How hot does the outside get during use?
Answer: It doesn't get hot on the outside. You can put your hand on it with no rpblem.

Answer: Really depends on your temperature and amount of wood you put in the unit, this unit uses considerably less wood than any other unit I've seen so it will produce the least amount of smoke as far as smokers go. I kept my temperature low around 125-135 for salmon and barely got any smoke. When I had it cranked up to 220 with two chunks of wood (unnecessary) there was a LOT of smoke.

Answer: Any smoker produces a lot of smoke but this comes straight out the top. Its really well insulated. The amount of smoke also depends on the amount of wood chips in it. Usually after 2-3 hours the smoke dies out and its more like an oven. That works though because the meat usually has all its smoke flavor and you dont need wood to keep it hot. You can control your smoke. Thats the best way for me to answer this question.

Answer: Not sure what that is, but you need to get the wood hot enough to smoke. Lowest setting is 100 F and highest is 250 F -- so it is slow smoke with great results!
Answer: I don't believe that you can "cold smoke" with this as the heating element is at the bottom and has to generate enough heat to burn the wood and create smoke. This will get the temperature in the box too high for "cold smoking".

Answer: I'm not expert on venting, but I wouldn't think so. There's a trickle of smoke that comes out at all times, but when you open the door to get your meat out, there's quite a blast (which I love, btw). :-)

3 questions! :) Are the wheels locking castors? Do you NEED the wheels? Also, does the drip pan catch ALL the grease?
Answer: Yes, the wheels have locking casters. Nope don't really NEED wheels if you're not moving it around, I lock the casters and keep it on a table. Yes the drip can catches All the grease that drips but there's still a bit that stays back. Foiling the bottom and firebox cover catches the rest. I just remove the old foil and put new ones on each time before I smoke.
Answer: The wheels can be removed with ease and the smoler can stand on its own or on a table top if need be. The drip pan is actually very large and can hold alot of drippings. It slides under the smoker into a fitted slot. If you wanted to save the drippings, I would move the drip pan to the inside to avoid contamination by bugs, etc.

Answer: I have this model. I got it January 2014 and have used it at least six times. There is no rubber seal but the door is very tight. No problems there. I use a remote thermometer dropped down through the top hole (Maverick ET-732 Redi Chek) and it works great. I really have enjoyed this and I have never used a smoker before this one.
Answer: No it doesn't have a rubber seal. In my mind it has something better. Metal to metal with the spring door handle keeping it tightly sealed.

Answer: The door is a pretty tight metal on metal fit. I own a Maverick cordless unit, I run the temperature probe lead up and out the vent on top and just set the sending unit on top while it cooks. Hope that helps.

Answer: My unit arrived without the wheels attached. Without the wheels, the drip pan rests against the ground and makes the unit somewhat unstable. You could probably remove the drip pan and think of something else to catch the drippings. The unit itself is very well insulated and other than the problems I have noted, I don't see any problems with placing it on a wrought iron table. You could also probably just elevate it on the table with well-placed bricks, but with all of these alternate measures I would be very careful about making sure that the unit was stable.

Answer: The smoker ships without a cover. However you can buy a fitted black canvas cover for about $39 on their web site. The cover appears to be treated canvas and water resistant. I still try to protect my smoker from the elements, even with the cover, but it was left out for a number of days already this spring (rainy and sunny conditions) with no visible change to the cover itself and the smoker remained completely protected. They also have a camo cover.

Answer: Before buying this Smokin-it I had purchased two Masterbuilt digital Smokers. Both died from electronic and burner failure. What I liked about the Smoking-it was the ability to change heating elements. The simpler design gets the job done. Also, a heavier box design. The only thing that I didn't appreciate was they didn't include enough grill racks. If you want to use it to it's full capacity you must buy the third grill rack as an "accessory".

Answer: Yes, I store it on my patio. I bought the cord hanger attachment and the cover. I also tie a 10'x10' camping tarp over it just to be safe. I smoked ribs in -37 Celsius last week and had no issues. By the way, I live in Canada and we have lots of snow, but this smoker is a tank.
Answer: Yes, I have the smoker outside all year. I cover it with the cover from Smokin-it, but I also keep it under my covered patio. I've had no issue doing it this way, although I live in California where the temperature rarely gets all that cold, and it *never* snows.

