Answer: Yeah the wood chips go in the bucket above the heating element. You don'y have to put water if you want, but it helps keep the food from drying out.

If yes, then make sure you have the thermostat control assembly fully plugged into the socket on the side of the smoker. If it still doesn't heat, the heating element might be defective. Answer: Cheese is generally 'cold smoked'. This smoker, as designed won't allow you to cold smoke anything. I find it only starts really producing smoke at 225 or above. There are ways you can, however. But you'll have to google 'ways to cold smoke' for yourself.
Answer: You can if you get A-maze-n pellets. They generate a lot of smoke with their own smoldering minimal heat. No other heat needed.

Answer: I dont think pellets will get hot enough to start smoldering. They are very compacted . You would probably be better off with water logged wood chips.
Answer: personally In use a smoke tube which uses pellets. The larger ones will create smoke for around 6 hours. Bonus they can be used in your smoker for cold smoking also. I have found they work better than the chip tray that comes with the smoker. They last long enough you wont need to refill them. I have used different brands and shapes I have found the round 12 inch work best for me. If you don't need smoke that long adjust that by loading less pellets.

As far as in direct weather, I don’t think you would want to use in the rain, but would probably be ok outside with a cover when not in use. However, it is light enough that it would be very easy to move inside to store after use.

Answer: No exact gage, you have to guess. My experience is the the numbers on the dial represent the degrees in hundreds (1=100 degrees-ish and so on). I just bought a remote cooking thermometer and keep a probe on the inside to measure the temp. Once you get it dialed it works like a charm but a lot of trail and error however I am happy.
Answer: It has a pretty accurate analog thermometer on the door. Practice in usage will give you a good idea where to turn knob on heating unit to reach a certain temp range
Answer: I have found that the range is from about 175 degrees F. on the low end to about 350 degrees in warm weather. In cold weather, it tops out at about 300 degrees. This is an analog smoker -- it uses a control like the ones on electric frying pans. You'll have to experiment to determine where to set the dial to achieve a particular temperature, but it doesn't take long to figure it out. If you want set-and-forget convenience, pay more for a digital electric smoker.

Easy setup. Easy operation. The smoking works better than I thought it would. I've been using pellets in the wood tray and it works well. Did a brisket first weekend I had it, came out great.

Didn't even get a chance to try it out once. As I was installing the legs, I noticed that there was both damage to the smoker and the holes on one corner weren't aligned. So, I couldn't even install one of the legs. Look at the pictures. It looks like the bottom panel just wasn't installed properly. As you can see, the two screw holes aren't even lined up with the panel. So, no way for me to screw on the last leg. On the other side, the panel wasn't even attached to the frame. It was flapped up as if something was jammed in there.
I expected much better from Char-Broil. This wasn't just damage from shipping. It was poor craftsmanship and quality assurance. This one is being returned, and I'm not sure if I'll trust a replacement from Char-Broil.
B K : Won't smoke
Got my smoker in perfect shape and was excited to try it out. I got wood pellets by mistake the first time. Put them in anyway and turned the smoker to high as per the instructions, until I saw smoke, not a lot but a steady stream. Put my meat in and turned down to where I estimated I needed for 250 degrees. came back 15 minutes later to check temp and there was no more smoke.Temp was correct on the thermometer on the door but those are famous for being off. Put the portable thermometer in and the one in the door was very close. I wrote that off to my mistake of using pellets and ordered the proper chips. When they arrived, I tried again with the same results. Reread the instructions still thinking that I was doing something wrong. Tried again. Same results. Went to town and bought a different brand of wood chips. Same results. Pretty sure its the smoker!

I love this smoker. Historically I’ve been a fan of real wood and charcoal smoking. I’ve used the world famous “Big Green Egg” for well over a decade. That said, I bought this smoker on a whim to use while camping. It only weighs about 50 pounds so it’s easy enough to toss in the back of my truck and hit the road. After a few uses, I’ve got to say, I may not go back to my charcoal powered Big Green Egg. This little electric smoker is so incredibly easy to use that it’s a life changer. The briskets I’ve cooked have been top notch with a great smokey flavor. This little Charbroil smoker is so easy to use that I’m actually using it more than I ever used by BGE. No hassles and no obstacles to keep me from using it. It’s safe, easy to clean, affordable and so easy to use that literally anyone can produce great smoked foods and BBQ that will rival your best local BBQ joint. I love this thing.

