"Illnesses due to Salmonella and E.Coli O157:H7 from homemade jerky raise questions about the safety of traditional drying methods for making beef and venison jerky. The USDA Meat and Poultry Hotline's current recommendation for making jerky safely is to heat meat to 160 °F and poultry to 165 °F before the drying (dehydrating) process. This step makes sure that any bacteria present will be destroyed by wet heat. But most dehydrator instructions do not include this step and a dehydrator may not reach temperatures high enough to heat meat to 160 °F or poultry 165 °F."
"The danger in dehydrating meat and poultry without cooking it to a safe temperature first is that the appliance will not heat the meat to 160 °F and poultry to 165 °F - temperatures at which bacteria will be destroyed."
Most dehydrators sold in the USA and other countries have a Maximum Drying Temperature of 155 °F with a few of them topping out at 160 °F, but Very Few have a Maximum Drying Temperature of 165 °F.

With 10 Racks Included with this unit, the Total Amount of Drying Area for dehydrating your Food or Jerky is 2320 Inches or 16.11 Square Feet. The 10 Drying Racks are manufactured from 304 Grade Stainless Steel (NOT Chrome Coated) and the Square "Holes" in the Racks are 1/4 Inch x 1/4 Inch which helps accommodate almost any Fruit, Vegetable or Jerky that you wish to dehydrate.
The STX Dehydra 1200W is a “Multi Sectional” Commercial Grade Food Dehydrator
This Dehydrator comes in 2 Different Sections (Front & Back Sections) that you can Take Apart in about 10 Seconds and/or Lock Together in 10 Seconds. The Front (Dehydrating) Section measures 16.5" in Width x 14.5" High x 15.5" Deep. This is the part of the unit where the 10 Drying Trays fit in to dehydrate your foods. The Back (Power, Heat & Control) Section measures 16.5" in Width x 14.5" High x 4.5" Deep. When assembled, the Total Unit (also mentioned above) measures 20" Front to Back, 16.5" in Width and 14.5" High. Due to this Feature, you can take both parts of the unit apart and it makes the whole dehydrator much easier to clean. In fact, you could actually clean the front dehydrating section and stainless steel racks by using a pressure washer (on low) or your garden hose if you wanted. You, of course, could not do this to the back section as it has the electric motor (fan) and controls in it, but you could blow this section out with air. A lot of dust accumulates around the motor & fan and you want to keep this clean so it does not get clogged with dust and overheat.

The Size of of this Total Unit (With the Front & Back Assembled) is 20" Front to Back, 16.5" in Width and 14.5" High, so PLEASE check wherever you plan on using it first "BEFORE YOU BUY"! 90% of these Dehydrators that are returned to us is because the buyer stated "TOO BIG" as they Did Not Read the Information on this Size of this Unit. This Dehydrator should be "At Least" 12 Inches Away from any wall during operation to allow for proper air circulation. Answer: BPA is found in polycarbonate plastics and epoxy resins and this dehydrator is essentially made out of 100% Stainless Steel excluding the motor and a few Regualar Steel parts in the back fan part of the unit.

Answer: Thank you for reaching out and asking about our STX International 1200W Dehydra Food Dehydrator! The holes in the trays used to be 7/8 inch, but customers continued to request smaller holes. We currently have trays that have 1/4" holes with our product (this is also what is pictured that looks more like mesh). We have had a good response from customers saying that they appreciate the smaller holes.
Answer: They are a bit like mesh but with piece of metal surrounding a smaller hole in the middle of the square ... so total of square is optionally 1/4 inch. We do bananas and lost if fruit in it and when you get to the top of a banana sometimes it falls through the hiole. But 99% of the banana fits great.
Answer: The actual grid size of the stainless steel trays is close to an inch. I purchased silicone mesh drying sheets for smaller items, like vegetables and berries. I purchased mine almost one year ago & am pleased with my purchase.

How long does the food last
Answer: There is no single answer to this with all the different types of foods that can be dehydrated, but we’ve had jerky up to two weeks easily(it gets eaten too quickly to tell you beyond that) but you can find guidelines for pretty much each food type online, with a little searching. I can’t brag on this unit enough. It cut my drying time on three pounds of jerky, from 18 hours on the cheap dehydrators, to under 4 hours with this one. It will easily do 5-6 pounds in one session with all the racks that it has.

