Answer: There is a silver button on the front of the controller that will change the readout from grill temp to temp probe. It really is that simple.

Answer: The best way to remove the ash is to use a shop vac. There is no removable tray or anything like that. There will not be as much ash as you would think. Every 3rd or 4th use just get the shop vac out.

Answer: I do not see a benefit in a smoke stack for a pellet smoker. This one works perfectly without it. This is a very nice grill and they have really outstanding customer service.

Answer: Yes I've done many packer briskets on mine. And after the brisket Cook's down a bit there's enough room to throw on a rack of baby back ribs or a few ring of sausage or even chicken. It is not a huge Grill in but perfect for a single person or small family. If you have a large family and will be cooking a lot I would suggest the next size up. But I'm single dude hosting playoff parties. It's perfect for me! Hope that helps.

Used my $300 smoker 2 times now and both times the temperature goes right past the dial setting to over 450 degrees. I have tried calling multiple times to all numbers I have seen in both the owners manual and the website. Will be sending back for a refund and buying a different brand.

I was surprised, it only took about 30 minutes to assemble, it works great, and honestly is pretty low maintenance. Only complaint is when I bought it I don’t think amazon had a cover for it so I had to buy a generic one that didn’t really fit the best.

I've been 'cueing for a long while, using a natural-gas fired cabinet smoker. I got this in prep for tailgating season (Texas Fight!).
The materials are great - heavy gauge powdercoated steel exterior, and what seems like 16ga interior parts. The auger is cast iron, the firepot high-refractory steel, the grill is porcelain-coated. I like the simple design of the drip pan and bucket.
The blower forcing air to burn pellets is not quiet, but it's not harshly-loud either. It'll be fine off to the edge of the tailgaiting pavillion next to the inverter generator, and when it's on my patio at home isn't noticeable from indoors.
The temperature control is a PID (proportional-integrative-derivative) algorithm, but being an outdoor cooker with an uninsulated oven chamber, it has to contend with a large loss of heat. Pellets burn hot, and a few get dropped into the burn pot with each fractional turn of the auger, but they don't burn for very long. This makes for a wide band that the temperature inside the chamber will swing through - about 45 degrees F, centered on the set (desired) temperature. Wind and variation in pellet sizes affect how long the temperature can stray off the desired set point. This effect is just something that's a by-product of the nature of a pellet grill, and the larger the volume in the barrel of the smoker, the more thermal inertia you'll have - but it'll take more fuel to heat. Upshot is, move your meat to the 'cold' end of the grill if you want to minimize the variation/swings in temperature.
The grill comes with a probe - for brisket, I assume - to hold at a temperature in the meat. The manual did not describe it’s use. I suspect you push the button on the controller by the temperature setting dial to read the probe temperature.
When you assemble it, pay attention to the legs, as you'll need to put the ones with a hole for the wheel axle to the cold-end of the barrel. Though the fasteners come with some tools in a blister-pack with perforations to help you remove the screws, nuts, washers, you should use quality screwdrivers (#2 Phillips) because the heads are soft and can strip. I don't recommend using a powered driver as you'll round out the Phillips head. The axle nuts are 13mm, use a decent socket and box-end.
For my initial fire-up, I used some generic pellets. The firepot blower didn't kick on until I closed the lid. Set on 'Smoke' (155' F), it produced a pretty respectable fog. I turned the temp up a step at a time until I reached max, where the grill was well over 430' F (outside in a 60' F day, winds gusting 5-10mph). This chewed a lot of pellets. When the temperature's set higher, the firepot is hotter from more-frequent combustion, and pellets don't give off as much smoke (the outgassed smoke is actually burned/combusted), and the sound of the air in the firepot changes.
I let the grill cool, and put a rack of ribs (brined, cut in half, then rubbed with a light rub) on a small wire rack over a foil half-pan. This I put on the grill - the intent is to have smoke/heat flow under the meat, but catch the drippings in a disposable pan, as I don't want to cook directly on the grill and have to clean the drip pan at this early stage in its life). I set the temp to 150 for three hours (and ran out of pellets in the hopper. There's a loud 880-cycle alarm buzzer). I brought the ribs up to 250 to 'wet' them (soften the fat to the point it renders and drips) for 20 minutes at the end, and served them. Perfect ribs.
Cooking with this is 'interesting', and I plan to use it for ribs, butts, chicken halves, and briskets/pastrami - things that I can leave alone for a while. I don't see myself using it as a hamburger or steak grill, nor for something delicate - like making smoked salmon or trout, or cold-smoking bacon. But it'll be perfect for tailgating, and will run off a small inverter generator, so it fits my purpose.

The product description read 342 inches of cooking space. The box said 305 inches. The smoker works okay. If I open the lid during cooking to check on the food the temperature will soar 50 degrees when I shut the door. To bring it back down I have to reopen the lid to bring the temp down, then it will keep steady.