Answer: The door is a compression fit door. This way there are no gaskets to go bad. Two of the wheels are locking. The door is insulated and will not be hot to the touch.
Answer: The door on SI Smokers are designed to seal by using a tight almost spring loaded mechanism, so it could be that the door is functioning properly. I would have someone take a video of you closing it and send that to Smokin it. They are very responsible people and I'm sure they will correct anything that is not working properly.

Answer: No, there is a control knob that the user can set the temperature at which the smoker will maintain. I have a thermometer that I insert in the meat and run the wire up through the vent hole in the top of the smoker.
Answer: No, but most thermometers that come with smokers aren’t very accurate anyway. If you want your meat and fish done the way you like it you should invest in a Maverick Remote temp. monitor. Well worth the extra money.
Answer: It does not have a thermometer on it. It does have a temperature dial but it is best to monitor the ambient temperature as well as the internal temp of the meat with a good thermometer such as the iGrill.
Answer: The unit itself does not have a thermometer but it has a temperature setting. Most people use a thermometer with a probe to stick in with the meat because that is where the temperature matters the most. I personally have not checked how stable the internal temperature is on the unit but I have had very good success just basing my cooking times on time alone so I expect the internal temperature doesn't vary too badly.

If you can swing it, get a good wireless meat thermometer like the Maverick ET732 and you'll be set to go!

Answer: According to the instructions you don’t want the interior too clean. The smoke coating adds to flavor. Best way to clean the bottom is to prevent it with a foil lining on the bottom with a hole so it drains into the drip pan. If the bottom gets really crusty I just use a putty knife to scrape up the chunks.
Answer: Actually it's more trouble than it is worth. There really isn't any reason to clean the inside of a smoker. About the only thing you can do is wipe with a couple paper towels once or twice a year.
Answer: First off, always line the top of the smoke box with foil as well as the bottom of the smoker. Make sure you open the hole in the foil where it covers the drain. Removing this foil after the cook is the bulk of the clean up. I soak and then use a scotch bright pad on the racks and rack supports which are removable. I then de grease the interior with some formula 409. I don't try to "clean" everything just de grease.
Answer: When it gets all gummed up (with fat residue) I've been successful using an ammonia solution to clean it. Cheap and easy, as long as you can stand the smell. Saturate dirty areas, let it site, and then use a rag to wipe down. Repeat as necessary. I finish it with a rinse (water) wipe-down, and then run it empty up to 250 to clear off any residual ammonia.

Answer: I use a probe type thermometer and string the wires through the exhaust hole in the top, works very well. Dont know about putting a typical meat thermometer in the smoker for 6-8 hours though.

Answer: Yes, I used a digital probe thermometer. You run the wire through the small smoke escape hole in the top or close the door on it. I have done it both ways with no issues.
Answer: Absolutely. I have a digital thermometer with a wire, and I run the metal thermometer through the top of the smoker where the smoke escapes. The wire reaches all the way down into the smoker and I've never had an issue with it. Works like a charm. Also works with conventional thermometers as well as wireless thermometers.

Answer: It seals up extremely well with the exception for the vent in the top. I would imagine you could devise a way to seal this hole. I keep mine in the my basement and have not had any issues with smell.

Answer: You absolutely can. Several times I have smoked pork butts overnight. With this smoker you are best to use wood chunks, not chips. I run the pork butts from 10 PM to 10 AM at 230 degrees with only two chunks of woodl, roughly 2" x 3". More than that and you run the risk of "over smoking", believe it or not. I am very pleased with this product. We are a family of only two, but I cook for 4-6 on it often and it is just right for that.

Can you add a liquid to the pan?
Answer: If the pan you're talking about is the one under the smoker, that is the grease pan and no, it won't work to add water to it. I do think there may be room to add a water pan to sit on the 1st shelf (wire grate) if you're cooking something small enough to fit in the wire grate(s) above it.
Answer: I am not sure what pan you are referencing? We do sell on our website a flavor saver that you can place water in as well as bear, wine or what ever you would want to season with.

Answer: Yes, you need the cold smoke plate and slide it in above the wood box, then you need to put ice on top of the plate with what your smoking. Smoked cheese once and it turned out OK but be careful and use a digital thermometer down the chimney to be sure you don't melt the cheese.

