Answer: Not really. The Smoky Mountain Series is really intended for “low and slow” cooking. You CAN crank-up the heat by opening the bottom vents and omitting the Water Pan, (supposed to work great for Prime Rib, gets it off the flames). For Grilling, I’d pick up a used Weber Kettle to go with it.

I was a little skeptical when I read all of the other great reviews for this product. I mean, how good could it be? It seemed kind of gimmicky to me. However, the thought of barbecue and all of the great reviews finally won me over and I took the plunge and bought it. Boy, am I glad that I did!
The Weber Smokey Mountain produces delicious, restaurant quality barbecue! So far I have cooked chicken, turkey, baby back ribs, and spare ribs. All have come out excellent - nice and tender with the right amount of smokey flavor.
The Smokey Mountain is very well made, assembles quickly with minimal tools, and it works great. It has a nice durable finish, and it comes with a nice cover. Plus, there are several websites dedicated to its use. If you like barbecue, you owe it to yourself to get one of these.

I had a Charbroil smoker for 4 years before my wife bought me the Weber smoker. The longest I could go with the Charbroil was about an hour before I had to mess with the coals, open the door, etc and was becoming a hassle to cook things for a long period of time. It is extremely difficult to keep heat regulated in it. That being said I did cook some great food on it. The first time I used my Weber smoker it kept a consistent temperature for 5.5 hours straight. I did turn the vents a couple of times to reduce or increase the heat but now that I know what to do I've gotten better at keeping things steady and letting it go. Turning those vents even a little bit makes the heat rise or fall a lot so be careful! The last time I spent the afternoon swimming for 2.5 hours, came home and it was still fine.

I bought this smoker on the advice of my Nephew, Chad, who owns one. Construction is typically "weber"; That is, very well made, and well thought out. I've only gotten to use it one time, but can't wait to experiment with it again next week while I am off work. I am a return Weber customer. I own one of the Weber hybrid grills which work from charcoal ignited by gas. That grill has been with me for over 10 years and still works perfectly.

Spend 10 minutes checking out the recipes, forums and modifications and you will be sold that this is the best smoker in this price range.
I have been able to prepare: baby backs, chicken, pulled pork, briskets, turkeys and jerky with outstanding results.
As with the other reviews, stability in temperature is the hallmark of this Weber gem. You can hold your desired temperature for at least half a day without adding charcoal.
As a side note: if you are a techno-gadget type, visit [...] and you can add an electronic temperature control to the Weber Smokey Mountain.
This is my sixth Weber product and the products they manufacture are well above the competition.

No matter what Bobby Flay says, you can't get real BBQ on a gas grill or at higher temps. You definitely can't get BBQ from a crock pot.

Within a couple of hours of getting your smoker from Amazon, you can be turning out baby back ribs that BLOW AWAY the chain restaurants. Seriously, your ribs will be much better and it won't even be close.
For beginning and experienced BBQers, you would be hard pressed to beat the Weber Smokey Mt. It is very efficient in it's fuel use. It is extremely easy to maintain consistent low temps for hours but you are still cooking over a fire. The only REAL smoker that is easier to cook with is the Pellet smokers that cost THOUSANDS of dollars.
By the way, just because a beginner will find the Smokey MT a great unit doesn't mean that it is an "beginner's model" smoker. Many people compete at the largest of BBQ contests using this very smoker.
Do it right the first time, buy a Weber Smokey Mountain. You won't be disappointed.

I purchased this Weber Smokey Mountain aka: Weber Bullet, over two years ago and I love it. This smoker is engineered to smoke meats at 200 - 300 degrees which is perfect for low and slow barbecue cooking. Great for ribs in particular. Trying to get a regular Weber Kettle to cook at that low of temperature is almost impossible. Weber came out with the newer version of the Weber Smokey Mountain (721001) soon after I purchased this model(2820). The improvements include a thermometer which you really need to smoke, an ash/drip pan on the bottom and a side door with an improved handle and the ability to lean it open when you need to induct some additional air.
If you are looking for a smoker and don't want to spend a huge amount of money the Weber Smokey Mountain Smoker is the answer. As with most Weber products, it is designed and engineered well, fairly priced and parts are always available through Weber. And it is made in the USA !

I tried my new smoker over the weekend, it worked great, but I had to add my own thermometers. Weber states that they will never put a thermometer in their smoker, but gave me a web sight that showed me the installation process. If your going to cook low and slow, you ought have an idea what temperature your cooking at! Can't wait to use it again, nor can the people that came over to sample my trial experiment.

