What is the shelf life of the wood chips?

Answer: I don’t believe there’s a shelf life of dried wood chips,,, I have large quantities in several different types and they’ve always smoked the same, even over time.

mesh - How frequently should I replace the mesh? Let's say in terms of amount of smoking "sessions"

Answer: There is not certain frequency. It should be replaced once it's burnt. Typically it lasts for 2-3 months, however, can be even longer. We would recommend to wash the mesh after each smoking session. Thanks for your question.

Answer: good question i only change my mesh when it gets too clogged to clean. it will depend on the number of different woods being used. i would guess around 10 - 15 smokings my be a good time to give the mesh a really good inspection.
