Answer: It definitely uses a vacuum process to take air out of the bag. The two things I would recommend are making sure that food to be sealed is well-drained or patted dry - if there's too much water, it will pull that excess moisture up and out, preventing the seal - and making sure that the little locks on either side are engaged before sealing. I would also recommend reading the instructions for more tips, but yes, this is a fine vacuum-deal device at the price. You'd really have to pay at least $200-$300 for something better.

Answer: I bought my sealer last year in the fall, I just wrote Hamilton Beach to say that it’s not vacuum sealing at all anymore. I haven’t heard back so I bought a different sealer from Walmart. I don’t know why it’s not sealing, It was working very well and then all of a sudden it stopped. I will say my brother-in-law has the same exact sealer and he has no problems at all and he uses his more than I use mine. Go figure it’s a coin toss.

I confess I was intimidated by this machine at first. I really have no idea why but I was! Maybe the name is too long and scary or something? However, now that she (yes, her name is Harriet) and I are friends, I am delighted to have her help in my kitchen!! All I need to do are a few basic steps in preparation and she takes over to finish the task like the total pro that she is. Today, I had two one pound packs of ground turkey fresh from the store. We weren't going to eat ground turkey until next week, but it was on sale today. So, I took the appropriate sized bag for two pounds of ground meat and emptied both packs into it, then I opened Harriet's lid and placed the top of the bag between her guides, closed the lid, locked the Lid Lock down on each end (that is important) and pushed the Vacuum and Seal button. That's it! She vacuumed all the air out and then sealed the bag airtight. Harriet will also reseal your potato chip bags and other snack bags as well as your cereal bags! I now have more room in my freezer and have said goodbye to freezer-burned meat! I highly recommend you get your own Harriet!

I was really excited to start using this vacuum sealer until I tried to actually use it the first time. The way you have to close the lid down and press the tabs in on both sides is a huge PITA.
As far as how well it seals; I have have used it to seal a few different food items and even with a juice filled salmon fillet, it manages to suck the air out so quickly that juice does not have time to make it to the inside of the machine. That was an issue I was constantly fighting with my last one. It also seals the first time, every time. In fact, I haven't had to use the individual seal button, or put it in extended mode.
The sealer loses a star because of the odd two handed operation, but still manages a respectable 4 stars and my recommendation because of how well of a job it does at sealing foods.

It was sort of a pain to use and didn't always have the best results. Fast forward to more modern technology and this Hamilton Beach sealer and I am in love.
It is so much easier to use and has so many settings, so you can sort of customise how you seal, depending on what you're sealing.
It is quieter than my older model, works faster, provides a much better sealed edge without burning holes through the plastic, and takes up less space due to its sleeker shape and size.
I stock up on meats when there's good sales and would go through freezer bags like crazy because a lot of times I would double bag stuff for better protection, especially if it was stuff I figured we wouldn't use relatively soon. If I buy 30lbs of chicken one week, were obviously not using that up in a month so I need it to be able to withstand being frozen for quite a while. The next week I might get 20lbs of porterhouse and so on, so some stuff is in the freezer for months.
When you vacuum seal and get all the air out, you don't get freezer burn nearly as quick or at all in most cases. The plastic for this is thick enough that I feel like the meats and foods are protected adequately to withstand the long periods of time in the freezer.

The 78220 is my first vacuum sealer. It has met or exceeded my expectations for a mid-level sealer. It is very easy to use, but be sure to read the directions thoroughly before diving in. Two things to note -- 1) seal bags with the textured side down and 2) slightly freeze or thoroughly drain meats and foods with sauce before sealing, otherwise the 78220 may suck the liquid from the bag when vacuuming. Another tip is to seal in a bag with a lot of space. That helps keep liquids from draining during the process.
The Hamilton Beach NutriFresh Vacuum Sealer does the job and I've not encountered any of the issues that some other reviewers have noted. Hopefully they don't crop up over time and it remains a solid addition to the kitchen. It can be used to create a watertight and mostly airless seal for other items as well - great if you are traveling or want to safeguard precious documents and the like. For items to be frozen, it works like a charm. I look forward to buying in bulk and saving over the long term with the NutriFresh Sealer.