Bought this for myself as a birthday present, because I've never tried smoking meats and some local restaurants have opened my eyes to possibilities. This Char-Broil smoker is easy to use and works great even in cold and wet conditions. I ordered an extra chip tray direct from Char-Broil, which definitely makes it easier to swap out spent & fresh chips with minimal temperature loss. The smoker racks, floor, and pans are small enough to go in the dishwasher if needed, but you could also smoke two whole chickens at one time if you wanted. The thermostat/temperature control unit is simple and should be easy to replace if needed. Order a heavy-duty extension cord to go with it because the attached cord isn't very long.
So far we've done chicken thighs and wings, a pork shoulder, and a whole chicken, using cherry, apple, and hickory chips. Everything has come out delicious.
jdp : UPDATE: Low temp and no work
Gaugue shows Internal unit about 40 degrees lower than my digital temp probe, and stopped working. Unplugged from smoker and light came back. Recounted and light off. No heat.
UPDATE: Sorry about the previous text. Sent it on my phone. Anyway, gauge still shows about 30-40 degrees higher than digital, but if you crank heat to the 250 mark, you'll be around 220. Still don't know why it the control shut off, then came on when unplugged, but it apparently kept working. Chicken and brats tasted great. Five pound chicken finished in 2 hours. However, increase your cooking time if doing several foods. Two days later, did babyback ribs, another 5-pound chicken, brats, baked beans, mixed nuts. Ribs, brats, beans, nuts were great (hint: don't brine soak nuts like they tell you to do, 'cause it makes them soggy). Chicken not fully cooked after 3 hours, probably because temperature never got above 200, even when thermostat cranked to max for 3 hours. Guess it's an art and not a science. Let's see what happens with 14-pound turkey tonight.

This is a great smoker for the money. My only regret is that I wish I spent a little more and got the digital one because I use a smoke tube and it seems to cause temperature fluctuations. it would be nice if the unit automatically kept a preset temperature, but of course in order to have that feature you need the digital version. I cannot take away a star from the product because this is not meant to have a smoke tube in it, you are supposed to use the wood chip tray. Otherwise it holds the temperature perfectly.

After reading reviews from others that mentioned dents and dings upon arrival, I was prepared for the same. Sure enough, ours arrived with an edge dinged with chipping/peeling paint. Oh well - for the cost and ease of use I can get over the blemishes, which are merely cosmetic. This smoker is super easy to set up, use and clean. Our first several meals from this hot box have turned out well. The temperature gauge is accurate enough but for a true reading of the meat inside we also purchased a separate meat thermometer to use in conjunction. Compared to our previous gas smoker, this is far easier to use and the temperature is more consistent. We won’t be winning any state fair prizes for meat smoked with this, but for the casual backyard grill master, I would recommend this smoker. For the fair price and ease of use it was a good purchase, even with the dents and dings upon arrival.

Ok....let me see if I can help someone make a decision on which smoker to purchase. This is a great little smoker, I haven't had any issues with it. The biggest difference I see in the smokers is this one comes with a metal insert over the wood chip box and the water tray. This insert allows you to put an aluminum pan with whatever liquid you prefer to use in it and also allows for much easier clean up. How I use my smoker is.....I take out the water tray and the wood chip box. I place an aluminum pan on the metal insert with water or whatever mixture you want to use. For my smoke I use a pellet tray, once it's lit I place it on the bottom of the smoker and let it do it's thing. Everything I've smoked has come out great with great smoke flavor. The clean up is great just remove the aluminum pan and toss it....they're only about $1 each, take the racks out and put in dishwasher and replace with pans you removed during smoking for storage. My only complaint about this smoker is that it is very close to the ground.

I read the manual beforehand, having never used an electric unit before. So, I followed the manufacturer's recommendations a day before to run for 2-3 hrs. to burn off the oils used in the manufacturing process. I had brined the chicken overnight and put it in the unit at about 11. I took it off to rest at 3:30 and it was well-cooked (and delectable). The unit produced consistent smoke and the temperature was rock steady. I was quite pleased.
My only suggestion would be to supply a fourth (the unit comes with 3) cooking grate, since there is room and even rails for it in the chamber and it would certainly be useful for ribs or smoked fish.