Answer: I use whatever wood you choose that produces the best flavor to your personal taste, oak, hickory, apple, pecan, mesquite etc. The key is not to use to much! When I first got mine I was amazed at how little it used compared to other smokers. I have a small digital kitchen scale to measure the weight of the wood and usually use 3 to 4 ounces of chunks. I think 8 ounces is the maximum they recommend, the Smokin-It web site has the info in the smokin-it forum.
Answer: You can use any wood the recipe you are using calls for. The unit comes with hickory for priming. The top of the smoker says do not use more than 8oz of wood. I buy chunk wood and cut it down to fit inside the wood box.

Answer: I think because it's so air tight. Also, because of that, I've found I need to use fewer chips or food is too smokey flavored (probably not possible for some). I've also added my own water tray, which is easy to do.

I purchased this smoker after doing much research and going back and forth between brands, types, etc. I knew I wanted something electric and I knew I wanted to use it often and year round - I live in Kansas and we have hot summers and cold winters. I received the smoker promptly and in perfect condition. The only assembly was twisting on the casters and it came with a stamped disposable wrench. I had it ready to plug in within 15 minutes and then seasoned it with 4 pieces of the included smoking wood. 5 hours later the inside has a caramel color which the instructions say this is normal and should not be cleaned off.
The next day I smoked a rack of spare ribs and a rack of St. Louis style ribs for 5 hours using some of the included wood mixed with apple wood chips I purchased on my own. Per the instructions I covered the inner floor and the top of the wood holder/burner cover with foil to ease clean up. The ribs came out great using store bought "high end" pre mixed rub and regular yellow mustard as the initial coating. I plan to get much more creative with the rubs and marinades but I was eager to get something made for the maiden voyage.
This smoker is a great size for my use - 2 adults and 2 small children and we occasionally entertain. It may not be big enough for very large batches. This unit is about the size of a larger mini fridge. I did have to cut the ribs in half to get it to fit. I believe I could fit a whole turkey or large ham if I use a single rack. This unit came with 2 racks and there is a slot for another or you can raise or lower the included racks depending on application.
The stainless steel finish looks great on the patio the casters are very helpful when moving it around. As for the using the unit I set the desired temp on the dial, waited for approximately 20 minutes for the smoke to start flowing from the small port on the top of the unit and added the meat. I was using this unit around Christmas time in the mid-west and it was about 20 degrees outside. I do not have a third party thermometer to test the units temp but it worked as expected at that low outside temperature.
So far I am very impressed with the units construction and functionality. It has the look and feel of a much more expensive unit.

I bought this to get into smoking without all the work - kinda like a trial. Smoker worked great. Ribs, brisket came out great but chicken NOT. Chicken needs higher heat than most electric smokers can provide otherwise the skin comes out rubbery and that's the only drawback that I can find. I still love it though, it makes the job soooo much easier.

The Smokin-it Model #1 electric smoker is great. Set and forget smoking for a variety of meats and it will make you look like a veteran pit master. This smoker is a bit on the small side; not that small is good or bad, but you won't be packing this thing with a ton of meat. (the marketing material says it will hold 18 pounds of meat; It's full with two 6-7 pound cuts. It has three racks, but unless you are smoking wings, ribs, or pork belly you will not be able to use all three. I've used this smoker half a dozen times in the month and half since I purchased it, and it is truly set and forget with great results every time. I have done two briskets at the same time, and two pork butts at the same time; you will fill this smoker with two larger cuts so you will need to remove one of the racks and adjust the other two. The bottom third of the smoker is taken up with the burner and smoke box, the smoke box is big enough that you won't be re-filling it with wood half way through the day. This little smoker is solidly built, easy to assemble and I really like the compression close door; it gives a great seal. The insulation in the double wall seems to be pretty good as the outside of the smoker remains cool enough to touch bare handed after hours of use. I would definitely buy this again, and recommend it to friends.

I just got this smoker last month and I am very happy with it. I made a nice pulled pork in a snowstorm, and pork cops and a whole chicken in the rain. Everything cam out great. This smoker will easily hold a couple of 4-5 pound whole chickens. It is very easy to use and manufactured for durability.

