Any Dehydrator Will Dry Food, An Excalibur Dries Food Safer, Better, and Faster.

Ordinary dehydrators produce constant, unchanging heat, which can cause 'case hardening.' Ordinary dehydrators create a dry surface with moisture trapped inside – the perfect environment for yeast, mold and bacteria growth. With the Excalibur Hyperwave Fluctuation technology, the temperature fluctuates up and down to prevent this from happening. When the air temperature fluctuates up, the food's surface moisture evaporates; then, when the air temperature fluctuates down, the the inner moisture moves to the drier surface. This keeps the food temperature low enough to keep the enzymes active, but the air temperature gets high enough to dry food and overcome yeast, mold, and spoilage.

48 hour Digital Controller

Two Time, Two Temperature digital controller speeds up the drying process. Answer: Anything from Excalibur is solid. I like the models with the stainless steel trays but they are twice the price. What other brands were you using? Excalibur dehydrators also have a warranty so if something does go wrong you are likely covered.

Answer: I havent used it in a while, so i turned it on and let it run for a while. I dont think that its that loud. Especially if you have the front cover on. There is a very large fan in the back of the unit. I dont think it would bother you that much, but it all depends on the individual.

Answer: Mine is fairly noisy and we have to make sure it is not touching anything ie. shelf behind it or anything leaning against it because it has a little vibration that really carries.

Answer: When I received mine, due to minimal packing, the fan had moved slightly forward. I took a skewer and pushed the fan back so it would stop hitting the grate, and all the loud noise went away. I would try that before returning.

Answer: Can't tell you the exact decibel level but it's not very loud at all.

does this unit come in 240v to work in new zealand

Answer: I don't know the voltages that it is available in, but I will say that my unit was packed so poorly that it was seriously damaged and non-functional upon delivery....and I'm in the U.S. I returned it immediately, and purchased another brand/model from a local store. If you order it from New Zealand I have no doubt that it would end up there in pieces.....the packaging is that bad (or should I say non-existent).

Do you have to rotate the trays during the dehydration process for jerky?

Answer: No. I use mine (9 tray model) to make jerky and it dries evenly - every tray, every side. Maybe not 100% evenly, but close enough I don't bother rotating anything and the jerky comes out well.

Answer: No. That’s why the fan is in the back vs other cheaper dehydrators where the fan is at the bottom. If the fan is in the bottom, you would have to rotate trays to keep the bottom tray from over drying and the top tray from not drying enough.

My daughter wants an excalibur for doing fruits which would be the best to purchase?

Answer: We purchased the Excalibur 3948CDB 9-Tray Digital Food Dehydrator and have not been happier. We have only tried it on peaches and apples, but they have both turned out great! It was easy to use, easy to remove the dehydrated fruit, easy to clean. It seemed to evenly dry everything on all of the racks. She would be happy with this.

Answer: We like Excalibur 3948CDB 9 tray dehydrator. It has temperature settings, thermostat and timer. We love to dry pineapple, apples, oranges, grapes for raisins, and more. This model is more $$$ than others but worth it to us for the digital controls.

Answer: Not a tight fit on the one I bought - supposed to allow air to escape so it doesn't "steam" cook, but "dehydrate" contents.

Answer: No. A tight fit would hamper airflow which is important for the best performance.

Answer: The one I received and then quickly returned was not a tight fit. It just hung loosely and crooked on the front. It also collected so much humidity (in my very dry home) that it only spoiled food. I went back to my trusty Nesco dehydrators. They are much better and not disgustingly overpriced.

Not much I can say that others haven't already. This unit works great and makes some extremely consistent jerky. Temp control seems to be spot on and I have yet to turn out a bad batch of jerky or fruit leather. My wife even hung up some Armenian Sujuk (Churchkhela) in it and that came out perfect as well.

I'd buy this unit again in a heartbeat and I'm really glad I didn't go the cheaper route and get a less expensive round tray dehydrator. If you're new to this unit before playing with your own recipes try getting some premarinated Carne Asada from your local Sprouts or other store and putting it in there. I've put in 6lbs with room to spare and it came out great in about 5hrs.

This is my fifth dehydrator and by far the best one ever. You can fit a lot of food in it. The trays are square so you can rotate them easily. It is digital which is great. Easy to program. Duel programming and a short alarm goes off when the timer is finished. Cooks food pretty evenly. Come with two great books. It is worth the extra money to buy the digital versus the dial. I had a dial version and you can never be exact. Love it.

I'm having the time of my life using our new Excalibur.
I really am.
The clear viewing door is terrific.
It is loud but we have it in a spare back room.
I haven't dehydrated the onions or the garlic yet because everyone says NOT to do that inside of the house because it stinks that badly. LOL
I'm waiting for a couple of windless dry days before putting the Excalibur out on the screen porch. :)

I do have a pet peeve. :(
I was disappointed to discover that this more expensive digital model does NOT have the Drying Guide printed on the top like the manual models do.
Why not?!?

I don't know how I over looked this detail.
This small issue has proven to be very inconvenient because I have to keep referring to the cook book instead of glancing at a readily available printed label.
I suppose I'll have to copy a photo, print it out and tack it the wall as a quick reference. :(

Love how big it is and how much food it will handle at one time. Convenient timer lets you walk away and not run the risk of over-dehydration. Mesh dehydrating sheets on the racks are great, flex easily without breaking and cleaning is a snap. Motor is louder than I expected it to be though. Hard to find lipped trays for dehydrating liquids for Excalibur machines, so if you're putting together one-dish backpacking meals, you'll have to buy some off-brand trays to fit inside on the provided racks. Have already dried apples, summer squash, and tomatoes, with good results for all.

