Answer: it used alot of my patience. this thing is poorly built. the inside peeled off after only a few uses, and when i say peeled off it came off in sheets and ruined food that i was smoking. the design is very poor. you will have trouble regulating temperature as well. save yourself the headache and look for something else.

Answer: This unit's low temperature will be around 200-225F.
Answer: I use mine with a cold smoke generator if you do this you will need to keep the temperature of the smoker below about 70F and less than 60 F is better. For most of the US this means after Labor Day and before Easter for cold smoking or at night in many places.

It is next to impossible to regulate the temperature with this thing. I spent 3 months waiting on replies from their customer service. Answer: You need to gradually move the temperature knob and keep an eye on the temperature. I typically keep it on the lowest setting with mesquite wood in the bottom and it stays around 220 to 250 for 8 hours or so. It's an awesome smoker.

Bought a Smoke Hollow a number of years ago. The entire bottom floor and burner pot rusted away. No replacement parts available. Buy something aluminum or stainless instead, especially if smoking brined meat or fish, as salt and fire are no friend of steel.

Overview - I was having a very difficult time getting this thing to stay hot. I live in Pac Northwest and it was a 30 degree day when I first used the smoker. I thought due to the cold that was the reason but it actually turned out to be the vent in the back, I had it closed. (my fault). Once opened and oxygen got in there was no issue with heat.
Matter of fact it's when I experienced all the issues. The damn thing started melting. I thought maybe 2 hours of heating/curing was good enough to burn out any oil, dirt, etc.. I was wrong. Grey smoke billowed out black crud running everywhere - concrete, pan etc. (See the pictures) black paint or grease or whatever the hell it is now stained my patio. I'll need to pressure wash in order to get it cleaned off.
At the moment I'm burning the hell out of this thing trying to get all the "whatever" it is out (see vid) so I can seriously test this thing without eating chemicals.
I like the size and how it holds heat so if all the crap on the inside burns out I'm good with it. We'll see.... I'll update my post when I give it another shot.

I would not buy from this again. I got it and the thermostat does not work. Try calling the company and you get a recording saying go to website then disconnects you. You go online and that is just about as user friendly as the phone. I would say go to Lowe’s or Home Depot. Then if there is a problem you can talk to someone.

I read some rather polarizing reviews before I bought this. There seemed to be a recurring complaint about internal paint sloughing off onto food, lack of thermal stability et cetera. I have a lot of experience cooking with all manor of equipment both commercial and residential and I like to tinker with things. So for the approximately $250 I decided to pay to see the flop.
I got mostly what I expected. A simple sheet metal structure with a little bit of stamping, and handful of fasteners and some adequate but decidedly un-fancy fittings for gas, temp and manually introducing water for steam. Heeding the warnings about paint sloughing, I decided to coat the interior with flax seed oil and take it up to max heat for about 20 or 30 minuets. This is a good method for reviving cast iron/carbon steel pans when they get a little raw from scrubbing. It seems to have worked well. The polymerized oil created a good protective layer sufficient for keeping the wood vinegars in the smoke from damaging the internal paint. A cheap solution I would recommend to anyone who buys this unit. The fit and finish is average in keeping with the apparent design philosophy. The door is not air tight, and honestly, you don't need it to be. A little leakage won't prevent you from cooking just about anything successfully.
Fair warning, this is not an Alto Shaam. You will not get spectacular control over heat. The walls are thin enough that the outside temperature will have an impact on your cooking. If you want a little more heat retention a couple of cheap pizza stones will improve things a lot. If you're trying to cold smoke, bypass this and just get some smoke wood from MTC and use a hotel pan and some plastic wrap. That said, I've had no trouble producing good to excellent results across several types of smoke wood and food. Mushrooms, brisket, bacon... If you've got a little finesse and don't mind babysitting it a little it's 100% possible. The internal temperature gradient is relatively forgiving. Dropping a sheet tray on the lowest rack helps keep the heat nice and diffuse. The ignition system works well so far, though I expect I'll be lighting it with a torch in a year or so.
It behaves about like I would expect for an option at this price point with this style of construction. If you want a smoker that leaves nothing to be desired you'll need to spend at least 4-5 times this much money or more. If you want a BBQ pit get a wood burning offset and learn how to make it work for you. For my purposes, this is about the OK-est t solution I could imagine. 3/5 stars through and through. Not a disaster, but not a world beater either.

The door was welded on crooked allowing smoke to escape from all sides of the door. The support website for Smoke Hollow is one of the worst I’ve ever had to deal with. All I wanted was another door sent to me but I could never get a response from them. I returned this unit out I’d pure frustration!
Jimmy James : Great big smoker but thin rust prone bottom panel and ring.
I had 2 of these before this one. I love the size, 24" wide and the number of racks, the adjustability of rack location and the finished product always tastes great. The one great big negative is the ring in the bottom of the smoker that the smoker bowl fits over will rust out in a NY minute. Some folks say its the LP gas or byproducts that are corrosive. I dont know. The smoke bowl that you put wood chips or chunks in rusts/burns out pretty quick too. You can make or substitute a different smoke pan so that is not deal breaker. The door on my new one is crooked and does not seal well at top left corner. Maybe can shim it or seal with and oven gasket. Maybe close the damper and let smoke out where it does not seal. Ran in to a problem trying to register for warranty which according to MB/SH you have to do. This model # is not listed. You cannot register without it. I did file a warranty claim by selecting a listed model # and saying mine was not listed. You cannot call MB/SH, all you get is a recorded message telling you everything has to be done on line. I call this TERRIBLE CUSTOMER SERVICE but this is what the world has come to. These companies have gotten so cheap they wont even pay for an off shore 3rd world call center for their customer service. Also to register for warranty you have to take a picture of your receipt and the back of the smoker where the model # and serial # are. You have to upload the pictures during the registration process. I like the concept, the ease of use and what it does for ribs, butts and briskets but the rust out problems, fit and finish, total lack of customer service would recommend you look else where.

I was ready to leave an electrical smoker for a larger gas smoker...(I know) to smoke larger pieces and amounts. I am still learning how to regulate the heat so I don't turn the ribs into jerky- happened once so far. My wife is not a rib person at all and is satisfied that I bought a useful device that will be enjoyed for time to come. 1 downfall is the door...open it and all the heat/smoke escapes. I am looking to purchase a welding blanket or smoker robe to better trap the heat inside. I think a larger water bowl would be helpful and a cast iron pot for the wood chips.