I am a make-ahead meal devotee rarely making just one batch of anything that can be frozen for a future meal and I can do that with no deterioration of quality by using a vacuum sealer. I also use it for sous vide cooking and large pieces of cheese that I cut into manageable piece and they stay fresh for a very long time in the refrigerator.
The one I’ve been using for at least 7 years is the most popular brand and its original cost was approximately an additional 2/3 so whether the extra features are a necessity is up to the user because this model seals well. And although my old machine has been a workhorse it is old and performance is starting to lag.
As I mentioned there are some differences between the two units for example the Hamilton Beach has no on-board storage for a roll of bag making material and there is no built-in bag cutter which may seem like a small thing but having it saves time and creates a perfectly straight cut which isn’t easy to do by hand with a pair of scissors.
Also, the lid must be pressed down until it locks—something my old unit does automatically after a bag is in place. This model releases the lock as soon as it finishes sealing. A couple of important instructions to follow--allow 20 seconds between uses for the heat tape to cool or risk a poor seal. Moisture should not be allowed to enter the vacuum chamber—something that is easy to do if sealing moist items so it is best to freeze before sealing.
Operation involves first selecting the option for Normal Seal for dry ingredients and Extended Seal for moist. Buttons for specific functions are Seal Only for bag making, Vacuum Only/Accessory which is to be used with attached external accessories—none are included with this model. Other buttons are the main function--Vacuum and Seal—along with Cancel.
Included is an 11 inch by 20 foot roll, four gallon and six quart size heat seal pre-made bags and the BPA-free material is of comparable quality to the other brand. It is important that the unit works with foodsaver supplies because they are easy to locate in most stores. The included user guide is well-written and easy to follow. The two-prong power cord is 60 inches in length. The vacuum sealer works well and is a good fit for occasional users.

After receiving the vacuum sealer, I put off using it for a couple of days because I had never used one and didn't know what to expect. WELL! The day I decided to finally use it......my, my! Why did I wait? This is SOOOO easy! The instructions are well written, easy to follow. I sealed three packages of beef patties I had made and frozen a couple of days before, in addition to six servings of chicken breasts (not frozen) that I had in marinade. Took less than 30 minutes. That included reading the instructions!

Now, even if you are a single person, you can buy in bulk, because the excess can be sealed into individual packages for smaller meals. I like that you can even freeze and then seal liquids into individual serving sizes or you can store a pot of soup in the freezer-without the pot! I make my own "T.V. dinners!" It is absolutely great for moms who want to make their own baby food and even pet owners who would like to store some of their leftovers to share with their pets at a later time. Being a little bit fed up with disappointing and off-tasting food, I came to realize that the butcher meat that was wraped in plastic and then paper at the store, or in a ziploc by me after I got it home, was prone to freezer burn - but the game my brother gifted us that was vacuum sealed had no such issues. So happy to have an economical way to preserve my frozen foods! Now my 3 chest freezers and 2 fridge-freezers make sense.
This is super easy to use, and the bags come in long rolls of varying sizes you can personalize to the use. Very happy with this!

I have always thought this might be good to have around for left overs or when buying food from Costco which usually comes in large quantities. Ham is a good example. I was surprised how easy this sealer was to use. I don't have experience with any other. Wow, it has simple, easy to follow instructions. I sealed my left over Costco chicken in no time. There is a learning curve in using this appliance. For example, we froze 14 bags of blanched green beans. At first I tried to flatten the product in the bag to promote faster freezing, but any remaining moister would be vacuumed out and water pooling inside the machine thereby not sealing properly. When we left the beans lumped in the bottom of the bag it worked fine.

