Answer: 11.8 inches (the width of the bag roll Anova sells for this machine). The tray for the bag roll and the drip slot used when sealing a bag with moist contents are both just under 12" wide.

Answer: Anova offers bag rolls that are 11" wide and about 20 feet long. Bags can be cut from the roll to any length you need. Anova also sells a 50 bag roll of 8.6" x 11.8" tear off bags. We have also used a bag roll 8" wide and about 20 ft. long that we got for an older machine (not Anova). Worked fine.

Answer: The standard ANOVA bag roll we have used is just a few inches short of 20 feet long. At full length, it fits just right in the internal storage compartment of the machine. I would hazard a reasonable guess that the diameter of a 50 foot bag roll would be too big. But for a more definitive answer, you could try inquiring on the ANOVA Web site.

This Anova replaced a $48 Geryon, which I loved until I accidentally sucked up a bunch of liquid and fried the electronics. I thought the Anova would be an up-scaled treat. The first job I gave it was to seal two sides of salmon portions. After a few weeks, I went to use one and found it had lost it's seal and was full of ice crystals. Same story for all of these expensive little packages. Using new bags, I tried several experiments to get a good seal - like flattening out the rubber pressure bar, which didn't seem well-seated and pressing down on the lid... The technique I settled on was to run the heat strip empty first to warm it up, then with a bag, hit the seal button three time in a row. If you can see any remnants of the waffle pattern in the melted area, it is not going to hold a seal. So, this is a tedious hack and really shouldn't be necessary for the price I paid.

The vacuum and seal function works quite well both for food storage bags and with tube for lid attachment for vacuum sealing Ball jars (how we store coffee beans). BTW, the tube and attachment are from an older, larger Seal-a -Meal machine. Works well with this machine. Smaller size makes it much easier to store off the counter.

Originally reviewed this item after having issues sealing thawed chicken. Later I realized that the issue was that I let liquid get in between the seal. As with any sealer the wet food sealing function isn't magic and requires a little extra care/attention to make sure you don't get liquid in between the sealing elements. Otherwise you won't get a perfect seal.
So after learning a bit more I think this product works properly and as expected. I plan on keeping it and will update my review as I learn more.

I love ANOVA Souis Vide cookers and because of that quality perception I thought the vacuum sealer will also be the same quality plus it says it’s a double sealer but unfortunately my experience is very very bad with its sealing.
85% of the time it’s not sealed and it’s a wastage of money. I bought another brand and on the same bags and with same quantity my other vacuum sealer works perfectly fine. I opened it and my kids garbage the box otherwise I would have returned it.
My recommendation is not to waste your money on Anova Vacuum sealer.

I was OK using ziploc bags for sous vide until one of the bags failed and I ruined a expensive piece of prime beef. So I figured I use the sous vide often enough to warrant buying a vacuum sealer. I waffled between this and the lower cost model, and ultimately chose this due to the onboard bag storage and sealing/cutting function as well as some of the other additional options vs the base model.
The vacuum machine is sleek and looks nice. It's a little bigger than expected, but relatively easy to hide in the pantry when not in use and won't take up too much real estate in there. The on-board cord storage is nice and being able to keep the roll of customizable bags within the unit means one less thing I have to look for when I need to use this.
The main downside is that this machine isn't really all that intuitive for the first time user. I've never used a vacuum sealer before and given how easy and intuitive the Anova sous vide was, I erroneously assumed that this would be the same. Well, how wrong I was. The included directions are terrible, and look like they were written by a dropout from the Ikea instruction manual writing school: No words, overly simplified pictures, and no explanation. It's really disappointing to turn to the enclosed instruction manual for help only to get even more confused and frustrated. Sadly no readily available videos on YouTube either. So with some trial and error and wasting a good amount of vacuum bags, I sort of figured out how to use this machine and vacuum seal food.
The good news is that the vacuum sealer works well, the bag stays sealed shut, and my steaks all turned out well. It's also much easier to use this than ziploc bags and I have complete confidence that the vacuum sealed bags won't leak. I've used this a dozen times now and haven't had a bag failure yet. Being able to customize the size of the bag for my needs is great. Once I figured out how to use the thing, it's been great. Just the initial first impression was poor.
Anyway, it's a little pricy, but the quality of the bags are nice, the seal works, and the convenience and reliability of the machine has been great. I just wish there were clearer instructions to make the initial attempt more user friendly.
The ability to custom control the amount of vacuum has been more helpful that I thought. In addition to getting food ready for the sous vide bath, I've also been using this for long term storage of coffee beans I buy in bulk, meats for the freezer, marinating food, and just about everything else you can think of that would benefit from airless storage. After I completed the included roll, I've also stayed with using the Anova brand rolls of bags just to keep everything "in the family". FYI, the bags are pretty good but have their quirks.