This Weber is simply the best. Get it going, put in your meat - go to bed and get up the next morning to the best briskets and pork butts you ever had. It is amazing how this charcoal smoker can maintain such constant cooking temps whether it is -20 or + 99 outside.

I want to start by saying that I have used many bbq cookers over the years. At one time I owned a trailered BBQ rig that would cook enough meat to serve 800 people in a single session. I also cooked competitively with that rig.
I must say that the Weber Smokey Mountain smoker is the easiest cooker I have ever used. It has more capacity than you think. It takes very little work to tend, and maintains a near constant temperature (given the type of charcoal used) for hours. A twenty pound bag of charcoal will stay hot for more than 16 hours, which is plenty of time to cook just about anything you can fit in the smoker. The only modification I have used with the basic set up is to add a silicone stopper thermometer to one of the holes in the lid vent. (Available from the BBQ Guru).
Here are some quick instructions (similar to the Minion method on virtualweberbullet) Load as much of 20lbs of charcoal briquettes in the bottom as you can. Then put about 12-15 lit pieces on the top of the pile (these should be white (ashen) hot). Fill the water pan with warm water. Put the meat on the grates (after applying a good rub). Put the lid on (I leave the vent fully open when the thermometer is in the top hole). The bottom vents I set at about 1/3 to half open. LEAVE IT ALONE for about 3 hours. Come back and check the water level in the pan by opening the access door not the lid (in fact never open the lid until it is time for the meat to be done). Check the water level every 3 hours our so and add hot tap water if needed (be careful not to overfill - the fire will go out if you do). I also will shake the charcoal fire ring a bit at each inspection to get the fire going. That is it.
So far I have cooked three different meats. I cooked 4 picnic pork shoulders at once. They were rubbed well before cooking. I left them on for 13 hours and they were perfect. Last weekend I cooked two packer cut beef briskets they smoked for 10 hours, and were as moist as any I have ever cooked. These probably could have stayed on a little longer (11-12 hours) and would have been even more tender. Next project is a good rib cooking. Probably St. Louis cut spares. I expect great results as well.
If you are new to smoke BBQ cooking this is a no brainer purchase. The results are as good as those with cookers that cost thousands of dollars.
Don't hesitate just buy one. You will love it.

The Weber Smokey Mountain Cooker is a great smoker. This is my second smoker - the last one being electric, and there is no comparison. The quality of the smoker, as well as the results of cooking with it, are superb. You will be delighted at the number of specific recipes and web articles there are on the internet that specifically pertain to this smoker.
There is one downside, and it apparently takes some creativity and a small investment to fix. Almost all the recipes tell you what the internal temperature of the smoker should be while cooking. One big problem. There is no thermometer. I use a meat thermometer to determine when the meat is done - but since part of what makes smoked meat taste so good is how slow it cooks, the inability to know what your cooking temperature is can have negative consequences. I imagine you get a sense for cooking at the proper temperature with experience.
There are a couple of suggestions on the internet about how to fix this - none of which I have tried yet. Still, don't consider this a reason not to buy it - consider it a challenge worth overcoming to fully enjoy a particularly fine smoker.

I read a lot of reviews on the Internet before buying this smoker, and I'm glad I did. The smoker is easy to assemble and the directions for cooking are just as easy to follow. The first time I used it I made beer-can chicken and a marinated pork tenderloin. I got rave reviews from my dinner guests. I'm now up to doing venison sausage. One hint for amateurs like myself: Go by the smoker's times for cooking, not from whatever recipe you're using. The smoker is far more accurate. And if you Google this smoker, you'll find it has its own website full of adoring fans and their recipes and methods for using it. Oh, Amazon has the best price by far. And with free delivery, a no-brainer. Go for it.

I bought this smoker back in 2005 for my husband. We have been using it ever since on a pretty much weekly basis. It is a wonderful smoker for those of you who BBQ for your family. We've done ribs, whole chicken, brisket, pork shoulder and more on here from start to finish and they always turn out great. You will have to watch it a little, as with all BBQ, but it really doesn't take that much messing to keep the temperature right and the smoker going. We also use it as a grill, which works just great. I don't think it is too intimidating so even if you are trying to break into smoking this one will work just fine for you. This model is a little small for us now that our family has grown and we may have to invest in a larger one, but has worked wonderful for 6 years. It's a great one for individuals or small families. I highly recommend it.

