how do they sharpen? ive been using russel dexter for 20 years afew swipes with a accu sharp and your good to go!
Answer: I too am a Dexter russell fan - this is a nice blade but i'm sticking with my DR. The bubba blade is a lot harder than the DR blade. I'm sure this is a great blade but time proven - i'm sticking with the DX no doubt. Just saw this knife on youtube and honestly, I can do that - and have done that - with my DX. Both are great blades. If you are in the market for a new one, i would definitely buy this blade!
Answer: Use a good quality diamond edge knife sharpening steel, and it will sharpen any of these to a razors edge.

what is difference bertween stiff & flex?
Answer: The flex will give a little when cutting the stiff will not give at all, so it's your preference in blades. Both cut easy, but with a little flex you can get through smaller fillets.
Answer: Stiff means the blade has what we call "good backbone" and works well when chopping, IE cutting the head off of a Fish, flex means the blade will follow the backbone of a fish when cutting filets off of the fish.
Answer: The stiff is a stiffer blade good for cutting through bone no flex flex at all where as the flex does have some give better for smaller fish, lighter bones. Although both cut good I personally like the flex blade better even on steelhead up to 15 lbs, my guide preferred the stiff blade so I left with him as part of his tip
Answer: when you apply downward pressure on the the knife blade it "flexes" or bends. A stiff blade doesn't bend and is rigid.

As Crocodile Dundee would say.....Now this is a knife. With a 9-3/4; blade, this is the kind you would want to bring to a knife fight! Overall pretty good knife, nice feel in your hand, lightweight for a knife of this size and well-balanced. Nice textured non-slip handle. With the long blade you should be able to slice right thru a venison ham in one motion. Obviously, with the 9-3/4; blade this is not a knife for skinning or deboning of game (other than filleting large fish). Nor is is suitable for a camp knife or survival knife. It's sole purpose is for slicing thru large pieces of meat or fish. Negatives...made in China and the blade was not as sharp as it should be for a fillet knife, but I can fix that.

Very, very sharp knife! I made the mistake of "tossing" it into a bucket (never toss a knife!) after fileting two flounder. Put a deep cut in my thumb I should've had stitched but did not. Now I have a pretty good scar and a partially numb thumb that no longer works on heat sensing equipment such as key pads on smart phones. :) I love the long length of the blade for redfish and other large species. Just be very, very careful when using this (or any) knife. You might want to consider using a metal chain maille restaurant kitchen type glove. I still like my electric knife for trout, but this one's great for the larger, wider fish.