Answer: The model I have does not have a glass window. Mine was bought in August of 2019; I don't know if changes have been made since then. From the picture shown, the window is in the front between the two air vents. Mine had air vents where the window appears to be (three rows of vents instead of two).

Answer: You can call our Customer Service Center in Lincoln, NE at (402) 742-2586 as we have them for sale and in stock, but please note that do not want to layer every tray in the unit with Silicone Sheets as it will reduce too much of the air flow to dehydrate correctly. These Silicone Sheets are solid (no air holes) and dehydrators dry by "Circulated Air" which would be stopped by using to many of them at one time in any dehydrator.

Answer: There are no plastic parts. It's all stainless steel and we don't even spray the racks we just put them in hot soapy water as we unload them and by the time we are finished wipe with a cloth rinse and dry and they are beautiful. The same with the drip tray. We have well used it at this time and it still looks brand new!! We love it and are very happy we invested in this particular one because it will last a long time.
Answer: The shelf supports are metal. Don't remember anything that was plastic, except the knobs that we turned to set the temperature and the time.

The control panel is a membrane type display and push buttons so it is in effect sealed. This user control is on the top of the removable rear section. You can remove the electrical rear section and easily wash the main body. My personal opinion is this is a quality unit. We are happy with ours and do fruits, veggies and even cheese and peanut butter dog treats.

We do not offer micro mesh trays for this dehydrator and I am not aware if they can be purchased somewhere. The tray size is 16.0 -Inch X 14.0-Inch and the whole size is 1/4-Inch.

Is the plastic handle still exposed inside? i read a answers dated 2016 that said the plastic handle was exposed. this would create toxins.
Answer: The plastic handle is exposed on mine, but I looked closely at it, and with a little creativity, you could switch it out for a wooden handle. Personally, I've never run mine hot enough to smell any plastic fumes, so I'm not worried about it. I have been very happy with mine.
Answer: The handle does extend into the dehydrator. Max temperature on this unit is 165 degrees F, and I personally do not know if that is hot enough to cause problems or not. You might want to research this further with someone who is a professional on the subject.
Answer: Yes handle is exposed inside. The rest of your question is more like a statement...if you feel a risk then don't buy it. Perhaps you should be more concerned about different plastics you put in your micro-wave at much higher temperatures.
Answer: Good Lord. Number one, it doesn't get hot enough in there to release toxins from the little bit of plastic that is on the removable cover. Number two, that handle is located in the louvered, removable, panel that is on the exhaust end of the dehydrator. So even if it did release toxins, they would be forced out the louveres away from the food. That handle is definitely not an issue. Don't let that deter you from buying an excellent piece of equipment.

Answer: We had the same problem with the machine turning off no matter the temperature. We returned in the first machine and had the same problem with the second machine. We switched to an Excaliber and have been happily making jerky ever since! Never had the TWO WIRE thing happen!
Answer: You should not have two wires to electricity just one plug. We plugged ours in and have had no problems at all. We love it. Have done, all kinds of fruit and lots of tomatoes and no problem. We have run the machine ten or twelve hours no problem. It has a timer and it works. This has saved so much of our fruit from our trees and stuff from the garden. If you have two wires send the thing back because something is wrong! They are good about replacement. Good luck

Answer: You definitely do "Not" need a special drawer blank for this unit to make yogurt or to raise bread in this unit as it has a front door to keep the air inside the unit if you take some trays out to make room for jars (yogurt) or a couple of loaves of bread.

This unit does a great job for a modified HVAC duct and a space heater married together. I tested this unit with turkey, root veggies, squashes, sprouted almonds, tomatoes and citrus so far and provided you prep you're product properly i.e. slice/season; it does a great job. The only feature I'm not wild about is the temp control which I wish was more precise (less than 3 degree F increments, it steps in 12 degree increments). Overall it's worth it to buy a well made, food grade stainless steel dehydrator if you plan on using it frequently.

As advertised. I was skeptical at first regarding even drying. For years I was using the plastic round dehydrator and I would have to move the trays constantly. I was very surprised to see this unit did in fact dry the top trays evenly with the bottom. Saves me a ton of time. In addition it cut my dry time down from 18-20hrs to 5-6. Would definitely buy another one, probably soon.

