how flexible is the blade?

Answer: To me it seems perfect. Just the right amount of flex to make skinning, or removing the fillet easy. Yet stiff enough you can remove Y bones or cut with it. With this knife I don't feel I need 2 or 3 different ones in order to clean fish.

Is the cutting blade 8" long or is the entire knife length 8"?

Answer: The blade is 8 inches long

Answer: I'm not sure, but I would consider looking at other brands. I can't get this one to keep an edge.

Answer: I believe all fillet knives are double sided, it’s so you can cut fillets in either direction.

Answer: No. This knife is useless not even sharp enough to cut jello.

Answer: Well it’s a knife so you can use it on whatever you want to, so it’s specifically designed for filling meat. Doesn’t matter what cut of meat, Should work on any.

BYS : Beware of sharp back edge

Description said nothing about the back edge being also sharp! Until this knife, I didn't realize how close my fingers were behind the knife when filleting fish. This is so dangerous!
