Do you have to remove the little metal tray under the mesh to use?

Answer: No, you put the wood chips on the mesh so that they burn on the mesh and so that there is adequate space underneath the mesh so the fan can pull air down through the burning chips to keep them burning.

Does this cold smoker come with a dome? Does it come with wood chips or pellets? Which wood is needed?

Answer: Doesn't come with a dome. Comes with wood chips hickory I believe. And you can use whatever flavor wood you like. I even used pieces of cinnamon stick before.

Answer: Doesn’t come with a dome. Comes with a bag of wood chips. Pellets would be too big for the burn chamber.

Answer: It comes with a small package of wood chips. You can order a large tub of them on Amazon for 6.99 each and they come in many different types of wood.

How long does smoke burn?

Answer: About 10 to 15 min but the smoke is heavy so I find 2 to 3 minutes is enough. You can reduce the amount of chips in the smoker to make less. This unit is perfect for smoking cheese, eggs, deviled eggs are great, cold smoking salmon or chicken prior to cooking. You can smoke cocktails and one of my favorites is watermellon

I think it must smoke foods too fast to infuse the whole portion. We smoked cheese. The result was cheese that smelled like it came out of a house fire not a smoker (perhaps a different wood may help?), and even though the scent was strong, the smoky taste was mostly on the exterior, very faint on the interior. Didn't taste like the smoked cheese that came from an actual smoker to us. Sorry to be unable to rate this higher, because it sure was easy and quick to use. Like I said - just maybe TOO quick.

But this is a gift for my son for Christmas. He used it to smoke cocktails. These were the best old fashions that I have tasted in years! This unit is small but powerful and puts out a lot of smoke.Delivery was quick, pricing was palatable and the unit itself is efficient. I recommend purchasing.

TC : Plastic dome/smoke chamber is NOT included (nor are wood chips or lighter)

Fair warning -- this item does not come with the plastic dome/smoke chamber so you'll need to purchase that separately if you don't already own it.

The unit is lightweight, portable and simple to use. Attach the hose to your smoke chamber, place whatever it is that you want to cold smoke and then light your wood chips in the cup of the smoker.

People always tend to ask how long you should smoke or let smoke roll for...it really depends, how much smoke do you like in your food item? It's really just all personal preference. If you want something super smoky like cheeses, I'd be inclined to say let it smoke for 7 - 10 mins. You may want a lighter hint of smoke on other items. Unfotunately, it's going to be a lot of trial-and-error, to find out what you like in terms of smoke flavor profile.

I got this mainly to try making lox and smoked cheeses -- I'd never thought about adding smoke to cocktails. I think that'll be a fun experiment.

We enjoy smoked foods, but it's not always possible or convenient to grill or smoke foods outdoors. I ordered this primarily to use with smaller portions that we prepare on an indoor grill.

Setting up the smoker is easy enough. Pop in a couple of AA batteries, then add the fine wood chips to the combustion chamber, light it up, insert the tube into an enclosure along with your food, and then turn on the blower and wait while the smoke infuses into the food. When you're done remove and clean the combustion chamber and screen.

This is not an "industrial" smoker; it's small and convenient for household use and works well with small portions. I've not personally used a smoker like this in the past, but I've seen them used. For a newbie, using this properly the first time was not an issue. This version doesn't come with any enclosure, but I placed the food in a smaller dish and used plastic wrap to seal the container. Bear in mind that some air has to escape the enclosure in order for the smoker to blow smoke into the space.

While I'm sure that there are other larger units available, this is definitely right-sized for our occasional use. Not only did the smoker work as promised, but it was actually a bit of fun to use. I would order it again.
