Steps of chamber vacuum
Check the bag size with the ruler
Compare the mouth of the bag with the ruler at the front of the machine to determine whether the bag is large (L) or small (S). Then confirm that the size indicator on the right is in the correct position, otherwise, press "SmartVac" to switch.
Put in the bag with food inside
Don't let the edge of the bag mouth exceed the "limit line" while keeping the sealing bar area free of food.
Clamp the lower wall of the bag
To Straighten the lower wall of the bag mouth and clamp it into the clip, you can hold the lower side of the bag taut and ease the bag into the clip with a gentle but firm back and forth motion.
Press "Start/Stop" once to start!
You can use SmartVac function to 0ne-button-start the process. Or you can press the "Customize Vac" to set vacuum time by yourself.

IF you have the room or store space and use it somewhat infrequently, then this is your vacuum sealer. I tested it over a weekend on moist meats as well as dry items such as chips and then on to the veggies. I did have a couple of seals that were not complete or sealed enough to resist very light pull to open; that I will chalk up to something I did incorrectly. I believe the big plus here is vacuum time control, and in my experience I used it to add time in every situation. I did not test this with liquids put then again having used sealers for years I've actually never had occasion to do so and thus no test. The weight, as noted by many, is there; you would expect that from a machine like this, and it has a large footprint; thus, most folks will store it out of the way I'm guessing, as is our situation and then the weight of it comes in. Deal breaker? Not at all, but it needs to be noted. The panel instructions are very convenient BTW...about all you need to have to begin operating it. Very nice machine.
AnitaAZ : Adjustable sealing time, small chamber, no view port
I have mixed thoughts about it's performance. This is the first chamber sealer I've had, bonus it has external vacuum sealing also. I've watched many of cooking shows when their using vacuum chamber sealers, well this doesn't perform like a $1000 plus machine, but I expected better.
The chamber is fairly small and I knew that from the listing I was able to do up to a 3 lb roast without issue after I learned how to use it. What I didn't care for is you don't know if it's actually vacuuming until it's done you also don't know if all the air is out of the bag before it seals because you can't see through the solid lid and manually adjust if necessary. The chamber has curved corners so I found it challenging on different shaped foods to keep the 90 degree corners of the bag tucked down so the chamber could seat and seal properly.
Even trying different shaped, sized foods, and dual sided textured bags, then using manual or automatic vacuum settings, I was never able to achieve getting all the air out using the chamber, granted it was small pockets of air, which I could see and assist moving these air pockets out when using the exterior vacuum.
Something I appreciated, is the directions to use the chamber are printed on the top of the machine, and the exterior vacuum sealer are in the manual. The manual is very helpful for many things and tells you how to adjust the heat seal time also what color the bag should turn when proper heat is applied.
Now for wet foods they suggest freezing to form a solid or semi solid, unless you're using the chamber for marinating.
The exterior vacuum sealer is pretty straight forward, but you can adjust the sealing time, and it can pulse which is great for soft foods like bread or fragile fruits.
An overall drawback is the max 10" wide bags that can be used in the chamber or external. This isn't so bad if you're vacuum sealing for smaller portions, but is limiting for larger cuts of meat like roasts and ribs.
I was hoping to donate my older wider vacuum sealer, and streamline my small appliance shelf, but instead it grew. I've vacuum sealed about 80lbs of meat and meals in this machine using both chamber and external, so I definitely have the hang of it now, but prefer using the external over chamber, mostly since I can't see it to control what's happening.