I received my Smokin-It Model 1 a few days ago, and just smoked my first pork loin in it last night. It was excellent!
I was wanting something simple... I simply don't have the time, nor want to put the time into nursing a traditional smoker along to maintain proper heat levels and air flow, etc. I knew the hassle associated with that would soon make the smoker a yard ornament. So I considered a propane smoker, since they are cheaper than the electric, and could be used in remote camping situations. After talking to a heavy-set sales person at a smoker store (never trust a skinny cook), I decided to go electric - mostly because anything that goes into the smoker (i.e. gas residual emissions... which are minimal, but still present) will go in the food.
After deciding on electric, I started researching and looked at several brands of electric smokers. The common complaint was the heating element. On some, the element was not replaceable. On some, it was WAY difficult and somewhat expensive to replace the element. As the part which is most likely to fail, I found this to be just plain stupid. Poor design work and forethought. Then I found the Smokin-It Model 1 and the Smokin Tex 1100. These two had the simplicity I was wanting (plug it in, put wood in it, foil lower parts for cleanliness, put meat in, set temp, wait, eat). There is no remote heat sensor, nor is there any digital board. Just a plug in and a knob. The heating element is easily replaceable, and costs a whopping $20 directly from Smokin It! Additionally, with the insulated sides and back, I don't have to worry about my kids or dogs bumping up against a scorching smoker. It is warm to the touch on the top, but no chance of burning yourself or others. The all stainless construction looks very well done. Clean fit on everything, nothing askew. There are two drain holes. One inside the unit, and one just in front of the door, where there is a small catchment for any juices dripping from the door. All of that goes into a deep stainless tray that slides under the unit. I don't see how you could make a mess with this smoker. I used it right on my porch, with no drops or stains!
I decided on the Smokin It over the Smokin Tex due to the cost, and having casters included. Frankly, I really wanted to go with the Tex, being in Texas, but offering less and charging $100 more didn't seem to wise. SO, the Smokin It was the choice.
I seasoned it as instructed, with the hickory chunks included, and then smoked a nice Pork Loin the next day. It wasn't dry like pork can get when smoked - mostly because I put pineapple rings on top and a small tray of pineapple juice down by the wood box. It uses a surprisingly small amount of wood! For this one, I used Mesquite, and some Cherry Wood Chips. The pineapple rings tasted great as well!
I do recommend getting a few accessories directly from Smokin It (since they are not offered on Amazon). The wood chip liner is great for the wood box. You can use small chips instead of chunks. Also, I ordered a seafood tray, which has a finer mesh. I also recommend getting a smoker/grill wireless temp gauge. I got one at Target for less than $20. I can check the meat temp without opening the door. AND, if it breaks, I don't have to fix my entire smoker!
The shipping on both the smoker and accessories was VERY fast, and packaged well - so no damage.
If you are considering purchasing a smoker, especially an electric, you should definitely put Smokin It in the mix. I believe it was definitely worth the money! Well thought out, easily and cheaply repaired for the long haul, simple to use, efficient, safe, and oh-so-tasty results!
**** UPDATE - 5 MONTHS IN ****
I LOVE THIS SMOKER! Because it is so easy to use, I use it ALL THE TIME! It does great! So simple... so low effort! Just fire and forget! No problems, just tasty goodness! Ribs, Brisket, Stuffed Jalapeños, Stuffed Poblanos, Hams, Turkeys, Chickens, Armadillo Eggs (bacon wrapped around sausage stuffed with cream cheese and jalapeños), Pork Loin, EVERYTHING COMES OUT GREAT!
And I use it so often because I don't have to worry about nursing temperature or air flow or smoke flow or wood amount, etc. Just put wood in it, foil the bottom and the woodbox, and turn it on to the temp you want. BAM! DONE!

