Ordinary dehydrators produce constant, unchanging heat, which can cause 'case hardening.' Ordinary dehydrators create a dry surface with moisture trapped inside – the perfect environment for yeast, mold and bacteria growth. With the Excalibur Hyperwave Fluctuation technology, the temperature fluctuates up and down to prevent this from happening. When the air temperature fluctuates up, the food's surface moisture evaporates; then, when the air temperature fluctuates down, the the inner moisture moves to the drier surface. This keeps the food temperature low enough to keep the enzymes active, but the air temperature gets high enough to dry food and overcome yeast, mold, and spoilage.
48 hour Digital Controller
Two Time, Two Temperature digital controller speeds up the drying process. After loading food onto the trays, set the dehydrator at a higher temperature for a specified period of time; and then set the dehydrator at a lower temperature for a specified period of time. The unit automatically adjusts after the 1st setting and turns off when the 2nd setting is complete.

Answer: I don't know the voltages that it is available in, but I will say that my unit was packed so poorly that it was seriously damaged and non-functional upon delivery....and I'm in the U.S. I returned it immediately, and purchased another brand/model from a local store. If you order it from New Zealand I have no doubt that it would end up there in pieces.....the packaging is that bad (or should I say non-existent).

Answer: No. I use mine (9 tray model) to make jerky and it dries evenly - every tray, every side. Maybe not 100% evenly, but close enough I don't bother rotating anything and the jerky comes out well.
Answer: No. That’s why the fan is in the back vs other cheaper dehydrators where the fan is at the bottom. If the fan is in the bottom, you would have to rotate trays to keep the bottom tray from over drying and the top tray from not drying enough.

I have been using this dehydrator for the last week making jerky and fruit and so far I would have to say ... this excalibur model dehydrator is pretty awesome. Update: Amazon shipped another unit and I returned the defective one. The new one worked great from the start.
I should have listened and read the reviews that were posted. This product was dead on arrival fan work but no heat. Tried different temperatures. Tried unplugging. Remove the trays. I even had 9 full trays of fruit ready to go. That are now wasted. Called Amazon for support and they said that the support office of Excalibur is close all weekend and they won't call until Monday.

Not much I can say that others haven't already. This unit works great and makes some extremely consistent jerky. Temp control seems to be spot on and I have yet to turn out a bad batch of jerky or fruit leather. My wife even hung up some Armenian Sujuk (Churchkhela) in it and that came out perfect as well.
I'd buy this unit again in a heartbeat and I'm really glad I didn't go the cheaper route and get a less expensive round tray dehydrator. If you're new to this unit before playing with your own recipes try getting some premarinated Carne Asada from your local Sprouts or other store and putting it in there. I've put in 6lbs with room to spare and it came out great in about 5hrs.

Gisele Olson : Small defect, first time struggles
Unfortunately I didn't get a chance to start using my new dehydrator until last week which was after the warranty for return. The only thing I noticed when it was unpacked is the trays were put in crooked. When we put the door on I noted a small crack in the black plastic where it attached to the clear window. I super glued it together so it would not get bigger. A little disappointing as it doesn't look brand new anymore.
The first thing I dehydrated was fresh parsley from my garden. It took a lot longer than the book as it recommended drying at the lowest temp to preserve nutrients. It took me several rounds of this as it wasn't getting dry and was not able to store until it got to the crumbly stage.
Talking to a friend she said it also took her very long also at lowest setting. I will dry off produce better in future and see if this helps. Also tried calling 800 number and couldn't get through to company. I will try again and see if I have better review to update.

The door fell apart (literally!) after less than one year. The plastic holding the window in place got brittle and the little pegs snapped, then the corner of the frame broke as well. Never abused or put in the dishwasher, it just fell apart. Also heats unevenly, you need to rotate the racks every couple hours or you'll have greatly varying results in your batch. Overall worked OK before the door broke, but for the price I expected a much better build quality.
edit: I am downgrading to one star. Excalibur finally responded to my warranty request after over a MONTH. Their response was 'clear doors are out of stock.' That's it. No offer of a different replacement door, no mention of when replacements might be available, no offer of a replacement machine, no nothing. This is garbage-tier customer service.

It dried the meat evenly and was not noisy and the time to dry was just about what it said. Size was also right for the kitchen counter (and not heavy) and did not take up much room. I like it and would recommend it.

I think this dehydrator is great. I love the fact that its digital so there is no more guess as to what the temp is. I think that if there is a downside to this dehydrator is that its rather loud. That is really a shame as it could be easily fixed with a clip on the front cover.

