence making the racks unstable when we placed food other than lightweight sliced fruits. My food (not thin sliced fruits) slid off the racks frequently.

3 drawer Dehydrator Rack fit perfectly. It accommodates about 1/2 a pound ( 250 gms ) depending on how you cut it. Average time is between 4 to 6 hrs again depending on the thickness of the slices. Our cost of $22.00 CAD/kilo for an eye of round vs ready made Jerky at $8.97 / 56 gms at Walmart left us speechless. And we controlled our marinate ingredients so probably a tad more healthy. We like the marinate vs dry rub spices. Let marinate for 6 to 12 hrs depending on taste.

Works well for dehydrating. The racks are not completely flat. I thought this might be an issue with rounded fruits or vegetables but I used it with sweet cherries and they stays put. It comes with a cleaning brush, a nice touch.

used it once so far , made 2 batches of beef jerky ...worked real well , sprayed the rack first with cooking oil AKA PAM clean up was a breeze , @ 150 F nothing stuck to the dehydrator rack. The Rack fits together quick and easy, moved the rack positions around from top to bottom a few time during cooking to evenly cook the Jerky.
