E. Crouse : Took my sous vide to the next level
I do a lot of sous vide cooking and I started out doing the ziplock immersion method, then moved to an external type vacuum sealer but found that any time I was sealing anything that wasn't pretty dry I had to revert to immersion sealing because the external sealer, even in moist mode, would suck liquid out, make a mess and often ruin the closing seal by getting liquids and junk in it. The problem with the zip lock method is it really limits the amount of food you can cook because of bag sizes.
This Wevac chamber sealer fixes all the issues I had with my external sealer. I fact one of the first things I did with it was vacuum seal a large bag of water. Never having used one of these I wanted to see how it dealt with liquids and I figure if I had to clean out a mess it should be something easy to clean up. Well, it worked great. I set it for a 30 second vacuum and it drew out almost all the air without spilling a drop in the chamber. Through further experimenting I've found drawing an even deeper vacuum produces even better results with little to no spillage and anything that spills in the Wevac chamber just wipes right out.
I've sealed meats with marinades, stews, leftover roast including s good portion of the au jus and this Wevac chamber sealer had performed flawlessly for all of it.
Another cool thing a chamber sealer can do is vacuum marinating, and although I'm not completely sold on this I did try it and the Wevac works exactly as described pulling a vacuum, releasing it, pulling it again and cycling that on off as you've told it to do. I still think nothing beats time for a marinade but the Wevac marinade mode works as advertised.
This is not a small machine. It takes up a significant amount of counter space and you are of course limited by the size of the chamber as to what you can vacuum seal but I've successfully sealed a 5lb chuck roast with some herbs and broth for a 29 hour sous vide cook and it turned out wonderfully.
Chamber vac sealers are not cheap, but if you are serious about vacuum food preservation and sous vide they can take your game to the next level and this Wevac sealer is plenty large that you won't outgrow it and quite reasonably priced in the chamber vac space. Definitely a recommended purchase for me.

So far this chamber rack works extremely well it was a good value for the money you can use the automatic setting seems to set the settings perfectly the only thing you need to change is the time for the heat strip it's set a little low from the factory so you need to bump it up a little bit other than that so far no problems but then again only time will tell the instruction manual is not very thorough but it doesn't take long to figure out what does what when sealing the bags the heat strip does put a double seal on the bag so that was a good plus point

I'd be looking for something to vacuum seal my home made smoked salmon as well as something that would allow me to vacuum seal marinating sous vide bags. I've been really impressed with the Wevac CV12. It is quick, powerful and I like the appearance of the finished sealed product. Attached is a quick snap of some ginger that I sealed for initial practice. The first try with the sealer made me realize the factory setting is too low to effective seal the Weave vacuum bag roll that I bought. I stepped the setting up to 5 and it did the job nicely. Setup is self explanatory - there is a teflon heating bar that you drop in place in the front end of the device. From there, there is an automatic mode that I think will do the job for most of my needs. There is a marinade setting that facilitates longer sealing times, and settings for different bag sizes. My only minor issue is that the instruction manual is hard to follow due to poor translation. Thankfully the device is easy to use such that you really don't need the manual. One small piece of advice that should be obvious but is not laid out in the instruction manual: you can't have any piece of the bag extending out of the chamber sealer or you won't be able to maintain a vacuum inside the chamber. As such, when working with a roll of sealer bag material, you have to cut the bag to size, seal one end with the entire bag in the chamber, then fill the bag with you desired contents and seal the other end. I'm very happily impressed with this device and am roaming the kitchen looking for new fun things to seal!

This Wevac Chamber Vacuum Sealer is life changing - honestly we are able to freeze soup in single servings which is perfect for when taking food over to my grandma!
Controls - VERY EASY - You are able to choose the Smart Vac/Bag Size (S, M, L) based on the width of your bag when you put it into chamber - as you can see there is a ruler looking strip that is color coded and is very user friendly and easy to recogonize which size bag you have for which Smart Vac size to choose. You are also able to use the Marinate option or the Customized Vac where you choose the pressure. If you want to seal your bag - you will need to choose the Seal button prior to closing and pushing down on the lid. Bag sizes - 6x10, 6x12, 8x10, 8x12, 10x13, 11x16 Materials - Stainless Steel body with a curved glass lid. Size - This is not huge, but it also does take up a good chunk of space - 14.5"W x 18.1"L x 9.6"H Easy to use - for thicker bags I did have to increase the Heat setting to the full 6 seconds as 3.5 did not seal the bag. While it will not teplace a standard vacuum sealefor large things. It works amazing. I now vac pac all my Venison with no worries of blood leaking making a bad seal. I have done soups etc. Only thing is whatever you vac pac make sure is cooled diwn or it will boil in the vacuum. Simple physics you can mot change so is NOT a fault of the machine.