This is the review I left on Excalibur’s website. Even though I bought it on Amazon, it’s Excalibur’s issue!
After trying a smaller, cheaper dehydrator we finally pulled the trigger and bought what we thought would be the Mother of all dehydrators. We spent hours carefully cutting up meats and sweet potatoes for our dogs. We got all 9 trays completely full and hit the start button. Seemed to be okay except my spouse noticed how quiet it was, which I found odd b/c there should be some fan noise. Well that's where the problem began! The fan didn't work. When I looked in the book it talks about taking pliers to the screen...blaming shipping. The Excalibur is not well shipped, that's it's first problem. Where is the foam? It's second problem is that it's ridiculously priced to be so cheaply put together. The fan motor was burning up and the fan wasn't turning, and yes it was caught on something. That screen doesn't really move and after further investigation, one of the corners wasn't even connected!!! The fan blades started to melt! This thing would have caught on fire if I hadn't checked it and we were about to walk out the door and walk the dogs. I can't understand how you can ask such a ridiculous price for something knowing it's made so poorly that you have to have instructions in your book for how to alter it.

I use this product to dehydrate sweet potato slices for my 3 dogs. They are a nutritious snack. The machine was delivered in a rain storm and the cardboard was soaked through. First batch: The lower 3 drying racks produced molded sweet potato slices after 15 hours of dehydrating. Obviously the machine was very wet and the heat exasperated the environment for mold. I, then, thoroughly cleaned the unit.
The next batch was a bit better but it still takes a long time and the shelves are very flimsy. I do not recommend this unit. It was expensive. I am researching how to return it.

We purchased this for an over abundance of peaches from our tree and too many still frozen in the freezer. It took about 14 hours to dry 1/8" slices and about 16 hours to dry 1/4" slices. Apples will be next.

So far so good! Easy to use and clean. Seems fairly quiet.
I'm new to dehydrating so looking forward to trying new things. So far I've dehydrated mushrooms, apples and bananas. I also tried making a fruit leather but left it on too long unattended. Will try again when I am able to keep an eye on it.

I bought this for my dogs. I use it to make chicken jerky dog treats. It works great. It's very easy to use, and very easy to clean. The dogs love the treats, and I'm confident in the ingredients I've giving them. We've also used it to make Blueberry Leathers, dehydrated pineapple rings, beef jerky for human consumption. This was a great purchase.

Very good dehydrator that does an excellent job. Our only complaint is that it is sometimes loud due to vibrations. Adjusting trays pulling them forward slightly and resting the door upon the trays usually helps to quiet the machine. Otherwise we are very pleased and happy with the purchase.

Love this dehydrator! The controller drops rating a bit because I have to fiddle too much with it, & too often: The timer advances too fast so I am forever going back & forth, trying to get it to where I want it, plus I cannot pause my two stage, pre-programmed times and so must always reset & restart, which means once again overshooting numbers back and forth plus needing to remember where it left off when I had to stop it...minor annoyances. Bought it directly from the Excalibur factory after a damaged one arrived from a seller through Amazon. That refund was a mess, but did come through eventually, but they would not refund until they received the damaged one AND they would not begin replacing the damaged unit until after all of that occurred. That was a major boo and sent me to factory direct purchasing. Great folks, Excalibur.

Positive - works well. If you live in an area with elevated humidity, be patient as it takes a long time for fruit to dehydrate (9+ hours for bananas).
Negative - the user manual is poorly executed (e.g. look up banana in the index - it has 2 pages listed. Neither of those pages includes the dehydrating instructions.); it also would be helpful to include initial "get started" instructions in the beginning of the manual. Instead troubleshooting is located towards the beginning.
Josy : Can't get any support when the dehydrator stops working! I've only used it three months.
I've used the dehydrator to dry produce from my garden. It works really well - when it's working. Two days ago when I set the temperature and time, the unit beeped at me, but didn't start. A fan icon showed up, but the manual says nothing about what to do if this happens. I bought the unit in early February this year (2020). I expected it to last longer than this after paying $357.76 for it. I didn't use it at all until the middle of June. I've called the company and emailed them. The phone call message I've gotten for three days is "All circuits are busy. Please try your call later." I received a generic email saying they had received my email and would get back to me. But they have not yet. Amazon's return policy ended before I ever used the machine. Their support apparently ended about a month ago. Now my garden is loaded with ripe produce. This morning I dug out my old American Harvest dehydrators that I paid $10 apiece for. They don't work as well as the Excalibur, but at least they work! When my husband emailed, the reply he got was "Where did you buy this unit?" I wish we had watched the youtube video titled "Why I will never buy an Excalibur Dehydrator".