I make ALOT of jerky and have several of these dryers. The biggest plus...hmmmmm. I guess they are cheap and I also like how the tray brackets come off for easy cleaning. Some other guys complained about noise. I dont give a damm about the noise. Yes they are louder than what I thought but I dont care. I know these are all stamped in china but here is what I wish I had. First is the dryer should have come with an insulating blanket so I can help heat up the meat quicker. I made my own. The fan should be 3 speed. The front set of openings should have some kind of damper on them so I can close 2/3 of the opening and lowered the fan speed and help heat the meat better. I would have made 2 heating elements and 2 fans. These could have been two 600 watt heating elements and had more air flow control. The temp should get hotter quicker. These improvements might add 100-200 but I think lots of us guys would pay more if there were some more quality built into it. For guys like me who are serious about jerky but not usda approved there is nothing else but these poorly made factory stamped dryers but having said this I would say for the price....I would recommend it.

Hello, I don't generally do reviews, i know I should because I read other's all the time and it helps to make a better purchase. This time I felt I should. I've had this thing only a few weeks at this point, but its been running almost non-stop. I can't comment on longevity just yet. On the other hand i will on what I've see so far. -Very easy to assemble, no damage during shipping -Some people have commented that its loud. Cannot be farther from the truth, this thing is so quiet i can barely hear it running. There is no rattling, and the pieces all fit together snuggly. -Temperature settings are accurate to a couple degrees, (well within any industry standard for any product.) -It's easy to clean as it all comes apart well. -So far I've done Garlic, Green onions, bell peppers, and Jerky. All have come out perfectly. The veggies have been taking longer than I'm used to, but its because im at a lower temperature with this one, past dehydrators I've used are one temp only and usually around 155 degrees. So it makes sense that its taking longer and that's fine. -The capacity as you would figure is huge! i do huge batches of jerky at a time and used to need 4 of the circular dehydrators (with add on screens) all going at once, and still have to do at least an additional few batches. This thing handles a ton with no issues. -So all good so far! -The only issues I have with this unit is that there is a 15 hour timer. i have to keep resetting it to make sure it doesn't shut off on me during long dehydrations. The other issue is the large grating on the racks, with small stuff like garlic its a bit tough to not have it fall through. I'll get some baking racks or something for those. Other than those 2 issues, its great. Definitely worth the price tag! In the picture that's 5 whole bunches of green onions all separated, and barely uses 3-1/2 racks. Huge capacity! Thanks, G

The timer can be adjusted at any time during the drying process which is very helpful. The timer would be improved with the addition of an end of drying alarm. Strangely the recommended ranges of drying temperature for particular foods do not have a corresponding temperature setting.

After just two seasons of not much use it has quit working. I had thought for the price it would be a quality product that would last for years instead of just two. Also, when it was purchased it was either advertised as "Made in the USA" or a customer had answered the "where is it made" question that way. It is NOT made in the US. I received the dehydrator about a week ago. The stainless was not bent correctly keeping the door from closing properly, no biggie I repaired that it the door works fine now. Once the unit is put together it is not as flimsy as it seems to be while assembling. I have had some beef marinating for a couple days and today I filled four racks and placed them in the center top portion of the dehydrator. The meat has been dehydrating for about 12 hours and is not close to being done. Like someone else said their cheap plastic dehydrator worked better. I checked the temp with a digital thermometer and the temp in the front inside of the unit was 105 degrees, in the rear between the heating element and trays was 115 with the element on and dehydrator temp set at 150. I have written the seller and we will see what happens. Someone else wrote something about the heating element being a piece of coiled wire. It is heating element wire, same as what's in your electric dryer or the electric heat in your cooling/heating system. I have no intentions of sending this thing back if the seller/manufacture cannot take care of the problem. I will fix it myself so it works like it's advertised to do. It''ll turn out to be more money wasted on a mis-represented product on this site.
HOT OFF THE KEYBOARD, UPDATED INFO. 22 DEC 2012 I contacted seller about my issues. They were easy to work with. I explained my findings. I was told the back or heating portion that latches on could have gotten damaged in shipment. They sent me a new back and I got around to using it a few days ago and upon startup I could tell a difference already. It dehydrated the several trays of meat in about 12 hours, I let it go for awhile longer to get extremely dry. One possible issue is using an extension cord with the unit. If you use a standard household cord you may or will get a voltage drop which will cause poor performance of the unit. You need to either use a heavy wire gauge cord or plug the units cord directly into a properly rated outlet for the unit. I am happy now and will be returning the original back, back to the seller with a the ups shipping tag they sent. It's not costing me an extra dime, just a little time. Update: 2 June 2015 Have been using the unit for awhile now and it works fine, it rattles because of the all steel construction but that is easily fixed. The only other thing I have done is bypass the timer so the machine does not shutoff before contents are dehydrated. I still have to rotate trays but not near as much as this round plastic convection unit I had. I have also run a dedicated 20 amp circuit for the dehydrator so no more voltage drop because of under rated extension cords. Update: 31 Oct 2016 The unit has been working fine. It does take longer to dehydrate than what is suggested, but this is true for every other dehydrator I have had. I did have an issue with the dehydrator yesterday when drying hot peppers. The machine shut off but it was easily troubleshot. The problem was the cheap power switch. I replaced the switch this morning with a 20 amp toggle so this issue will not happen again. I am still happy with the unit. I did get my hot peppers dried, and processed. I now have a gallon of some very hot peeper. It's a mixture of Serrano, Jalapeno, Cayenne, Habanero, and a few Hungarian Wax.