There are many other good reviews, so I don't need to add much more than this: This porcelain-coated beast will hold a temp for hours on end. You can easily cook better BBQ than the best BBQ joint in town. The Weber-supplied manual is a joke - go to the Virtual Weber Bullet page (google it) for much better instructions on how to use it.

I finally had the chance to use my new WSM cooker this last weekend. I cooked pork spare ribs for about 4-4.5 hours. I was surprised at how good the ribs tasted. I cooked 3 full slabs of ribs and everyone was impressed with the results. I had done quite a bit of research prior to using it for the first time, and it paid off.
One note: When I received my WSM, the packaging was in great shape. However, the first time I put it together I could tell the middle section was out of round (as other reviewers have warned about). Mine was very minor and I was able to gently shape it so it was a snug fit all around. It worked great my first time cooking and I had no problems with the out of round issue after the minor correction.
I would highly recommend this product for a first timer like myself who wants to get into cooking with smoke.

I've been doing BBQ on a regular gas grill for years - even adding wood chips to try ot get a smoked flavor. Well, those days are gone. The Weber Smokey Mountain is high quality, easy to use, and fun to cook with. So far I've made pulled pork, ribs, and chicken. Each has been fantastic.
The only negative is that the user's manual is not very helpful or well written. Be sure to go to an online users group such as virtualweberbullet dot com for some tips and tricks that will make you the envy of your neighborhood in no time.

I purchased my Weber Smokey Mountain Cooker in August 2003 after talking about doing so for years and after looking at many competing models. I am not disappointed. From an engineering prespective it's design is simple and straightforward and it is extremely well built (just compare it to competing models and you will quickly see the difference). By reviewing the Thermometer installation procedures available at "virtualweberbullet" web site, adding an industrial grade thermometer by drilling a small hole in the cover was completed easily.
The results have been fantastic!! I have used the noted web site to learn about techniques to extend the cooking period without having to add charcoal and the rib recipe (The Best Ribs in the Universe) is out of this world! Smoked Turkey, smoked chicken, smoked salmon and smoked almonds have all been easy to prepare and the results outstanding.
I easily designed and constructed a side simple shelf (from two shelf brackets, a 10"x12" piece of oak, and a 1/8"x1" by 30" piece of steel straping available at Home Depot) that can be temporarily attached to the cooking section for use during any smoking session and easily removed so that you can then place the cover on the smoker for storage.
You will not be disappointed with the results of you efforts with this smoker!

I did a fair amount of research prior to buying this smoker. The information on the virtual Weber bullet site convinced me to give this smoker a try. I've never done true barbecue (low temp and slow cooking), so can't compare to other cookers, but this one works great. Out of the box, assembly went quickly.
Since assembly, over the past month and a half, I've had three cooking sessions in the smoker. The first was three chickens that took about four hours and were fantastic! Second session was on the fourth of July, when I did four chickens and two racks of ribs. Again, fantastic! Most recent cooking session was an eighteen hour slow cook of pork butts and the Weber smoker handled the entire cooking time with the original (very full) load of charcoal. How'd they taste? What comes after fantastic? Out of this world, I guess, because they were beyond fantastic.
If you're going to buy a smoker, skip the cheap ones and get this one. Holds temperature very well over long times, which is required for low and slow cooking. A great smoker I expect I'll be using for many years to come.
Update: After some two and a half months, it now totals nineteen whole chickens, eight racks of ribs, eight pork butts totaling around sixty pounds, and six meatloaves of 2.5 pounds each. I tend to barbecue in abundance and freeze so that we can make use if it in the busier times of the week. Great smoker, turns out great food, you won't be sorry.
Second update: Was wandering around the site and, since I'm using it today, decided to add a new update to this one. I've had this now for about a year and a half, currently doing three racks of ribs for "finger food" later today. I've done 36lbs of pork shoulder at one time, on another time I smoked eight whole chickens at one time (over 31lbs), but both of those extended the cook time a fair amount, so I do less and do it more often now. Still a great little smoker!

This smoker is everything that people said it was. I have smoked 3 chickens, 10lbs. pork shoulder, 12lbs. turkey, and just last week 4 slabs of ribs. The family ask me every weekend, dad what are you smoking us this weekend. I give it 10 out of 10.

