how to use the blade sharpener? which one first?

Answer: Great Question: Start with the Carbide side running the knife from heel to tip 4-6 times, then move to the ceramic side again moving the blade from heal to tip but this time 8-10 passes.

Will this work on steak and other meat besides fish ?

Answer: Absolutely!

Can these be used for all meat processing as well as fish?

Answer: I've used them successfully on fish and while processing venison.

Answer: Yes. Works very well for trimming fat off meat ie- trimming a brisket before smoking. Very very sharp.