Just like their meat grinders this is an excellent product. I just dehydrated 30 pounds of beef for jerky sliced about a half inch thick. It took about 4 hours to fully dehydrate each batch. This was a replacement for a badly constructed "LEM" dehydrator that was nothing but problems. Pay a few extra dollars and you get a really great product. I make several hundred pounds of jerky a year and there is no doubt that this machine will hold up.

The first STX we purchased just shut off in the middle of a dehydration cycle. Making jerky for the dogs so no real harm. Went back to old dehydrator to process the jerky for people. Amazon replaced the first STX with no problems or questions. The second is working like a charm! The amount of jerky I can dehydrate is so large and the machine is so quiet. It makes drying jerky a pleasure! The only criticism is the size of the tray grids, they are too large for smaller pieces to sit comfortably when wet and the same pieces fall through the grid when dry. If the grid could be 1/2 inch or even 3/4 inch it would be better for my purposes. If additional Stainless Steel trays with a smaller grid could be purchased separately that would be excellent!

This dehydrator was not worth the high price. At first it worked great. It can dry a lot of food at the same time, and the heat is even and stays contained within the dehydrator. However, it started malfunctioning after only 2 years. Error codes E2 and E3 would display and it would shut off. I could unplug it and turn it back on, and then it would work. I didn't use it much for a couple of years. For the last few months, I have struggled to keep it running. Now, it will not work at all. The fan blows with no heat and error messages E2 and E3 flash continually. I wish I had not spent the money, but it was nice while it lasted. I used it only about 2 times a month, so I think it should have lasted longer.

I've used this daily since I got it a week ago, and I'd say I'm pleased with the purchase overall. It is massive in size, even bigger than I expected, but it works well. I have two complaints about it, however. First is the grid size (and others commented on this). It just isn't big enough for smaller items. Even banana and plantain chips will fall through the racks as they shrink unless you buy the biggest bananas and plantains you can find. Since banana chips are kind of a staple for lots of people who dehydrate, I find that to be short-sighted in terms of the design for something so expensive. It does come with the fruit leather mats, but the point of spending more to get a stainless steel dehydrator (for me, at least) is not to have to cook my food on any kind of plastic - silicone included. I have used parchment paper, but I don't feel like I should have to. I will probably eventually buy Excalibur's accessory racks to set on top of the ones that come with this dehydrator, but they are pricy - about $21 each, and I'll need at least four. The second complaint I have about this dehydrator (and it hasn't been a huge deal) is that the recommended temperatures for each type of food that are printed right on the dehydrator aren't possible settings. Why identify "125 degrees" as the appropriate temperature for vegetables if 120 and 131 are the only two options close to that number available on this machine? I keep thinking I'm missing some way to achieve alternate temperatures with the machine, but I haven't yet found a way. I wasn't willing to spend $500 for the stainless Excalibur, so this is a suitable compromise for now. So based upon that, I can recommend this one.

Although we have only had it for a short time, we love it! We have only tried an array of fruit in it thus far, but as soon as the garden is in full swing, let the food preservation begin! We are a school and teach alternative building and sustainability and will be being using the STX International STX-DEH-1200W-XLS Dehydrator Commercial Grade in our food preservation classes. I was amazed that it has a three-year warranty that comes with it; most appliance extended warranties must be purchased separately, so this was just icing on the cake. It is very quiet, we expected it to be louder and before receiving it, we had already cleaned a space in the garage, but it is not necessary, we have it on the counter in the kitchen. The main reason we chose it, is because it is all stainless steel and the back even comes off for easy cleaning. Thank you for making a great affordable product!
