Answer: It takes some trial and error learning. You first have to judge your amount of charcoal, how much and when to add combined with use of doors and taking off the top to let heat out. Can be done! Really also need a digital thermometer. Good smoker! Cooks well but does take some learning.

Sporkov : Inexpensive, but worth it.
This smoker/grill has a quite a bit of flexibility for what you pay. The biggest thing I would say, is that as a grill, the fire bowl should be 3 or 4 inches deeper so that you can have more charcoal without being right up against the grate you use when using it as a grill. Otherwise, it is very easy to use, putting it together was simple, and it is solid for the price.

I wanted a good beginner smoker. I have a Cobb cooker, which is really nice, and works wonderful but is very small. I've also done offset smoking on my regular grill, but was ready to up my game to a real smoker. After looking at many different options, I decided to go with a simple vertical charcoal smoker and this one seemed like a good option. I've done 3 smokes so far and have been pretty happy with the results. I've done ribs, turkey breast, salmon, chicken, brats, pork roast, potatoes, sweet potatoes. Lots of experimenting!! The PROS: - I love the 2 access doors. 1 for the fuel and 1 for the second rack. It makes it easy to access these areas. - I love that it easily comes apart. This allows you to carefully lift off the upper parts to access the fuel or second grate, etc. - It has a big water pan which I've used with water and beer. Seems to help keep the meat moist. - It seems to heat well for smoking. With the water pan, you can have a very hot fire and it still stays in the 250 degree range. Without the pan, it needs less fuel to be at 250-275 range. - Comes with a hooks and fitting to hang meat for smoking. I have not tried that feature yet though. The CONS: - It's rather cheaply made. I have no idea of the durability yet, but you get what you pay for. It's not made of the most robust fittings and materials. - You need to assemble it and tweak some things. I had to bend the doors and door handles a bit to fit better and close more tightly. - The sheet metal brackets that hold the grills in place are not good. They do the job, but should be made out of thicker material. They bend easily when cleaning. I'm going to upgrade these to something better because they are way too flimsy. - Ash buildup/airflow . I don't think the lower part has enough space for ash and the airflow seems restricted by the small lower opening/ash bucket. The coals only burn in the center and the ash builds up. I might try modifying this a bit to achieve better results. Raising the coal grate and adding lower vent holes may help.
OVERALL: I believe this is a good low-end vertical smoker. I've been doing my smokes with the water pan in place for the first 2 hours. Then I remove it to get a little more heat and let the dripping fall on the coals for added flavor. I just got a 6-sensor meat digital meat thermometer to use for my next smoke. I don't know how accurate the built-in thermometer is. I'm curious how the heat is distributed in the smoker. I don't think this is a smoker you will hand down to your kids or grand kids. I don't think it's that durable. I plan to use mine a lot this summer and keep it clean and maintained, so we'll see. But the materials and fittings are just ok. That said, I wanted something I could get into cheap and learn from. I think this smoker fits the bill perfectly. My family has loved the ribs & turkey breast. Oh so good! My wife also really loved the smoked sweet potatoes. Smokey creamy goodness!!

The grill itself is great, the assembly’s however was not so great! The screws to put it together all came in the same bag, mind you there were different screws. Made putting it together a bit of a pain, my recommendation would be to simply separate the screws and label them for easier assembling!

CONS: Assembly is fairly straighforward, but it pays to take the time and seperate the hardware, as it all comes bagged up together. Doors require a bit of bending to fit well, but still don't close completely. Charcoal pan could be a little bigger
OVERALL: It's an excellent smoker, especially for the price. Do yourself a favor and put it together on a workbench instead of watching TV in the lving room like I did; you'll come out ahead on it. As with every other built-in, don't trust the thermometer. Digital probe thermometers are inexpensive and handy, grab one when you order this smoker.