I was super excited to get to try this Vacuum Sealer out. It made sense financially to switch to this vs. always having to buy freezer bags. I made sure to read all the instructions first and made sure no cardboard was stuck anywhere prior to turning it on. I made the mistake of starting with wet, marinated chicken, so I didn’t get as right of a seal as I had hoped for and the liquid did get sucked out a bit creating quite the mess even after following the instructions. It worked great on non-marinated meats..but the other still gives me trouble here and there. It still has come in handy, has saved us money and has even saved us a lot of space in the freezer by being able to seal so tightly and flat. It’s still worth it over freezer bags in my opinion, especially if you go through a lot of meat.

For those who spend a lot of time in food preparation a vacuum sealer is a great appliance to have. I've been using a less expensive model for several years for saving leftovers, preparing food for sous vide cooking, and preserving bulk purchased food. When there's a sale on (say) blueberries, chicken thighs, or tilapia, I can purchase a large amount and then seal smaller portions in my freezer for later use without them drying out and developing freezer burn. It's good for sealing dry ingredients, too; grains are less likely to absorb moisture and spoil when vacuum sealed. That's very handy if you live in a humid climate. And even if you don't have a circulating heater fir sous vide, you can make up portions that can be tossed in a pot of boiling water for a quick meal.
One thing I particularly like about this unit, compared to my old one, is that it has multiple settings for the amount of vacuum and the amount of heat. That solves a problem I had with my old machine, which had difficulty getting a solid vacuum seal with wet foods; sometimes I had to make two or even three attempts to get a good seal. Another nice feature is that it can make bags from a continuous roll stored inside the machine. That cuts down on waste and obviates the need to keep several different sizes of bags on hand. It also means I don't have to go looking for bags; they're right there, in the machine.
My previous sealer lasted about six years of occasional use- a few times a month- before it started to show signs of trouble: leaking air, not being able to pull a good vacuum, and not always getting a good seal. This unit is similarly constructed, but with wider sealing gaskets and seems to have a stronger vacuum pump, and so I'm hoping I'll get longer service out of it. But if you plan on giving yours a lot of use, you might want to step up to a heavier duty sealer in the $150-200 range.

It's also bigger. The Amazon descriptions give the dimensions of the boxes, not the vacuum sealers themselves. This one is actually:
15" wide 8-1/8" deep a bit over 3-1/2" high
That's almost an inch wider and almost two inches deeper than the base model.
The extra controls are nice, though I can get by with the usual manual controls: vacuum and seal, seal, pulse and cancel. Similarly, the roll holder and cutter are also nice, but I can manage fine without them. (You have to wait 20 seconds between bags anyway, plenty to cut the next one no matter how you do it.)
The accessory port, on the other hand, is a definite plus if you want to do containers other than bags. But you have to buy the needed accessories.
I can't tell that there's any difference in power, but this one is rated at 110 watts, vs 100 for the base model.
This has a DC-in port, but the instructions only say there's no adapter available with this model.
The 20-foot size is about as large as you can fit inside the roll compartment inside the machine.
The cord reaches 47" from back, a few more from the side.
1-year warranty in the US (5 years in Canada).

This Hamilton Beach NutriFresh Vacuum Sealer Machine has ended up getting used WAY more than I thought I would have needed it. I've always wanted to get a decent vacuum sealer, but I had an old one that was a little tricky and weird to operate, for some reason - and I guess I assumed all of them would be that way. Thankfully, this one proved me wrong.
This is SUPER easy to operate with the press of a button, and it really works well to remove air quickly and seal your food. They make it so simple now that it really takes no more time than getting out a baggie - and it's way better and preserves so much longer than using that, too.
This includes some BPA free sealing bags to get you started, but if you are looking to purchase this, just note that those bags will not last very long - you may want to go ahead and get extras right off the bat so you don't run out. I thought I would just wind up using this here and there, but once I used it once, I started using it on tons of stuff - and it truly works great to keep your food sealed and fresh, especially if you're freezing things.
I'm really pleased with the quality of this machine and the overall simplicity of it. There's nothing complicated about it at all, and it works fast! I'm super happy with it and have been finding more and more uses for it the more I go through my pantry, fridge, and freezers. It certainly gets two thumbs up from this household!
