Answer: I live in Central Valley CA where coldest it gets is lower 40s. I haven’t used it that cold yet...but I’m guessing getting in low 30s may not be good for this unit. It may take too long to get to right temp, and it may have trouble holding. That’s just my take on it. Seems like a unit built for California.

Answer: Yes.....depends on the on/off mood swings of the thermostat. I use a separate remote thermo and shoot for the median temp while cooking. ....also, refrain from opening the door so much.

Answer: You are. Try keeping one vent completely closed, with the other cracked open only an 1/8 inch. The vents aren't a snug fit anyway and you need a bit of ventilation for best result. Good luck!!

Answer: Hi there, these smokers were designed to function between 200-275 degrees.
Answer: The temp gauge is junk try using a different temperature gauge. On my temp gauge it only goes up to 225 but it’s really over 300. I use an remote gauge.

This smoker sucks. First time smoking anything in it and the temp won’t rise above 160 degrees. When we cured the smoker the temp was up to 300 and now.... nothing. We had a Smoke Hollow smoker that lasted us 7 years and will be going back. Not only are we out $200 but we have to buy another smoker. Totally disappointed.

Model is defective. Cannot maintain tempature. Use an independent set of probes and watch how inconsistent the tempature it is. High was at 250 degrees some days and 350 others. I live in Florida - not the weather.
Customer support had me rewire the thing, between monitoring the tempatures and working on it installing parts I probably put 14 hours into it.
Customer support promised if the new parts didn’t work, they’d refund it or give me a different smoker of equal value. However, when it came to that part, they said a supervisor would have to call me back to process. It never happened, and I’ve called/emailed with them over a dozen times and this case was opened awaiting supervisor call back over a month ago.
Really unfortunately companies like this exist and think it’s okay to do this to people. Luckily I bought on prime and the refund/return was smooth.

For the money it is a good smoker, starts smoking within 10-15 of starting it and reaches higher temperatures than most models. If you are looking for a good starter smoker I would recommend it.

Smoker was fairly simple to assemble. Top of cabinet was dented which I understand is common to have dents from shipping. Did not interfere with function of unit. The smoker is very poor at maintaining heat. Never went over 250 degrees F. Biggest problem is control unit went out after the 4th use. It took approximately 10 weeks from initial contact with Pitt Boss to receive a replacement part. However, they sent the wrong part. Subsequent contact with company has gone ignored. The unit was purchased on November 25, 2020. It is now April 27, 2021. The smoker remains broken and it appears Pitt Boss is not going to do anything about it to fix it. Avoid this product and company.

Don't waste your money. I got this smoker as a mothers day gift and it never even got close to reaching a temp of 250 degrees, sometimes not even 200. I got a replacement sent (also had to send back the original which, after a few uses, was a huge, messy ordeal) and the replacement does the same thing. Also, the wood chip compartment seems cheaply made and I struggle to put the drawer in and take it out every single time.

Seems built well, laid out well, but like several reviewers, I have found this thing doesn't get hot enough. Lucky to get to 225 when water has mostly burnt off. When pan full, struggles around 200. Light on mine flashes, customer service said it was just the light...I suspect it's the whole unit turning off and on because of a faulty board. Wouldn't recommend, sadly. Had high hopes.

I was being very serious about my question if this smoker catches on fire. We have the same smoke at work and we keep it very very clean. We had sausage smoking at a very low temp and it caught fire and flames were shooting out from the bottom.

I really wanted to like this product. Considering the price it is well constructed. Good looking, decent flexibility in the rack arrangement...
I love the 2-door design to that allows access to add wood chip and water (small water pan).
main issue is that the unit is critically underpowered. The thermometer goes up to 500F for some odd reason, the unit itself would NOT exceed 245F in over an hour of trying at the "high" setting.
According to the manufacturer it should get to 325F...but it won't even do that. Checking reviews on line this is a frequent complaint. Stories show that the manufacturer will send a replacement heating coil...but they have a rep for not lasting more than a dozen cooks.

I like the size and the analog control. However, this smoker will not reach temperature over 250 degrees. Max temp appears to be closer to 225 degrees but it has trouble maintaining that temp for any extended period. Product description states it should reach 325 degrees. This was not my experience at all. I was disappointed in this unit and would not recommend. I contacted Pit Boss and Amazon about the trouble. Amazon sent another unit to replace the defective one and told me to toss the first unit rather than return it. Five or six weeks later I was then billed for the replacement unit. Dispute for additional charge continues to be ongoing.

This is a great smoker. After about 30 minutes to assemble I cured it as indicated in the manual. The next day I smoked a whole chicken (apple wood chips) and it turned out great! I also smoked a whole rack of ribs and again they were great. Did a brisket three days ago and it was perfect. One thing to do if you plan to use smoke pellets is to not over-fill the tray whit pellets. I add a thin layer of chips in the tray and then a reasonable layer of pellets on top. The chips will get going quicker and then the pellets will sustain the smoke for a longer period of time.

