Answer: It has a 26 hour timer. So you can turn it on, and have it go off somewhere between 1 and 26 hours later. It does not have the ability to go for an hour, shut off, and then automatically start up again

Nice, large racks. Works very well and is somewhat easy to clean. It is large and bulky so be prepared to give up lots of counter space. Needs lots of room for storage...
Amazon Customer : VERY EXPENSIVE, CHEAP AND NOT USABLE AS IS
I have used food dehydrators for years. Because this unit is SO VERY expensive, I am giving this the lowest rating possible since it is immediately lacking. The manufacturer chose to include only eight removable plastic grids for the nine shelves available. That, of course, means all nine shelves are not usable for onion dehydration. Nine teflon sheets are included so I know somebody can count. Only eight plastic grids allowing strong air flow were included.
I know people make mistakes, but this thing cost enough I should have an extra shelf insert not be shorted one! Certainly shorting parts makes the glaring cheapness of this unit all the more painful (plastic casing, plastic shelves).
I unrolled the teflon sheets to use one on the ninth shelf. The outermost teflon sheet has been damaged and has a hole in it.
Pictures of the purchase do not adequately show the extreme closeness of the shelves one on top of each other. My previous food dehydrators had more space between shelves and this aspect of the design is also disturbingly cheap. I predict negative food dehydration consequences but we will see.
My son tells me Alton Brown of the Food Channel has an episode about food dehydration in which Brown describes how to make a food dehydrator. My son thinks I was crazy to buy this unit. I have to agree with my son; I think so too. I will try to get the company to send me a shelf insert so I can use the nine shelves.
I do not recommend anybody else purchase this unit.

Got it and right away filled it with strawberries and nectarines. Everything worked as it should. Woke up the next morning to all my fruit dried perfectly. It is made by Excalibur. Old school manual set dial knobs that I perfer.

We love to dry & smoke foods, and I got this for my husband to give him an option over manually smoking & drying foods. Anyway... the physical review: it's bulky, but you can't get around it.It's big. There is a hum like a microwave running and though others may say it's a negative...I found it didn't bother us. It's the largest dehydrator I've seen that isn't a "commercial" dehydrator. It's awesome for big families like mine (family of 10 here) - It's white, has 9 trays, but no drip tray. The door cover may throw you as it is not attached like a door and seems to just "sit" there...I was worried at first about how this cover would work, but it does. Know ahead of time where you will want to store it because it IS a box. I found it's not hard to clean and with really drippy stuff, I used the bottom tray with one of the silpat sheets I use for fruit leathers. (yes, you lose a cooking tray, but totally worth the cleanup time) Just know that the trays & sheets must be hand washed. It has a timer (which is AWESOME) that makes it easy to set and leave it. No tending to it...turning trays, etc. We did add liquid smoke to get that smokey taste in the jerky we made, but then my hubby got the idea to smoke the jerky for an hour in the smoker then finish in the dehydrator to get a better smokey flavor.(still saved lots of time & monitoring) Everything that came out of it was perfect. We've done fruit and meat. It made perfect deer jerky, fruit leathers, dried fruit & beef sticks. This was so easy that even my 7yr old was able to use it with my help. He loved helping me set the tray with grapes & they came out raisins! :) It cut drying food time in half for us and the set it and leave feature is a bonus. Trays are plastic and the only concern I have is if one of them "breaks" while being handled or washed...I haven't found replacements yet. But that hasn't stopped me from giving this 5 stars. If you are looking for an easy start to dehydrating... making your own fruit roll ups...your own beef sticks or jerky... your own organic dried fruits & veggies... this is the machine you want. Omega hit a home run with this one. They have an instruction manual and it came with some recipes to try. There are a number of recipes you can find online too that are specifically for dehydrators. My kids love what comes out of this dehydrator and it's become a new favorite for making snackable foods for my kids. And if you are a smoker or dehydrator the old fashioned way...there is a slight learning curve...you will find this is so easy that you feel like ya forgot to do something...but you didn't! :) It can sit on your counter top and I can't stress enough the ease of using this. Overall, this is a great product and worth the purchase, especially if you enjoy dried foods.