I’ve only used this as a grill so far, but it’s probably worth the $90 just on that alone. In fact you get two grills for that price. Will update once I’ve smoked something in it.
Assembly was a bit of a pain, I felt like it could come slightly more pre-assembled, and the instructions could be a little more detailed.
That said, it is a decent looking, minimalist grill if you take the time to assemble it correctly. Some of the horror story reviews are clearly from poor assembly.

We previously had the 17" model from this brand and upgraded after that one started a deck fire thanks to some raccoons. But this one is fantastic! Assembled easy in under an hour, good sturdy material, comes with instructions. Retains heat very well and overall a good value for the money. I do think the doors on the front could be a little better quality but that's my biggest critique of it. Definitely recommend doing some research before you buy a smoker and start using it. The biggest upsell for this model is the charcoal goes in the bottom of the smoker rather than a separate pan. Less likely to tip over and cause issues. But I definitely recommend this to anyone getting into smoking.

Update: Still happy with smoker. I posted some photos showing what a 15 lb brisket looks like loaded onto a single rack on this smoker. I just spent the night tending it. With dampers wide open, I was able to maintain temperature with a modest amount of lump charcoal as temps fell into the upper 20's and in a persistent 10-15 mph breeze.
The removable ash cup makes these long smokes much easier than with my old smoker, which would choke on it's own ashes after about 6 hours. With this one, I lift the upper portion off the fire, give the coals a good stir, and the ashes fall into the cup for easy removal from underneath. Then I can build my fire back up and go back to periodic additions through the door.

The first impression was “meh” (metal is thin, doesn’t look too durable). After a month of use would def recommend treating all the buckles with anti-rust liquids right out of the box. Doors could be a little tighter. But overall very happy with this thing. Used it as smoker and as a grill. Holds temperature pretty well. Yes, smoke comes out of everywhere, but doesn’t bother me (pretty large backyard). Good quality for the money.

There are two major design flaws:..the doors are handy but they allow too much smoke to escape and create problems with temp control.....I put on fiber gaskets and that has helped a great deal. The other flaw is that the hooks for hanging ribs is attached to the underside of the top and it is awkward to handle that way. Pit Boss has a bar that the hooks are hung on and that would be a great change here, The price was good but fighting these flaws would have been worth a different smoker at a higher price.

I sent a message that this item did NOT work as described. 7 hours cooking a 3 lb pork butt and it never got over 120 degrees. We finally took it out and cooked it in the oven. The bowl for the chips and charcoal fell onto our concrete. We then placed it on the bottom rack where we can grill to keep the bowl up. It STILL did not get any higher than 120 degrees. I am not happy with this item. I am disappointed and dissatisfied.

Update: Still happy with smoker. I posted some photos showing what a 15 lb brisket looks like loaded onto a single rack on this smoker. I just spent the night tending it. With dampers wide open, I was able to maintain temperature with a modest amount of lump charcoal as temps fell into the upper 20's and in a persistent 10-15 mph breeze.
The removable ash cup makes these long smokes much easier than with my old smoker, which would choke on it's own ashes after about 6 hours. With this one, I lift the upper portion off the fire, give the coals a good stir, and the ashes fall into the cup for easy removal from underneath. Then I can build my fire back up and go back to periodic additions through the door.

For the price you really can't complain, My only major complaint is that the doors don't really seal very well. The temperature gauge it comes with is... Questionable, but I bought my own multi channel thermometer anyways so it doesn't bother me. The latches that actually keep the different levels together are very nice, I'm considering replacing the door latches with something similar so they seal better but don't know if it's needed because it's not THAT loose, but it's definitely noticable
Dyssonance : Awesome smoker once you get it going
I wasn’t able to move my larger grill with side box to my new home, and wanted to do some charcoal cooking and grilling and smoking, so went for this one.
Assembly was a bit of a bear, but not hard to do, and was able to get it fired up and cooking some quick dinner steaks that night. The ability to hang from inside has been a boon for doing vertical smoking, and the way the chip bin works to diffuse the heat was wonderful. Great flavor from the smoke — and it does a better job on pork than my electric one does.
Could probably use pellets if you wanted. I used chips and chunks, and no soaking needed.
It is very light — I have a bit of a strong wind at times, and came home to find it lifted into parts.
The dual doors give you a great ability to both regulate the heat (adding hot coals or fresh charcoal) and still be able to adjust for the hotter lower grill and then the cooler upper grill.
Like most barrels, it gives off good heat, so can also function as a nice fire pit for roasting marshmallows.
Clean up is super easy, as you just lift the parts and everything can be washed if you want.
I recommend it.