As a longtime user of the other kind of vacuum sealers, I was excited to give this a try and really test it out. To be very upfront, it's large. Much larger than my current small countertop version. This does not live on my counter but comes out for big projects. However, having the window makes it so fun to watch what is going on inside and see it work. Not necessary, but certainly nice to have!
PROS: - #1 benefit is sealing liquids. It does such a great job getting all the air out and none of the liquids - You can start it and walk away, you don't have to worry about things getting crushed or watching for liquids. - Large chamber fits anything I need - Double seal for extra protection - Easy to clean - Good suction and seals - Easy to operate - Works for large batches (50+ bags at once) - Keeps food fresh and prevent freezer burn - Cheaper bag options - Multiple settings to get it just right
CONS: - No pressure gauge, everything is just done based on time. I think to make sure I get to the right pressure I often run it longer than necessary, so it takes longer. - Large size, not super handy for 1 off bags unless you have space - I had to tinker with the seal settings to get them to work well on thicker bags - Slower than my existing one, especially with the extra time I mentioned
Overall, I don't know how I went this long without a chamber sealer! The price is harder to swallow but I promise it's really worth it if you do lots of sealing. I make large batches of broth and soups and it's always such a hassle to seal. I also portion out and seal large amounts of meat at once (60+ lbs) and was able to use this to seal everything up for the freezer.
This device has been working reliably for 4+ months and I've had no issues!
JustMyOpinion : Expensive Overkill For The Average Household
I have started to do a lot of vacuum sealing recently because my 93 yr old father needs all his meals pureed and I now make pre-packaged and frozen Meat-and-two-veg pre-pureed meals for him to make preparation easier for me. I've been using one of the standard $50ish vacuum sealers with reasonable success when I was offered this monster to review. Here's my thoughts as a regular person out on the streets:
* This is one heck of a BIG machine and HEAVY. I don't think my delivery person liked me much the day it arrived. It takes up a LOT of space so if you have a small kitchen or minimal storage, this may not be a good option for you. I believe there is a smaller option which might work better for the average person if you realllly want this kind of vacuum sealer.
* This thing is LOUD. Not the kind of thing you will use right after putting the kids (or Dad, in my case) to bed. It also takes up to a minute per package to seal which means it's making that noise for a fair bit of time per package.
* The learning curve is steeper than the standard sealers. I am still struggling to get a REALLY tight, airless seal after 2 weeks of working with it. Also, many of the packages have "kinked" and thus wouldn't seal (see photo) and I had to re-do them. This is because you put the package in and then shut it so you can't hold it flat while it seals. I also found that for smaller packages, I have to put something like a small box in to lift them up so they will seal properly. I am still nowhere near confident with working with this and I'm not sure if I will switch back to my cheap option that is sitting in the larder right now.
* I haven't tried the marinate option yet. This may be where it's useful for many who do a lot fancier cooking than I do. Right now, because of my caretaking duties, my meals are simple because I'm really only cooking for me and I'm too tired to spend extra time of prep.
* I would say this *MAY* be good for people who LOVE their cooking, want to marinade things and cook in the bag and all that. Or people who are selling things that need to be vacuum sealed in larger bags. I think part of the issue is that all my things I'm sealing are small bags.
For all I know the difficulties I'm having *could* be this model, but they *could* be because I am not versed in how to use this. The instructions are NOT well written (likely used Google Translate) which doesn't help. Maybe I'll get lucky and date someone who is a great cook who can teach me how to use this thing, because I'm not doing so well on my own, lol.
Going to add more photos this week when I can put the two sealers side by side and do a total comparison. For now, would not purchase in future.