Very good dehydrator that does an excellent job. Our only complaint is that it is sometimes loud due to vibrations. Adjusting trays pulling them forward slightly and resting the door upon the trays usually helps to quiet the machine. Otherwise we are very pleased and happy with the purchase.

I like it so far.

Positive - works well. If you live in an area with elevated humidity, be patient as it takes a long time for fruit to dehydrate (9+ hours for bananas).

Negative - the user manual is poorly executed (e.g. look up banana in the index - it has 2 pages listed. Neither of those pages includes the dehydrating instructions.); it also would be helpful to include initial "get started" instructions in the beginning of the manual. Instead troubleshooting is located towards the beginning.

BaggyB : Perfect for jerky

This is a great dehydrator. I was deciding between various units to include a stainless model, glad I chose this one. It heats and keeps temp at 71c, perfect for jerky. The unit is very quiet and the digital timer is great. I can set it and not have to wait around, just come home to perfection. The airflow is balanced and cooks evenly. The square shape affords full use of the space and allows for maximum surface space for food. I put a Teflon sheet in the bottom too catch drips and the mesh cleans easily. I highly recommend this unit, it is a huge step up from my old circular model.

Just received this yesterday, and am not happy , the Screen Guard on one side top and bottom are broken loose, the motor knocks when shutting down, one tray was Shoved in side ways , so they laid the other on top.

I use this product to dehydrate sweet potato slices for my 3 dogs. They are a nutritious snack. The machine was delivered in a rain storm and the cardboard was soaked through. First batch: The lower 3 drying racks produced molded sweet potato slices after 15 hours of dehydrating. Obviously the machine was very wet and the heat exasperated the environment for mold. I, then, thoroughly cleaned the unit.
The next batch was a bit better but it still takes a long time and the shelves are very flimsy. I do not recommend this unit. It was expensive. I am researching how to return it.

This is the review I left on Excalibur’s website. Even though I bought it on Amazon, it’s Excalibur’s issue!
After trying a smaller, cheaper dehydrator we finally pulled the trigger and bought what we thought would be the Mother of all dehydrators. We spent hours carefully cutting up meats and sweet potatoes for our dogs. We got all 9 trays completely full and hit the start button. Seemed to be okay except my spouse noticed how quiet it was, which I found odd b/c there should be some fan noise. Well that's where the problem began! The fan didn't work. When I looked in the book it talks about taking pliers to the screen...blaming shipping. The Excalibur is not well shipped, that's it's first problem. Where is the foam? It's second problem is that it's ridiculously priced to be so cheaply put together. The fan motor was burning up and the fan wasn't turning, and yes it was caught on something. That screen doesn't really move and after further investigation, one of the corners wasn't even connected!!! The fan blades started to melt! This thing would have caught on fire if I hadn't checked it and we were about to walk out the door and walk the dogs. I can't understand how you can ask such a ridiculous price for something knowing it's made so poorly that you have to have instructions in your book for how to alter it.

So far so good! Easy to use and clean. Seems fairly quiet.
I'm new to dehydrating so looking forward to trying new things. So far I've dehydrated mushrooms, apples and bananas. I also tried making a fruit leather but left it on too long unattended. Will try again when I am able to keep an eye on it.

We really enjoy this dehydrator. It's easy to use and clean, the fan is powerful yet quiet, and it does an excellent job of drying fruits, vegetables, & meats. There is a useful book that comes with it that provides lots of valuable info and drying times and temps. We often load it up at night and let it run till morning. In the two years that we've had it we've probably used it more than fifty times. My favorite is dried apple slices that we store in one gallon mason jars. Much of what we make goes right into a heated mason jar. When it cools down the lid gets drawn down tightly and the dried product lasts a long time. Great product.

Phillip Sharp : Performs better than I expected

I have been using this unit with the digital temp and timer for over a week. I have made jerky, dried pineapple, jalapenos, tomato's and more. Performs better than I expected! I used a digital temp gage to see just how accurate the temps were. I understand there will be variables to humidity and unit placement, the temp seemed to be accurate to +/- 2 degrees at 95 degrees and at 165 seemed stable at 163 but would cycle down to 158 then back up to 163-165. I placed a non-stick dehydrator sheet on the bottom on the unit, made clean up of jerky drippings very quick and easy.

M C : Excalibur used to make a good product, but......

What I can tell you is that considering the criminal hi price, it's a VERY poor value. The door/window is WAY too thin and cheap and WILL break at some point when you drop it (and you will drop it at some point, maybe more than once) Excalibur used to make a good product, but they have CLEARLY lost their way, there are MUCH better values in a digital dehydrator out there. I returned this one.

1 tray came on top of the dehydrator and the other was wedge in and bent, we were able to pull it out but it’s permanently curved and unfortunately the return window ended yesterday. Really disappointed as I did a ton of research for this gift to my husband and it came damaged and cannot be returned.

I'm on the second unit. The first arrived cracked in the corner and now the second has a serious issue with the fan. I'd expect a lot more for a $270 food dehydrator.