This is a great smoker for the money. My only regret is that I wish I spent a little more and got the digital one because I use a smoke tube and it seems to cause temperature fluctuations. it would be nice if the unit automatically kept a preset temperature, but of course in order to have that feature you need the digital version. I cannot take away a star from the product because this is not meant to have a smoke tube in it, you are supposed to use the wood chip tray. Otherwise it holds the temperature perfectly.

I hate the mess you usually have to deal with on a grill so I researched foil pans and wire trays to fit into the pans. After the first cook the inside of the box was clean. I found the trays at Costco and the 8 x 10 trays on Amazon. I would highly recommend this. The only recommendation I would give the designers of this unit would be to make the inside width 16 1/2 inches to accommodate a 16 inch pan that I commonly found.
My first cook was baby backs and a thick ribeye. I normally cook ribs in the oven and people rave about them. I pre-cooked the ribs in the oven for 1.5 hours at 350 covered with rub and then covered with foil for a steamed affect. Then smoked for 2 hours at 220. They were delicious and the meat came off the bone and had the right amount of chew to them. Tender but not mushy. I seared the steak on both sides and smoked it for 2.5 hours. Tender and delicious just a little pink in the middle. I would highly recommend this unit for home use. I never write reviews on products but figured I owed to all the people that wrote the reviews that led me to purchase this unit

But upon opening it, the front door has a big dent near the top, where you can see the braces in the corner in the door now because they protrude around the dent...I'm thinking the goal should have been a nice smooth surface on the front...right?? And the edge of the door has another dent. The box appeared never opened so they packed it this way??? Sad comment on the quality you can expect. I cannot recommend this at its full price because it seems a crapshoot if what you will get does not come dented already. Been looking for a smoker for months now, so not sure what I'll do with this. What a hassle.

I really like this smoker. It produces a lot of smoke. It is well made and a cinch to assemble. The door is solid and the latches (2 of them) keep the smoke in the chamber. My only objection, like others, is that to add wood chips (which was necessary about every 30-45 minutes when I was smoking ribs for the 4th of July) you have to open the door to get to the box that the chips go in. That causes a temperature drop and subsequent fiddling with the temperature control to get the temperature back up to the 225-250 degree sweet spot. But the smoker produced a great product - my ribs were delish!

The smoker is easy to set up-took maybe 20 min at the most. Calibrated temp gauge against a digital thermometer and found unit temp gauge to be right on. Smoked salmon and temp remained within 2 degrees over a 6 hour period. Takes a little time to find right setting, but once there it holds very nice. I used 160 degrees. It is unbelievable to me that a name brand like Char Broil can't ship a unit without dents! Read many reviews of people who received dented units- my unit was also dented-not bad enough to impact performance, but still noticeable. The unit had to be dented BEFORE prepared for shipping-the unit was wrapped in styrofoam and cardboard and there was no damage to either-only to unit. There is no excuse for this- company needs to concentrate on origin to solve the problem. There are way to many negative comments on this subject.

As a newbie to smoking, I bought a unit that was damaged but usable in every way and saved about 1/3 of the cost. The damage was minimal and cosmetic. Heck, I don't care what it looks like, I just want something that works! I applied the savings to chips, cover and thermometer. I live in an area that suffers frequent but short term power outages which steered me away from the digital units. When the power goes out for a few seconds before the generator kicks in, I don't have to worry about resetting or damaged electronics. It just starts back up where it left off. I also like the dual latches so the door stays evenly pulled closed. I don't tote my smoker around much but the handles make it easier to move. I do wish it came with a fourth rack but 3 is ok and depending on what you are smoking size wise, you may only need one. Inside smoking dimensions are roughly 12"d x 15"w x 22". I also like that the internal surfaces are pretty flat, including the shelf guides - makes clean up much easier!
I had never smoked before but this thing makes it very easy! In the three months I have owned it, I have smoked hams, ducks, chicken, turkey, leg of lamb (bone in and was perfect!) hamburgers & chops and never disappointed! The temperature gauge on my unit runs about 10 degrees cool, but that is OK, its close enough. I recommend getting a 4 probe remote temperature sensor - you can get a good one for about $30 and saves you from having to open the door (letting the heat out) to check the temperature of your food. You can check it from pool :)
I always wipe a bit of oil on the room temperature racks before placing meat on them and then popping it in to into the pre-heated smoker. Pre-heating is pretty quick and faster if you you hot water in your water tray. Once up to temperature, the outside stays relatively cool (ok, warm) and can be touched without being burned.
Now the things that could be improved: Longer legs (or you will need something to set it on). A tad more air space for the chips to smoke just a bit more. Self cleaning feature could be better (kidding) Its "ok" to clean up if you don't let the dirty racks sit around for long. I do place foil just about the water and chip pans which helps a lot!.
This is a good smoker and works without fuss. I recommend it highly.
A year in... I have used this EVERY weekend! No issues, no problems. I did buy a (sold seperate) cold smoker unit so i could smoke cheese, rice and yes, pasta! ) it really is a GREAT low entry smoker! I actually bought a second one for our cabin. It is THAT good!

