Hand crafted full tang knives forged from fine grained, Swedish Sandvik 14C28N Steel for incredible durability, stain resistance and exceptional edge retention. USPTO Patented Design.
Each blade goes through an (ultra6) stage heat treatment ensuring every blade maintains it's strength and function. Holds an edge up to 5 times longer than German Steel.
Well balanced 5.5" handle and 7" flexible blade with HRC 59 +/- 2 on the Rockwell Hardness Scale. Includes a quality leather sheath fitted to the blade and handle so you can enjoy exceptional performance wherever you roam.
This fillet knives long, curved blade, allows for slices smoothly along the backbone of fish and under the skin. The thin, flexible design ensures precision cutting and a tapered tip lets you easily separate meat from bone.
NSF International Certified. Lifetime Warranty against manufacturer defects. Wash knives with warm water and a little detergent, rinse carefully and dry with a towel.

How we got our start?

In 2015, after two years of research, development, samples, molds, and hundreds of hours of design, ideas became products and Cangshan Cutlery was born. The Cangshan logo was handwritten by Henry’s dad and his values and vision, passed down to his son, are the real spirit of everything we do.

The TS Series contrasts its sleek and slim silhouette with boldly angled lines and smooth curves. This refined update to a traditional knife is done exceptionally well to form a tool a chef can trust. The patented design knife focuses on an ergonomic handle that is easy and comfortable to grip. Each knife is well balanced, and seamlessly crafted allowing for heavy kitchen use and easy clean up.

Premier Materials

This knife features Swedish Sandvik 14C28N Steel for a long lasting and durable product. Swedish Steel offers a mix of incredible hardness and durability with the ability to reach a hardness rating of 59 ±2 on the Rockwell Hardness Rating Scale. These steels maintain their sharp edge up to 5 times longer than German X50CrMoV15 Steel. That means a knife that stays sharper, longer.

Every blade goes through our precise ULTRA6 heat treatment which brings out the best qualities of each steel allowing the blade to take a remarkably sharp edge. I bought the block set of this knife and I am completely happy with it (contains the butcher, stake, pare, sheers, boner, and sharpener). So I bought the fillet knife because of the look and the length of time the blades maintain their sharpness. Love the Swedish Steel.

Geralt : Sharp and flexible blade.

This is a wonderfully crafted and balanced fillet knife that has impressed me. The knife is sharp and fully flexible giving you a close edge to the bone, it is perfect for filleting fish and with practice, you will be able to reduce wastage too. As I mentioned earlier knife has a nice balance to it, the handle is evenly weighted so when you cut into the flesh you have full control as well as weight to reduce the amount of strength you need to put in.
This blade from Cangshan looks beautiful and it comes in a nice “sheath” to protect the sharpness of the blade as well as you.
A good investment if you need to fillet meat of the bone regularly.

Really high quality fillet knife.

I'm using this to slice my salmon fillets away from the skin and this knife made it really easy with the knife shape.

The knife is really sharp and the high alloy Swedish Sandvik 14C28N steel is top quality.

Also comes with a leather pouch which you can put away when not using.

The handle is high quality and pretty comfy to hold.

The blade is really sharp and gives a nice cut finish.
