Answer: Great Question: Start with the Carbide side running the knife from heel to tip 4-6 times, then move to the ceramic side again moving the blade from heal to tip but this time 8-10 passes.

Using the knives to fillet fish after using the boat. The knives start out great, they are sharp, the carry case is convenient, the included sharpener in the case is a great idea and the set includes 3 useful sizes for filleting and then skinning the fish. I like the flexibility of the larger knife. I have had these for many months now and the knives do not hold an edge at all; pretty much sharpen the knife after every single fish to keep them usable. The case is a great idea, but poorly executed as it can easily fill up with water and you have to leave the case open after using them to let it dry out or you end up with a smelly mess on your hands. The sharpener is good for maybe a few weeks before it becomes useless. Good idea, they need to improve on the execution. if you are using these once in a blue moon, probably ok.
