Answer: Plastic Polycarbonate material.
Answer: The inner sidewall channels that the stainless trays slide into, are plastic, but the food does not touch them while they are on the stainless trays. The top inner wall liner inside is plastic, and the bottom inner wall liner is also plastic. The door is all stainless, and does not have a liner. The large inner airflow screen inside the back that protects the heat element, thermostadt, and fan, is metal, and I assume is stainless also.

I have always been a fan of dehydrating many fruits and meats. Herbs are essential. The possibilities are endless. This is a very popular dehydrator with the ones that know whats out there. I am sure it would live up to its reputation by being tested in my kitchen. I am giving 5 stars not from my personal experience but from several known to have used this brand dehydrator and knowing it has come highly recommended to myself and to others.

The Excalibur five-tray stainless-steel dehydrator (D500SHD) is excellent. I got it to replace my four-tray Excalibur dehydrator that finally had its heating element fail after nearly 40 years. After that time, and after surviving two overseas moves (during which I operated the dehydrator through a step-down voltage transformer), there were also some cracks appearing in its plastic case and there was a crack in its door. So rather than contacting Excalibur to replace the door and begin troubleshooting the heater by replacing the thermostat, which were parts that they could have sent, I decided to get a new stainless-steel model.
To be clear, the stainless-steel is, apart from the door, stainless panels that are cladding over a plastic box that is BPA-free according to Excalibur’s claims, but I think that the steel will add additional durability to that box. Though I decided to get a new model, Excalibur has appeared to have kept its basic designs and sizes for decades, making parts exchangeable and readily accessible. I appreciate the fact that if a small bit breaks or wears out on one of their dehydrators, that there’s a good chance that it can be repaired.
So far, I am impressed with this new dehydrator. I am happy to see that Excalibur’s quality has not appeared to deteriorate since I got my last Excalibur dehydrator in 1982. Though I was happy with my previous unit, the fan on the new dehydrator seems like it’s more powerful. Thus far I’ve only dried some tomatoes in the new unit, but was pleased at how uniformly the pieces dried. The documentation that came with this dehydrator is much expanded over what I received 40 years ago, and I am looking forward to trying some of the recipes and suggestions in the “Preserve It Naturally” book that came with the new dehydrator.
This new unit feels solid and well made. The five trays that came with the D500SHD dehydrator are 304-grade stainless, according to Excalibur. Neither they nor the stainless panels on the unit’s exterior provide much attraction to a magnet, which is an indication of the metal's quality. Even the machine bolts supplied to attach the door handles are stainless; it’s a nice touch, but if Excalibur puts quality parts into such small things, which most people would not notice and on which they could have saved a few pennies by putting in non-stainless parts, it gives me confidence that the rest of the unit is both as well made and well thought out as it appears. Another indication of its quality is that Excalibur provides a ten-year limited warranty on the dehydrator if it's ordered direct from the factory -- a length far beyond warranties on most consumer products.
As with my previous Excalibur dehydrator, I appreciate the fact that I can operate this unit standing up on its narrow edge. I frequently use it in this position when I make jars of yoghurt. I like the fact that this unit has a timer; but although I can set it for up to 26 hours, I wish that the timer also had an “always-on” setting -- my only criticism with this dehydrator.
I found my previous four-tray model to be big enough for my four-person family (though we did not have a large garden and I never had a large amount of game requiring immediate processing). The new five-tray model is plenty big for my purposes, and I am hopeful that in stainless steel, it will last me at least another 40 years, and if anything does go wrong with it, Excalibur will be around and will have the parts to repair it. I highly recommend Excalibur’s D500SHD five-tray stainless steel dehydrator with no reservations.

I have never owned an Excalibur dehydrator because I have I have a Nesco American Harvester which is a work horse but I cannot do yogurt with it. I have children with a lot of different allergies and I struggle making yogurt! Everyone that I know that has an Excalibur loves them and they can do so many different things! So, the first thing that I would make is yogurt!

I am happy with the way that this dehydrator functions overall.
The only reason I rated it a 3 is to bring attention to the spacing inside of the machine.
For foods with more bulk like kale and cauliflower it doesn't work to fill all 5 trays.
There isn't enough space and then the food gets smashed and doesn't dry as well.
People that enjoy kale chips know that you can't just make 2 trays for a party.
I tried making 4 trays and things were cramped and I needed to re situate things
after they had cooked for awhile. It worked, but not as smoothly as when I only made 2 trays.
I would have ordered the 9 tray, but I noticed all of the complaints about how noisy it was so I opted for the 5 tray
knowing I wanted something that I could carry easily and have in a smaller space. Initially the 5 tray doesn't sound that loud,
it's white noise ish, then you start to notice it. When I have it running in the day I put it in the laundry room and shut the door, then
it's fine. In hindsight the 9 tray may have been more useful since I can really only load the 5 tray up with 2 or 3 trays if the food has some puff. If you want to make more than 1 recipe it is nice to have the option of more space.
My recommendation for someone that is going to use the dehydrator for several dishes at a time, kale chips, etc. is that if you have the space and can put it in a room and close the door or have an area of the house that you don't have to hear it go for the 9 tray. I am using the dehydrator often so I started thinking that in the future when we are living in a different home I may consider getting a 9 tray in addition to what I have to accommodate making more food at one time, especially for parties and holidays.

Wow! Such a nice unit to preserve lots of healthy foods by dehydration. My boys have been begging me to make homemade beef jerkey because they love to camp and love to take jerky on their excursions. So, of course, jerky will be my first thing to dehydrate in this unit! My next thing would be soaked and dehydrated pecans and walnuts because it makes them healthier and oh so yummy!
