Ordinary dehydrators produce constant, unchanging heat, which can cause 'case hardening.' Ordinary dehydrators create a dry surface with moisture trapped inside – the perfect environment for yeast, mold and bacteria growth. With the Excalibur Hyperwave Fluctuation technology, the temperature fluctuates up and down to prevent this from happening. When the air temperature fluctuates up, the food's surface moisture evaporates; then, when the air temperature fluctuates down, the the inner moisture moves to the drier surface. This keeps the food temperature low enough to keep the enzymes active, but the air temperature gets high enough to dry food and overcome yeast, mold, and spoilage.
48 hour Digital Controller
Two Time, Two Temperature digital controller speeds up the drying process. After loading food onto the trays, set the dehydrator at a higher temperature for a specified period of time; and then set the dehydrator at a lower temperature for a specified period of time. The unit automatically adjusts after the 1st setting and turns off when the 2nd setting is complete.

Answer: I havent used it in a while, so i turned it on and let it run for a while. I dont think that its that loud. Especially if you have the front cover on. There is a very large fan in the back of the unit. I dont think it would bother you that much, but it all depends on the individual.

Answer: I don't know the voltages that it is available in, but I will say that my unit was packed so poorly that it was seriously damaged and non-functional upon delivery....and I'm in the U.S. I returned it immediately, and purchased another brand/model from a local store. If you order it from New Zealand I have no doubt that it would end up there in pieces.....the packaging is that bad (or should I say non-existent).

Answer: No. I use mine (9 tray model) to make jerky and it dries evenly - every tray, every side. Maybe not 100% evenly, but close enough I don't bother rotating anything and the jerky comes out well.
Answer: No. That’s why the fan is in the back vs other cheaper dehydrators where the fan is at the bottom. If the fan is in the bottom, you would have to rotate trays to keep the bottom tray from over drying and the top tray from not drying enough.

Love how big it is and how much food it will handle at one time. Convenient timer lets you walk away and not run the risk of over-dehydration. Mesh dehydrating sheets on the racks are great, flex easily without breaking and cleaning is a snap. Motor is louder than I expected it to be though. Hard to find lipped trays for dehydrating liquids for Excalibur machines, so if you're putting together one-dish backpacking meals, you'll have to buy some off-brand trays to fit inside on the provided racks. Have already dried apples, summer squash, and tomatoes, with good results for all.

When it arrived by amazon the box was opened but package was still wrapped. I opened it and set it up. I used it and noticed it’s not the right size for the door. I love this! I bought it to make been jerky and it does it great! Slice the meat thin. Throw it in at 65 c and 4 hours later, bam! Jerky. One thing I don't like is that it doesn't have a deg. Setting. Only Celsius. No biggie though. Cook a several pounds or jerky no prob.

This is a great dehydrator. I was deciding between various units to include a stainless model, glad I chose this one. It heats and keeps temp at 71c, perfect for jerky. The unit is very quiet and the digital timer is great. I can set it and not have to wait around, just come home to perfection. The airflow is balanced and cooks evenly. The square shape affords full use of the space and allows for maximum surface space for food. I put a Teflon sheet in the bottom too catch drips and the mesh cleans easily. I highly recommend this unit, it is a huge step up from my old circular model.

I've had this for almost a week now. So far, I dehydrated ginger and ground it up to powder and man, it smells so good. Nothing like having fresh ingredients! I will continue to do more. I've also made some home made dog treats out of thinly sliced chicken breast (chicken jerky), sliced sweet potatoes, my dog loves it. Not too mention lots of money saved! You also know exactly they are getting high quality ingredients for a fraction of the cost. Later, I will make my own beef jerky, fruit leathers, and dehydrating nuts to crisp it up and dried fruits. This is also a great model with a clear door that you could see into. Digital controls and it does comes with a small recipe book and preserve it naturally which has alot of information about the ;types of fruits and vegetables year round and the seasons; The humidity levels in certain areas of the world in general in seasons; recommended dehydrating temperatures for certain veggies and fruits. Which foods could be preserved; making jerky out of beef, venison, fish, game, etc etc.
Temperature and time are easy to control. Very basic display which is ok. What would be nice is if they were to have presets, custom settings ( to be stored and used in the future). Although not necessary, just saying. Also, clean is quite easy when you purchase dehydrating sheets and although with meats, it leaves like what looks like a dark stain. I hear, it doesn't do anything as long as you clean it well. I think this model is so worth it for all the different things it could do. Yes, it's quite expensive, it performs really well. I may update my review once I try other things with it.

I did read the reviews about the racks being disheveled and stuck in awkward positions. Mine were stuck but with little prodding and patients I freed them with no damage. It's perfect.

I use the dehydrator to dry sprouted wheat berries. Drys really fast. Haven't tried fruit or vegetables yet. Maybe down the road.

I love this! I bought it to make been jerky and it does it great! Slice the meat thin. Throw it in at 65 c and 4 hours later, bam! Jerky. One thing I don't like is that it doesn't have a deg. Setting. Only Celsius. No biggie though. Cook a several pounds or jerky no prob.