I've only gotten to use it one time, but can't wait to experiment with it again next week while I am off work. I am a return Weber customer. I own one of the Weber hybrid grills which work from charcoal ignited by gas. That grill has been with me for over 10 years and still works perfectly.

I'm not a longtime smoker user like the pros over at VirtualWeberBullet dot com. I'm new at this stuff, and just got my Weber Smokey Mountain (WSM). And yet, my very first "cook" (baby back ribs) came out perfect with this smoker. I smoked two racks of ribs, and this thing NEVER left the 225 to 250 degree temperature range during the 5 hour run. This thing is just rock solid. One of the beauties of this smoker, when compared to others, is it's small footprint. I was able to store it in my garden shed AND my regular gas BBQ right next to it. Before you buy, do yourself a favor and read up on it at the Virtual Weber site listed above. Lots and lots of great tips. It was invaluable in my getting up to speed quickly.

Seems expensive but when compared to others it is a great unit for the money. Does a lot better job than the cheaper brinkman's etc and just as good as the more expensive green egg
Bandsman : Weber 2820 Smokey Mountain Cooker/Smoker
I've been able to use the WSMC three times since I received shipment of the smoker. It is easy to set up and assemble. All smokes were easy to get going. Maintaining the internal temperature is easy and effecient. This my first time with a smoker. I have a Weber Genises Grill also. It's hard to beat Webers products. If you're considering a "smoker", this is the one to get. There is a web site which is great for "newbies". Lots of help, great recipes, etc. A great buy!

The Weber Smokey Mountain Cooker is a great smoker. This is my second smoker - the last one being electric, and there is no comparison. The quality of the smoker, as well as the results of cooking with it, are superb. You will be delighted at the number of specific recipes and web articles there are on the internet that specifically pertain to this smoker.
There is one downside, and it apparently takes some creativity and a small investment to fix. Almost all the recipes tell you what the internal temperature of the smoker should be while cooking. One big problem. There is no thermometer. I use a meat thermometer to determine when the meat is done - but since part of what makes smoked meat taste so good is how slow it cooks, the inability to know what your cooking temperature is can have negative consequences. I imagine you get a sense for cooking at the proper temperature with experience.
There are a couple of suggestions on the internet about how to fix this - none of which I have tried yet. Still, don't consider this a reason not to buy it - consider it a challenge worth overcoming to fully enjoy a particularly fine smoker.

Add charcoal, water, some wood chips and your meat, and you can't go wrong! The thing is massive and won't get too hot if you make sure to fill the waterpan. Seriously foolproof bbq.

This is a great product. It lives up to the Weber name. The WSM is well built with tight tolerances so heat does not escape. It is easily possible to get a consistent even burn at 215 degrees for 6 or more hours with a single chimney of charcoal.
The two cooking grates allow you to cook a lot of food at a time, and either grate can easily fit several racks of ribs, a 15 pound brisket, or 2 or 3 pork sholders.
The water/drip pan holds about a gallon of water and allows for warm moist heat, causing a natural convection and ensuring even heating.
It is a breeze to put together and out of the box you will be cooking delicious slow cooked authentic barbeque!

We gave the Weber bullet as a gift to our son for his 38th birthday. When it arrived we checked to see that the parts went together well. It assembled nicely. The smoker was a great hit at the birthday party. The next weekend we were invited over to have slow-cooked ribs. What a wonderful way to cook. Very tasty.

I thought at first this smoker was a little pricey but bought it anyway. Let me tell you that it is built to last and well worth the money like anything from Weber. It really holds temperature well. The first time I used it to cook ribs,which only take about 4 hours to cook. It held a temp of 250 for over 8 hours on only half a load of charcoal.
The only complaint I have ( and it's a small one) is the the water pan is a little undersized. [...]It also needs two thermometer's so you can be sure that it is holding temperature.
My advice is Buy it !! You won't regret it!

I read a lot of reviews on the Internet before buying this smoker, and I'm glad I did. The smoker is easy to assemble and the directions for cooking are just as easy to follow. The first time I used it I made beer-can chicken and a marinated pork tenderloin. I got rave reviews from my dinner guests. I'm now up to doing venison sausage. One hint for amateurs like myself: Go by the smoker's times for cooking, not from whatever recipe you're using. The smoker is far more accurate. And if you Google this smoker, you'll find it has its own website full of adoring fans and their recipes and methods for using it. Oh, Amazon has the best price by far. And with free delivery, a no-brainer. Go for it.
