Dave Edmiston : Decent Smoke Tube

I've been using a different brand smoke tube (https://www.amazon.com/gp/product/B01DL0PETC) for about a year and love it enough that I gave out a few as Christmas presents recently. This one caught my eye because it costs about half of my go-to smoke tube, so I decided to check it out as an alternative.

First impressions:

* No instructions. The Amazon product page has some good info for buyers, but that doesn't really help the recipient of a gift.

* Useless brush. The beauty of the smoke tube is that the spent pellets burn down to a fine silt that you can literally shake over your yard like pixie dust. There is no need to brush out the tube.

Other than the lake of instructions and the weird brush (and I dare you not to lose the brush!), this is a good cold-smoking tube. It's no easier or harder to light than the name-brand competitor and it stays lit and emits smoke as you would expect. It's a winner.

As far as uses go, you really need to be mindful of food safety when you cold smoke. If you cold smoke meats (salmon, sausage, etc.) then you should research curing salts to combat the bacteria that thrive in that cooler "danger zone". The easiest and yummiest thing I cold smoke is cheese. You can buy cheap low-quality cheese in large quantities and cut it down to 2"x2" long blocks. Cutting it into smaller blocks like that creates more surface area and provides more smoke flavor. Put the chilled cheese onto the grill with the smoke tube and smoke it for about two hours. You need to make sure the ambient temps are low, so do it in the cool morning or evening if it's going to be warm out. Rotate the blocks around the grill or else the ones closest to the smoke tube will get too melty. When it's done, pack it in vacuum seal packs and write the date on the packs. Wait at least two weeks before consuming, because the flavor needs to mellow--it will be too smoky otherwise.

dallase : Handy for cold smoking cheese

This fits perfect in my new Masterbuilt charcoal smoker, and lets me add some wood smoke to the meat.

Just soak your wood in water, or bourbon, or whatever liquid you prefer and then put them in this tube and set smoker to at least 225 degrees which is needed to boil water, a bit higher if using alcohol.

For cold smoking, you nees to use a butane torch to get your chips or pellets started. This is good for doing cheese without cooking it.