I make a lot of beef jerky and needed a dehydrator that would reach and maintain that magic 160 degree mark. The Excalibur does it with ease. It's well made and easy to program. I did, however, purchase the optional stainless steel racks for it as they will survive the hard use that they will get.

This is my fifth dehydrator and by far the best one ever. You can fit a lot of food in it. The trays are square so you can rotate them easily. It is digital which is great. Easy to program. Duel programming and a short alarm goes off when the timer is finished. Cooks food pretty evenly. Come with two great books. It is worth the extra money to buy the digital versus the dial. I had a dial version and you can never be exact. Love it.

I have been using this dehydrator for the last week making jerky and fruit and so far I would have to say ... this excalibur model dehydrator is pretty awesome. It's worth the cost ( not cheap ) in the long run. The digital aspects of the timer and temperature settings enables me to get very precise in making stuff. Also, the unit itself is easy to operate and seems very well made. I like the confidence from excalibur to extend a 10 year warranty ... just in case. Bottom line .... I'm very happy with my decision to buy this unit on several levels and my wife loves the results.

Just received this yesterday, and am not happy , the Screen Guard on one side top and bottom are broken loose, the motor knocks when shutting down, one tray was Shoved in side ways , so they laid the other on top.

Update: Amazon shipped another unit and I returned the defective one. The new one worked great from the start.
I should have listened and read the reviews that were posted. This product was dead on arrival fan work but no heat. Tried different temperatures. Tried unplugging. Remove the trays. I even had 9 full trays of fruit ready to go. That are now wasted. Called Amazon for support and they said that the support office of Excalibur is close all weekend and they won't call until Monday.

Crunchy Conservative : Excalibur compared to the Sedona
I submitted this review for the Sedona as well since I have owned both.
After endless hours of research comparing the Excalibur to the Sedona, I settled on the Sedona. I had purchased my Sedona a couple of years ago and liked it enough.... until it broke and I decided to try out an Excalibur.
At the time, the Excalibur models did not have a clear door option, a timer, or a dual-temperature setting option, however Excalibur now offers all three of these options.
I contacted Sedona and they sent me a replacement part for free, so I was able to swap out the part and get it working again. I had already decided I wanted to try the Excalibur, so this gave me the opportunity to test both of these side-by-side to see which one performed better.
The Sedona has rectangular trays. Now they will tell you it doesn't matter because there are TWO fans (two is better than one!) and they are located at the back (better circulation!), blah blah blah. Everything I ever dehydrated in there took at least 14-18 hours, and even then never really seemed completely dry. My dehydrated goodies would rehydrate in their storage containers by the next morning, and I was always afraid of mold. Every recipe I came across would say to dehydrate for X number of hours (in an Excalibur) but I would have to add 6-8 hours (or more!). Never quite understood why until I tried the Excalibur. Additionally, I always had to rotate the trays in the Sedona as it seemed the front never got as dry as the back (so much for two fans circulating better than one).
It's common practice to dry the first two hours at 145 degrees, though I usually set mine for 137 degrees in case there is a temperature fluctuation. On the Excalibur I was able to use the dual-setting for the first two hours at 137, then the rest of the time at 110. On the Sedona I just did this manually.
I performed a side-by-side dehydrated raw kale test, then a side-by-side dehydrated raw apple test. Initially I had set both dehydrators for the same amount of time because I was used to Sedona time. I was completely shocked when I checked on my stuff and it was already dry (COMPLETELY dry!) midway through the time. With the Sedona I had to rotate the trays (multiple times) to try to get it to dry evenly. With the Excalibur, I didn't need to rotate at all!
I actually prefer the plastic trays and drying sheets on the Sedona as they are much sturdier and easier to handle than the Excalibur trays/sheets. I didn’t think I was going to like the lift-off door of the Excalibur but I actually ended up preferring it to the Sedona door. With the lift-off door, you get complete access to the trays, without a door in the way. Also the beep on the Sedona is quite loud in the middle of the night whereas the Excalibur is considerably lower.
Bottom line: the Excalibur outperforms the Sedona, hands down. If you're buying a Sedona and have never had the pleasure of owning an Excalibur, you will probably love it (but only because you don't know what you're missing).

1 tray came on top of the dehydrator and the other was wedge in and bent, we were able to pull it out but it’s permanently curved and unfortunately the return window ended yesterday. Really disappointed as I did a ton of research for this gift to my husband and it came damaged and cannot be returned.

The dehydrator is not square this has two effects the door does not look squire (not even on each side) -door seals work, The dehydrator is not level one of the foot pads is just off. This does not effect operations and not enough to send back but you can feel a dehydrator move as you take door on and off

This unit will dehydrate a whole bunch of food at one time. At least it seems to be a whole bunch when you put it in there but much less when you take it out! It does make a bit of noise with its fan but you come to ignore that in no time so mine has stayed in the kitchen.

Very pleased with the Excalibur. It produces the best jerky I've ever tasted. After owning several vertical airflow dehydrators, I can attest to the superior results of the horizontal airflow design. Food dries evenly, and doesn't require rotating. The removable mesh screens make the trays very simple to clean, and fruit leather couldn't be easier with the ParaFlexx silicone sheets which are sold separately. Very happy with how simple and easy it is to use. Wish I'd bought one a long time ago.