I've only seasoned it so far and will smoke some meats tomorrow. Hopefully, it will perform as well as my Masterbuilt. It sucks; took 6 hours to get up to 225. Piece of crap. This is Pit Bull? Their reputation isn't worthy. I lost $225 and can't get it back. Waste of money. Update: it turns out the temp knob didn't fit correctly, so I replaced it...now it works like a champ.

We did a lot of shopping before we settled on this model. It’s very helpful to have a helper when putting this smoker together. It’s not a hard job but some of the pieces requires extra hands. It took us about two hours to complete. On our first try, we did baby back ribs. Smoker did an awesome job. The store bought rub we bought wasn’t too tasty. Next time we’ll make our own. All in all, we’re very satisfied with this smoker. Just need to find a great sweet/spicy bbq rub!

Kind of shocking the reviews on here. Other sellers have around a 5 Star Rating across the board. I wonder if some are faux buyers. Anyways; This smoker was packed perfectly. Amazon box & then the Pit-Boss box. It takes about 30 minutes to unpack and lay everything out before assembly. I used a work table NOT the floor. Build quality is the best I've seen. Use kitchen shears to open the wrapped taped parts. The "screws" parts card - use a pocket knife to open each section slowly. Read the directions. You will need a full size head Phillips screwdriver & pliers for 1 part - that's it. This is NOT for a screw gun or drill with a bit! Directions are good BUT you do not have to take the door off. Total assembly took about 70 minutes by myself. I chose electric because they cost less in the long run & require far less cleaning. Wrap the inside bottom of wood chip box w/foil for less cleanup. Wrap the water tray completely w/foil for less cleanup. I do NOT like temperature gauges on any smoker or grill, they are never accurate. Commercial gauges only $7, get 1. Cure the unit for 1 hour at full temp, I used canola spray on a clean cotton bar towel & wiped down everything except the glass. ALL smokers are subject to weather. Face the vents away from wind etc. The meat here is a 7lb brisket with a simple 50/50 fresh cracked black pepper & sea salt rub. As you can see the temp gauge clearly. 225/250 degrees is ideal for smoking, not 300. This Brisket took exactly 6 hours. As you can see in the pictures it came out perfect. Electric also leaves less "bark" because there is virtually no creosote. This brisket had about 1/8 inch thick slightly crunchy "bark" all around. The temp outside was 55 when I started & 65 when finished with a light breeze. By the way Pitt-Boss has excellent USA Customer Support and an outstanding website! My Son has a $650 pellet smoker, after this brisket he was shocked! I have a dedicated Propane BBQ. I would NOT recommend using any smoker as a BBQ.

Took a bit of time to set up…. Loved the viewing window. The only downside to this smoker is that every time the door is opened you lose a lot of heat and takes forever for it to come back up

Overall I’m happy with this smoker. I’ve used Hickory and Mesquite wood chips. I couldn’t get the temperature much above 250 deg F until I switch from Hickory to Mesquite. Still could not raise it above 300. Good enough for my purposes.
I really like the glass front.
I use a meat thermometer with an attached readout to monitor the internal meat temp. Better than opening the smoker to check.

Packaged most efficiently. Took about 1.5 hrs to put together this PB 77220 following directions from booklet. Don't be in a rush. You may need to wait till next day to cook with it. Good materials. The analog never got past 220. (We are going to tighten nut on door latch for next smoking session.) We weren't discouraged, and unit got hot enough inside to do a fine job on our first smoking attempt. (I have owned 2 other barrel electric smokers and have as yet to have one that the outside analog temp gauge read accurately!) You'll see the meat turn golden. . . just relax and have fun with the unit. The booklet tells you in one section to put meat on before you start unit and in another section it says to wait till unit is hot! I put meat on before I turned the unit on. The temperature probe included with smoker was accurate. We did 2 chickens, 6 links, 2 baked potatoes and 3 ears of corn that turned out great! My experience has been that you don't need or want constant smoke. Frustrations may partly be that you are a beginner. Give yourself plenty of time because when you put on different cold meats and vegetables and open door, it takes a while to build the heat back up. Touch and go! This is a well made smoker, and experience with it and different woods will help you more than anything!

Overall I’m happy with this smoker. I’ve used Hickory and Mesquite wood chips. I couldn’t get the temperature much above 250 deg F until I switch from Hickory to Mesquite. Still could not raise it above 300. Good enough for my purposes.
I really like the glass front.
I use a meat thermometer with an attached readout to monitor the internal meat temp. Better than opening the smoker to check.
