what size is the cooking surface??
Answer: For the Demeyere? I no longer have this item so can only give you approximates. I still have the internal wire rack, which I use with my Nordic smoker. It's about 11 inches across. I would say not more than three inches clearance in the lid area - from the wire rack to the inner surface of the lid. I could easily smoke two Cornish game hens in this - and did once - but not a full size chicken as it would have been too tall to fit under the lid. Good luck with it if you purchase it.

what are the cooking times with this product. i have read about people cooking a small roast for up to 8 hours.
Answer: If you haven't already purchased this item, I suggest you look at my review. If you have, before mine fell apart, I smoked a brisket in it for 8 hours. The thing with smoking is, you're cooking on a very low heat, so it takes longer. You'll want to add more wood chips ever couple of hours. A side of salmon, depending upon thickness, would get smoked 20 to 30 minutes. Be sure to smoke skin on with fish. You'd not believe the difference!
Answer: I've made a small pork tenderloin and since it's cooked at a low temperature it took about 3 hrs or less and was medium rare and delicious.

Answer: Mine did the same thing. It is a result of the smoking chips. I soaked mine in hot soapy water with vinegar. I don't think I used Clorox which is my usual tough job cleaner.

Answer: No, it doesn't. Unless they've changed a lot since the one I had, no non-stick surface, but mine also came apart and Demeyere refused to replace as per their warranty agreement. (see my review of this item).

Answer: It's made of 18/10 stainless steel with an aluminum core for even heat distribution. It works great. It does get pretty hot so you need to be careful.

Answer: I love the smoker, but I have never used it for smoking. I bought it as a short steaming pan. I purchased two others as gifts. I use it as my go-to pan for steaming, sautéing, frying etc. I have an induction range, but it should work well stove with coils also.
Answer: I am not sure about the electric stove with coils, but I do not see why you could not. I have smooth top stove and it does great with mine. I would think it would be fine. I love mine and use it quite often. I also bought the wood chips from Amazon.

Can you use this on an electric glass top stove?
Answer: I don't have a glass top stove, but I don't see why not. It's aluminum and wouldn't be any more likely to scratch the stove surface than any other aluminum pot or pan. However, if you've read my review of this item, you'll see that it's not one I would advise for anyone. Amazon has another stove top smoker, Nordic Ware 36550 Stovetop Kettle Smoker, which doesn't have the problem this one has. The Nordic also has a larger cooking area than the Resto as the lid is a much higher dome. Now, that does make it more difficult to get up to heat, but I can also fit an entire duck in it. Good luck on whichever you choose.
Answer: Yes, I have used it for salmon, steak, vegetables, etc. It does create some smoke in the kitchen. It didn't set off the smoke alarm. I simply opened the window and glass door in the dining area and it cleared. Some people start their meat in the smoker, then transfer to a fry pan or to the oven to finish -- less smoke that way.
Answer: You can, but you'll need a good exhaust system like a full hood. It kicks up a lot of smoke.

Answer: I am not familiar with the stainless steamer insert. So I can not answer your question. However, I love this stove top smoker. On low my fish comes out perfect.

Anybody who 'smokes' KNOWS you have to keep your eye on the temperature... temperature is EVERYTHING. So, why these people created this 'smoker-POSER' is beyond me. Does anyone over at their 'design studio' understand how to 'smoke' food at all? Sheesh.
Because there is absolutely no viable way to 'smoke' properly without a temperature guage, you can't even call this RIDICULOUSLY-DESIGNED, and then staggeringly OVER-PRICED, pan anything other than JUNK.
Pass on this one, as it will not perform the way you need it to perform... unless, of course, you like throwing $100-dollar-bills down the drain.
joann polley : Great indoor smoker!
This worked quite well for an indoor smoker. Very little smoke so we didn't even have to leave a door open. The flavor is not as intense as you would get from a large outdoor smoker, but the food still had the same delicious smoked taste. We smoked a rack of ribs by cutting them into two pieces and stacking them on top of each other. They came out great. Cleaning the smoker takes a little bit of work, but it's worth it.

This is great, it does slightly leak some smoke, compared to the other stovetop smokers I have, it's effect is minor. I don't even have to turn on a fan, just open a window about 6".
I smoked a complete roasting chicken in about 2 hrs(3.75lbs), I once had to add additional chips and I also had to take a 9" pie pan and cut grooves in the sidewalls to within a 1/2" of the bottom. I then placed the grill in the grooves, the pie pan was able to handle all the fat that came off the chicken, which made outstanding gravy. That is why I only gave this item 4 Stars.
If you let these fat drain to the bottom of the pan, it smothers the chips and your smoking meal ends in that instance, most of the time not finished.
But this item is used all the time for fish(smoked catfish is great, make sure to pick the right wood.), trout, salmon, Pork Loin Roast, hamburgers, etc.

Oh my,.. you get the smokey flavor of an outdoor grill and moist Pork, Beef or Chicken. Quality Stainless and it doesn't smoke up your kitchen. Very handy when you don't have time for a long slow smoking process...