I love this smoker! Temperature control with the top vent and side doors works great. Temperature for smoking is steady and it can get hot for grilling. It has the water pan, wood/charcoal pan, and two grates. You can adjust the fire distance by moving the fire bowl up or down. The temperature gauge is accurate enough trust.

The grill itself is great, the assembly’s however was not so great! The screws to put it together all came in the same bag, mind you there were different screws. Made putting it together a bit of a pain, my recommendation would be to simply separate the screws and label them for easier assembling!
Sidecar50 : Cheaply made for the price
The material is a bit light made. Nothing like the one I had before. The top side door is bent and not close all the way. I asked that the unit be boxed so the product didn't show when delivered Instead it came boxed inside with a blank box and the outside letting all the thieves know what is in the box. Sorely disappointed

The grill was a little difficult to assemble, but everything was there that needed to be. It has really performed nicely the past few times we've cooked on it, and the features are really nice. We hope the weather protective cover will help us keep it around for longer than its predecessor. We look forward to trying the smoker for that purpose.

Nice heavy material, ceramic pans. Love the two doors plus it comes apart with two clips so you can build coals before attaching the top part. Need one handle which was broken on arrival.

What a piece of junk I’ve only used it three times and the handle on the lid has already broke off and No one will do anything for me to say my item has expired I’ve only had it maybe two months so bad to Amazon bad to whoever manufactured this barbecue I would say The only reason you’re in business is people like me and of course we take chances with big box companies like you who have control over everything shame on you people no I spent good money for the product and the product a piece of junk how do people get away with that whoever reads this you’re someone like me and you’re taking a chance I’d go with somebody else this is a piece of junk please let’s shut these people down that don’t take care of us after we buy their product????????????????????????????????
Sporkov : Inexpensive, but worth it.
This smoker/grill has a quite a bit of flexibility for what you pay. The biggest thing I would say, is that as a grill, the fire bowl should be 3 or 4 inches deeper so that you can have more charcoal without being right up against the grate you use when using it as a grill. Otherwise, it is very easy to use, putting it together was simple, and it is solid for the price.

Perfect size. This one I can smoke a full turkey or anything else I want. Smoke held in pretty well for this style. The doors don't really tighten well enough but smoke was still good.

Easy to put together. Have enjoyed using it as a smoker. Holds a constant 200° when i use it. Really like the 3 parts you can snap and unsnap. Only downside is taking the water out after i`m finished.

GiaTs : Pretty decent smoker
The first impression was “meh” (metal is thin, doesn’t look too durable). After a month of use would def recommend treating all the buckles with anti-rust liquids right out of the box. Doors could be a little tighter. But overall very happy with this thing. Used it as smoker and as a grill. Holds temperature pretty well. Yes, smoke comes out of everywhere, but doesn’t bother me (pretty large backyard). Good quality for the money.

I have had many smokers of this type over the last forty years. None like this one. The design is wonderful. It allows me to configure it for virtually any task. Love using it for a grill when I do not want to fire up my huge wood fired bbq or my gas grill. Temperature control is excellent. The ability to control air flow really saves charcoal and wood. Easy to clean. I purchased the 20" diameter, and would encourage others to do so as well. The hooks included allow me to hang hams, bacon and homemade sausages for proper smoking. The price was fantastic. Best smoker of this type ever.