The smoker is wonderful. No problems. No issues. No weak points. It just works and works well. I line the bottom of the box and the top of the woodbox with foil and clean the racks, and that is all. This is one of the best purchases I have made EVER. It just does its job without complaint. I do recommend getting one accessory from Smokin-It - the woodchip grate for inside the woodbox. I bought one, and it keeps ash and smaller chips from falling through into the burner area. Cheap purchase and worth it.
I recently helped a friend with their wedding food - 6 LARGE briskets. So, for 6 nights straight the little smoker did its all to get all the briskets ready for the reception. Cut the briskets in 1/2, marinate them in Cherry Dr. Pepper for 24 hours, throw them on the smoker with the fat side up. Repeat the process every night for a week. I have received a wealth of compliments on the meat.
If you are looking for an electric smoker you don't have to nurse along all night. Stop here and click "add to cart". I can't imagine you would be disappointed. I'm a fan.

Still ZERO problems with this smoker. I use it regularly, and it still goes like a champ. It doesn't complain. It doesn't whine. It just works. Consistent... every. single. time. I do wish I had purchased one size larger, but this one has done me proud. Rarely does a product impress and continue to impress... this one does. I finally mounted it on an old workbench I purchased at a garage sale, so it is now at a higher elevation (I'm 6'2", and the ground is getting further away every year!). Just drilled holes for the legs and a drain hole for drippings. Here is a photo. It is outside (under the eave of the house) 24/4... still no issues.

Before I bought the Smokin' It Model #1, I researched various models and manufacturers. I am glad I bought this one. The design is very practical and the construction is solid. Good points include practical design, stainless construction, pressure sealed door, accurate thermostat, good insulation and easy cleaning. The price is the lowest I have seen for unit of this quality. Spare parts look to be easy to order through the website, but the only things that could conceivably require replacement are the thermostat and the heating element. The owner seems to take great pride in his workmanship and service, and though I have not had the need to contact them, other reviews indicate their response is consistent with my positive first impression. I also looked at the Bradley smoker, but the construction did not seem to me to be as practical or solid, and the smoke system requires expensive bisquettes and is one more thing that could break, so I decided it was not for me. So far I have cooked ribs and salmon, and both turned out excellent!
Bravo on a good product and a business built on a committment to excellence!

I was looking for a smoker that was built like a tank, didn't need a lot of care, and I could use often. This one hits the mark on all points. Right now, I'm in the process of smoking 87 lbs of pork shoulders for a bbq fund raiser, and this smoker is working 16 hour days with no problem. My only regret is not shelling out the $ for the model 2, which probably would have made this project a bit less work.
It comes with a few dowels of hickory which was nice, but I bought Peterson's Pucks (hickory and cherry), which are easy to work with and create a nice flavor. It took a little practice with the temperature control to find the mark that worked best. I found that just under the 250 mark works great for pork shoulders, but I don't know how precise the temperature control is from unit to unit. You might need to run a trial or two to find what works for you.
Line it with foil (change between uses), add some wood and meat and fire it up. For me, it's been bullet-proof.
Update 12/2014: Over Christmas-time I hot-smoked several filets of salmon using applewood to make a killer salmon spread. Fantastic results. This past summer I also smoked corned beef to make killer pastrami, and made several rounds of pork barbeque as well. The only thing I've tried that didn't turn out great was smoking beef brisket, but that was due to operator error and not the smoker.

I was able to smoke a brisket, chicken. It's true what they say only use one piece of wood, maybe two, then add as needed or the meat will be bitter.
I used a foil pan under the rack so clean-up is no problem at all. So my wife decided to smoke some fish, then cheese, yea cheese, and it is darn good! So now she is smoking some chicken and I'm out a smoker!!
My,... wait! Our only complaint is the unit sits too low when the wheels are off for the pan to fit under it, and we don't want it with wheels. Other than that we love it!

I like the door on the front as opposed to a lid, you can slide in or out two seperate items if one is done before the other. Heavy duty construction. This was my first smoker purchase. It has worked great for me. I've used it mainly for pulled pork and brisket. Despite its smaller size, it will still hold a large pork butt. This thing is extremely sturdy and well insulated -- the outside is only warm to the touch while it's smoking. I use this with a Maverick remote digital thermometer and thread the probe wire through the hole in the top of the unit.