Assembled easy (neighbor did it). Holds heat consistently. One problem (one of the poprivets on one side holding the waterpan and chip pan rack was missing, so had to put a new poprivet in). Will try to smoke some pig wings today. No smoke escaping other than vents. Would like to have closeable vents, but that's just me. Good product for price.

Bought this to replace one just like it...only it has been updated and not for the best. Rec'd it dented to start with. Does not keep temperature good, smaller cooking coil. Door does not shut good and is made a lot cheaper. hate it to be honest!! Wish I could find another older one.

The first batch of snack sticks are doing wonderful and the analog temperature control is maintaining the heat right on. I read too many bad things about the digital units and am very happy with this one. Thank you Char Broil for a well built product. The only drawback is “MADE IN CHINA”. Damnit!

good smoker, easy to use, well insulated, good temp control. only draw back is you have to open door to add wood chips. to get enough smoke, chips have to be added about every 1 1/2 hr. I also drilled extra holes in the wood pan so it could get more air for the wood. I use temp probes in the meat to monitor cooking time and one for the smoker internal temp. I feel this is a good smoker for the money. I purchased a "Masterbuilt" stand to raise it up higher.

I can’t say for sure if it’s good or bad because it was too beat up to use. This is in no way a reflection of the seller, or the product itself. Sadly somewhere between point A & point B it looks like it got hit with a sledge hammer a few times. I will say I am less than thrilled with the return policy. Is what it is. This does inspire me to go buy one in person at an actual store just like I did before I succumbed to the ease of online ordering.

this electric smoker is great!! It is easy to set up and operate. Everything we have smoked in it has been terrific. Save yourself the $$$$ and buy this Char-broil smoker - it is just as good as the expensive ones!

For me the main issue was maintaining a low slow for making sausages of all sorts. The temperature was easily maintained when you know the increments the dial like on an electric stove, medium low or medium is just 1 click.
Sausages start out at 160 F then to 175 F the larger smokers don't go that low very easily. The one thing that I had to manually light the wood is, temp to low to light it.I have 2 other smokers, a pit boss wood pellet/electric and a dyna-Glo and it is propane, great when loose power for 1 to 2 weeks during Hurricanes

Heating element and controller went out on my unit pretty quickly. I called for support and charbroil wanted $55 for replacement parts before shipping. I'm not paying for something that's only gonna last 5 times. Go with a different brand.

Joe : Arrived damaged and defective
Didn't even get a chance to try it out once. As I was installing the legs, I noticed that there was both damage to the smoker and the holes on one corner weren't aligned. So, I couldn't even install one of the legs. Look at the pictures. It looks like the bottom panel just wasn't installed properly. As you can see, the two screw holes aren't even lined up with the panel. So, no way for me to screw on the last leg. On the other side, the panel wasn't even attached to the frame. It was flapped up as if something was jammed in there.
I expected much better from Char-Broil. This wasn't just damage from shipping. It was poor craftsmanship and quality assurance. This one is being returned, and I'm not sure if I'll trust a replacement from Char-Broil.
Peter : Pay for what you get
Pay for what you get. It’s a great cheap smoker to get your feet wet. When I have food in it struggles to go past 300-310. The chip tray is small and won’t smoke bellow 300 either. Even if I’m able to get good chips and smoke at 250. Smoke escapes from the door crevices. It fits my needs for now, I will prolly upgrade in a few years for a better one.

Best smoker for the money if you’re just starting out. Super easy to use and to clean. I ended up purchasing a ThermPro 4 probe meat thermometer so I would have a way of monitoring meat temp verses smoker temp. The analog thermometer that comes with this smoker is pretty close. I get smoke at around 180 degrees. Temperature is pretty stabile during hot or cold weather which is really nice. Well built. Door seal is solid. I recommend this smoker to anyone.