I have never had a dehydrator and this one was very easy to use. I haven't done anything except figs in it, but they came out great. It puts off a lot of heat in the room, so we set it in our washroom off the porch to run. Still have a lot to learn, but it seems like this one is a keeper.

Excellent Dehydrator

I bought this after seeing a friend's Excalibur in action. Since I live in a town that used to be known for fruit production (and luckily, I have several mature trees in my yard!) I knew I needed one of these 9-tray dehydrators.
Now, I'm not completely certain that I understand the difference between this dehydrator and the 3900B and 3900W, but I do know that it is awesome - I have tried drying everything from blackberries (didn't do well, took a lot of time and came out kind of tasteless), blueberries (awesome), bananas (just ok, basically because bananas in the US are not that awesome, unless you're in Hawaii), lemons (great! and make an awesome gift!), persimmons (amazing), and figs (amazing).
I bought it because I want to preserve my summer bounty from being short but sweet. I'm sure there are health benefits too - yay, for not worrying that some chemical is being added to dried fruit!

I have just started using a dehydrator, but I have to say, as far as kitchen appliances go, this is my new favorite.
Pros:
Compact size for as much square footage of dehydrating space as it contains
Large number of trays for drying means more food can be in dehydrator at once
As far as dehydrators go, not nearly as loud as I would expect or as most dehydrators are
Trays are easy to remove and replace in dehydrator
Easy to clean
Timer and Temperature dials are clearly marked and easy to read
Cons
The instruction manual is oddly written, suggested drying times are markedly off.
You need to do your own research regarding drying times and methods for many foods, as the manual does not cover a lot of them.
So, in summary, the machine itself is wonderful, the manual is terrible. Do your own research on how long to dehydrate your different foods, and experiment. If it were not for the manual, this would be a 5 star item.

I love it and I'm glad that I went this, as it is an investment for your health. I'm a raw foodie and a gardener and this dehydrator has and will get a lot of use.
** NOTE: Do not purchase the additional non-stick sheets. Mine came with a complete set already cut to fit the tray. It makes no sense why that is not included in the description. I bought the extra set, and lost 1/2 the cost with shipping them back to Amazon. Waste! Anyways...
** I have the Nesco round dehydrator with the additional trays that I've used for years. It does the job, but a pain as I have to rotate the trays as the bottom ones just don't get enough to dry properly and this always increases the drying times by several hours. I could never quite get the raw breads to come out very nice because you have to pre-make little squares because there is a hole in the middle of round tray. NOW I can finally spread the mixes across a square tray to get consistent sizes. It's much quicker and easier.
** It hold a lot and dehydrates evenly through all 9 trays. You do not need to rotate anything.
** The noise level is not a problem to me, it's no noisier than my Nesco.
** I have a friend with kids in college, who tend to be very busy and of course sometimes make quick food choices, like easy Ramen noodle soup. Well before getting them back to school this year, I dehydrated red bell peppers, shredded cabbage, peas, corn, parsley, hot peppers, and carrots and put them in a large plastic bins with a food grade oxygen absorber. Told them to throw some veggies into that bowl of soup while it's hot and they will rehydrate. No extra salt, just veg!
My garden is coming into prime harvest, so I'm sure I will put away other dehydrated veggies and fruit for the winter and cut down on ridiculous grocery store prices, whilst maintaining the integrity and vitality of vine ripened, organic, freshness from my own yard :)
NOTE: I will mention an irritation for me...when I purchased this, it was $198 and the equivalent Excalibur was close to $400 still - hence my choice. Since, then the Excalibur has dropped to $225 and the Omega has gone up to $250. So, the competition is now on! Why Excalibur? Anyways, that's my gripe...