I've done 6 slabs of ribs that were trimmed and placed vertically. It was tight, but hey they were perfect. I've done links over brisket - and it to was wonderful. I'm looking on doing a whole chicken and salmon next. Really figuring out how much wood to use and what type of wood is something you're going to have to master. You'll learn quickly. Also, it doesn't need to billow smoke the entire cooking time. You're not going to cook-out that smoke taste.
But I've have not done any cold smoking in this (cheeses, salmon, etc). In reading a few blogs about the temp. setting I see most mention cold smoking around 70 degrees. The lowest setting on this is 100 degrees. So I'm not sure about buying the option cold plate.
While I'm glad it's hand made in the USA, technically looking at some of the welds on the box -- those could be cleaner. That's not a knock on the quality or value - I just know a few people in metal fab.
When this shows up at your doorstep, you might think it looks small, but trust me; good things come in small packages and good things come to those who wait.

Makes an amateur smoke like a veteran. The unit was not difficult to assemble. I think it took me less than 30 minutes and then I was on my way to season it as recommended by the manufacturer. I thought it was a nice touch to receive a hand-written note congratulating me on the purchase. My first attempt at smoking I tried a pork loin and beef brisket. Since the pork loin didn't have much fat, I was concerned it would get dried out but I found an online forum which recommended wrapping the loin in bacon, it was a nice touch. I was really impressed with the beef brisket as was my family. It was moist and the smoke flavor was oh so good. I used to have a charcoal smoker but this was so much easier.
I can't stress how easy this makes smoking meat because you just put the meat in and after the recommended cooking time, you get tender, smoked meat. I highly recommend this unit.

I’ve had it for two weeks now and truly like it. while the temperature gage took a bit of getting used to, both the baby back ribs and the game hens turned out great. I invested in a dual probe thermometer which means not having to open the door during the smoking process. The seller was awesome, product arrived several days earlier than expected. set up and seasoning the smoker was simple. I see many many years of enjoyment and satisfaction in my new smoker.

Overall the smoking-it electric smoker is fine. The only issue is with the drip pan. It got dented in shipping I guess. So it is not perfect but still usable. I have already smoked salmon in it and it was delicious. It seemed to be packed quite well but I think the wheels being in the pan in shipping caused the denting with the pan. So maybe the shipper might try putting some packing material between the wheels and the pan. Anyway, I like this smoker. The fact that it is all stainless steel pleases me 100 percent. It arrived here on time. A great little smoker.

I was able to smoke a brisket, chicken. It's true what they say only use one piece of wood, maybe two, then add as needed or the meat will be bitter.
I used a foil pan under the rack so clean-up is no problem at all. So my wife decided to smoke some fish, then cheese, yea cheese, and it is darn good! So now she is smoking some chicken and I'm out a smoker!!
My,... wait! Our only complaint is the unit sits too low when the wheels are off for the pan to fit under it, and we don't want it with wheels. Other than that we love it!

Best smoker I have ever owned! I had it set up and seasoning in less than 20 minutes. Extremely well constructed! Smoked 7 pounds of baby back ribs in 18 degree weather with wind and snow. Temperature was maintained throughout the 4.5 hours. I used 6 oz of Apple wood chunks and the smoke and flavor was awesome. The grates cleaned very easy with just a spray of water to get the major sugar and bbq sauce off, then the dishwasher made them come out like new. Finally, on the packing list/receipt Steve the owner of Smokin-it hand wrote a personal message of thanks for the purchase.

Before I bought the #1, I was thinking about buying either a Smokin Tex or a Cookshack electric smoker. The Smokin-It is 1/2 the price, so I was concerned that it might be flimsy or too small. When it arived, I was delighted to find that the #1 is built like a safe! Further, the size is ideal for groups of 4 to 25. This is by far the best value in smokers.

Makes an amateur smoke like a veteran. The unit was not difficult to assemble. I think it took me less than 30 minutes and then I was on my way to season it as recommended by the manufacturer. I thought it was a nice touch to receive a hand-written note congratulating me on the purchase. My first attempt at smoking I tried a pork loin and beef brisket. Since the pork loin didn't have much fat, I was concerned it would get dried out but I found an online forum which recommended wrapping the loin in bacon, it was a nice touch. I was really impressed with the beef brisket as was my family. It was moist and the smoke flavor was oh so good. I used to have a charcoal smoker but this was so much easier.
I can't stress how easy this makes smoking meat because you just put the meat in and after the recommended cooking time, you get tender, smoked meat. I highly recommend this unit.