I seasoned the smoker as suggested, and I'm trying to smoke some salmon. I put the smoker on high, the smoke started, and I turned it back to where my thermocouple showed 140. The smoke stopped. I have it up to 200 on the thermocouple, and it still isn't smoking. Also, the door temp gauge shows 250, when the thermocouple is 200. All temps in Fahrenheit. Might be a good entry smoker for the casual user, but not good for a person who smokes a wide variety of fish and meat.

First smoker that I've ever owned; but had smoking buddies for years. Most have some automatic puck-dispensing or egg things that cost $500+ and they are limited to their supplies based on the manufacturer. At 1/3 of the price, my wife bought me this one that allows me to use any type of chips that I want. Provided at this lesser cost, the performance isn't as good in terms of the smoking capability & flavoring (although I do not have the innards completely 'seasoned' yet; but I've got this thing dialed in on the controller to whatever I want & it is pretty consistent on temp. I like the industrial look of the box, handles & latches- makes think that I could turn it into a vault, if I ever needed to. Make sure you get a cover for it to keep the elements & critters out. I am pleased with this purchase & would recommend it to anyone that is an occasional smoker & not a snob about it...

Loving this smoker so far. Dinging it one star on value since there's space for 4 cooking racks and they only include 3. If you want the 4th rack, you're looking at ~$19 shipped from the manufacturer. Performance wise, I love it. Smoke box is a little small and I only get about an hour out of a load of chips, but that's to be expected on an electric smoker like this. The analog gauge was spot on when compared to my Maverick digital thermometer. Also, the probes for the Maverick fit right through the vents. If they would've included 4 racks, it'd be an easy 5 star. That's 72 poppers in the pictures. 3 dozen jalapenos halved, 72 slices of bacon, pounds of cheese, two hours, and tons of yumminess.

Bought this for myself as a birthday present, because I've never tried smoking meats and some local restaurants have opened my eyes to possibilities. This Char-Broil smoker is easy to use and works great even in cold and wet conditions. I ordered an extra chip tray direct from Char-Broil, which definitely makes it easier to swap out spent & fresh chips with minimal temperature loss. The smoker racks, floor, and pans are small enough to go in the dishwasher if needed, but you could also smoke two whole chickens at one time if you wanted. The thermostat/temperature control unit is simple and should be easy to replace if needed. Order a heavy-duty extension cord to go with it because the attached cord isn't very long.
So far we've done chicken thighs and wings, a pork shoulder, and a whole chicken, using cherry, apple, and hickory chips. Everything has come out delicious.

Item delivered early. Easy assembly, with one exception - had to ream out one hole to attach one handle. Break in seasoning underway - reached 225 in 15 minutes. Seems to have reached a top temp in the 365 area (all temps from my remote temp unit). Temp gauge on door still reads 200 - no surprise - same result on my Smokey Mountain bullet smoker. After break is done I will load up a couple of racks of chicken wings. Result to follow.
Follow up: I have done a full rack of chicken wings and a half rack of chicken thighs. Both turned out well. I used Cameron’s extra fine wood.
I am an old school smoker using a Weber Smokey Mountain 18” bullet smoker fired with charcoal and using wood chunks to create smoke. I am used to having to watch temps carefully during the smoking process so figiting with the electric temps is familiar for me. Having to refill the wood supply in the electric smoker every hour or so is, IMHO, the only draw back so far.

I've never owned a smoker until now and my only real regret is not buying one sooner. I live in an apartment so a cheap electrical smoker is perfect for me. I've used it several weekends in a row and everything I put in there tastes delicious. I've made sausages, chicken breast, ribs, jalapeño poppers and chicken wings. I love the way it crisps the skin on chicken. It took 2-3 times using the smoker to understand how the analog input affects the temperature output. It's a minor inconvenience, but for the price, its worth putting up with.
I've seen some complaints about handling damage and lack of smoke - Mine came with little to no damage. Based on packaging and weight, it's really hard to imagine this thing getting moved around a warehouse WITHOUT getting damaged. In my opinion, if you zero damage, go buy one in a store. It took about 20 minutes to assemble, the instruction manual is very good. As far as the lack of smoke, it think it works just fine.. I've used soaked and dry chips. Hickory and applewood so far. Everything I've eaten has been plenty smokey. That said, I may experiment with additional holes in the chip tray, but I really don't think that's necessary for a smoker.
