J G : The "Go-To" Knife For The Hard Ones
As an amateur oyster gatherer and shucker on the TX Gulf Coast, this is the knife I always have on the table for the hard ones, the ones that just won't give up. It is a bit too wide, short and thick to be my main knife, but it is ABSOLUTELY essential for the hard ones. It will take all the torque you can give it.
Evgeny Shubin : Good but would pay $30 for a better metal quality = sharper blade
Bought this and for a try. Tried both with Giant Oysters only (if I'm successful to upload picture reviews, these should appear right below the "original" product images on the product page).
The cutting blade of the Messermeister product is probably two times thinner than of the Cuisinart product. Still, my friend and I found the former one still too thick to open even Giant Oysters.
I appreciate the previous positive reviews on this product. Probably the positive experience of some with "common" (ie smaller size) oysters was because the Giant Oysters' shell edge is more curvy (will try to upload the pics), whereas the "common" shell's edge is more like straight. So, you cannot insert a blade between the two part of a Giant shell so easily as you can do with "common" size oysters. Again, I only tried both products with Giant Oysters and these are my assumptions only, which may or may not fit the reality (any helpful comments are welcome).
With "fresh catch" Giant Oysters, the Messermeister product worked OK probably 30-40% of times. Important: if you can put shells in the oven (if at home) or on a fire (if in the country) - just for 3-5 mins, - they open themselves slightly. For us, the "oven" procedure improved the effectiveness of the Messermeister knife to maybe 90%. Maybe one shell out of ten would not open (at the ~60C temperature or even higher - ?), probably it means that it's "dead" for long and you shouldn't try it). Yeah - the conspiracy theory)
For the Cuisinart product, the effectiveness with "fresh catch" was lower (for it's double-thickness blade). Maybe we got success with 1 of 5 (or 20%) or 1 of 4 (25%). As we didn't find the Cuisinart product effective originally (before the oven), we didn't try it thereafter. But having seen how shells open themselves a little after the oven exercise, this should be enough for any cutlery to reach the same success rate as the Messermeister one. Probably after the "oven" exercise you even dont' need any special oyster knife - a regular kitchen knife would be enough.
Here we come to kitchen knives (my friends even tried hunting knives with Giant Oysters). The conclusion is that unless you do the "oven" exercise (see above), the blades can (or likely will -- in the case of kitchen knives) get damaged (even with brands like Gipfel).
The other choice that my friends tried is a flat screwdriver. They tried it rather by a chance, in the countryside with no alternative available. But they found screwdrivers pretty effective, probably the most effective out of the reviewed "special" oyster knives or out of the cutlery/hunting knives. But I wouldn't try these for the hygiene concerns. Guess even if straight from the shop, a screwdriver is not designed to be used with food products. A kitchen/hunting knife can - but again, the concerns are after damaging the blade (as said above).
In the nutshell, I believe that any shell-opening product must be more robust than even the best kitchen knife. This can materialise either in the thickness of the blade or in the steel quality.
I did some review on Amazon. As I've not seen anything more solid at a cheaper price than the reviewed Messermeister product, it give it 5 stars. For now. If I see anything better, I'll update my review.
Not ready to pay $16 (as of 5 Oct '13)? -yes- consider a screwdriver alternative as discussed above)).
Erik : Fantastic Oyster Shucker
The blade and handle are strong giving you the confidence to dig in on those stubborn oysters. I've been quite pleased with this purchase.
Mary Hall-Ries : Best oyster knife!
After impaling myself with several inferior oyster knives, I imagined what qualities a truly perfect oyster knife would have.
Bingo! This knife has it all: a long handle with secure grip, an un-bendable super-sturdy blade, a shield so that the knife can't slip into the shell past a certain point. Perfect! Also get the Kevlar glove and you can be enjoying fresh oysters anytime you're in the mood!
ethan hunt : Three Stars
Hurt your hand like a B!
