Is the interior also stainless steel or plastic?

Answer: Plastic Polycarbonate material.

Answer: The inner sidewall channels that the stainless trays slide into, are plastic, but the food does not touch them while they are on the stainless trays. The top inner wall liner inside is plastic, and the bottom inner wall liner is also plastic. The door is all stainless, and does not have a liner. The large inner airflow screen inside the back that protects the heat element, thermostadt, and fan, is metal, and I assume is stainless also.

Answer: I have never made jerky, sorry, love. But from reading, I know that you have to make sure it's really dry lest it molds on you.

Answer: I have the older model with the stainless steel door and it has stainless steel trays. In the picture the only difference I see is the clear door. The trays look just like mine