Hairy Potter : Huge, Loud, And Seals Incredibly Well
If you don't have a large kitchen, you probably want to pass on this machine. If you have the space for it, you will not be disappointed in its performance.
PROS: (1) Seals perfectly every time (just make sure you press the correct settings). (2) Seals liquids without making a huge mess! (3) Works with virtually any bags, as long as they are less than 10" (4) Very handy marinating function

I want to add that this is the first sealer I've owned. I've been told that all sealers are very loud, and this one isn't unusual in that regard.
Bill M. : A High-End Home-Use Vacuum Sealer
This isn’t your typical home use vacuum sealer. This vacuum sealer is a burly beast. I would almost consider this a commercial quality vacuum sealer. This is without question the best vacuum sealer we’ve ever owned. And it is definitely one of the best home-use vacuum sealers on the market. We are very happy with this high-quality addition to our kitchen tools/appliances.
However, with that said, it’s important that you know this vacuum sealer is quite large. It’s 14-7/8 inches from side to side, 13-3/8 inches from front to back, 5-3/8 inches from top to bottom and it weighs 13.5 pounds. And that’s more than double the size and weight of our old FoodSaver vacuum sealer. But, in my opinion, this vacuum sealer is definitely worth the additional kitchen drawer space it takes up.
Our favorite thing about this vacuum sealer is how well it vacuums. It vacuums super hard. When this thing is done, there is zero air left in the vacuum bag. It vacuums so hard that it will start smashing some foods. BUT, thankfully, the suction time/power is adjustable. And that brings me to our second favorite thing about this vacuum sealer. It’s adjustable. You can adjust the suction time/power, and you can adjust the sealing function, too. The adjustable sealing function is important because depending on the vacuum bags you’re using, you may need a couple of seconds more (or less) of sealing time.
I/we think this is a terrific vacuum sealer. The quality and functionality are pretty close to that of a commercial vacuum sealer. It’s definitely the best home vacuum sealer we’ve ever used/seen. And, hopefully, it will be the last vacuum sealer we’ll ever need. Or at least the last vacuum sealer we’ll need for ten years or so.

Northridge Mark : Works as a chamber sealer and as a bag sealer - but know what you're getting first
I've been wanting a chamber sealer for years. A chamber sealer is a device that can vacuum seal liquids and other foods that you can't seal with a typical vacuum sealer. What a chamber sealer does is remove all the air in the bag that surrounds whatever is in the bag, then once the vacuum is created inside the bag, seals the bag.
The Vesta also seals the more typical vacuum seal bags, although you have to make a minor change inside the sealer to be able to use this function.
It seemed to take a LONG time for the air to be evacuated from the item in the chamber, and a long time to take the air out of the bag that I was sealing in front of the machine. I finally learned more about the way a chamber sealer works - because it sucks the air out of the chamber, it won't seal until enough vacuum is created. Unless you're sealing something bulky, it takes about a minute or so to remove enough air from the chamber to get to the point where the device automatically seals.
The trick to getting this to go faster is to put something inside the sealer (a thick piece of foam, or something) that reduces the amount of space inside the chamber, so it doesn't have to remove as much air before it seals the bag.
The sealer is large and not particularly light. I still haven't come across an appropriate thing to put inside the chamber to speed things up.
Once I run into large items that won't fit into a standard vacuum seal bag, or just want to take advantage of the extra vacuum that this sealer provides, it'll be back on my counter, sucking the air out of all kinds of things - and sealing them tightly, too.

We found that it took a few tries to get this machine to work correctly. However, once we got it figured out, it worked well.
This works well for things like meat from hunting trips, large amounts of berries from the U-pick farm, and other bulk storage situations.
We tried it with our sous-vide meals and it didn't work as expected, but that probably isn't the fault of the vacuum seal machine.
David Rocks : SUPERB Powerful Internal Vacuum Chamber Food Saver Sealer Inside or Outside Bags Flat & Patterned
This is the BEST built and most powerful vacuum food saver sealer I have ever seen. It puts all others to shame at a cost that is not much more than the original F**dSaver Brand machine when I purchased one many years ago. Now standard small vacuum sealers can be had for 1/10th the price of this but they in no way compare. This is a large appliance that will take a lot of countertop space at ~15"x14"x5.5". Picture 1 shows the inside vacuum chamber that allows me to put in a quart sized flat, non patterned bag like the aluminized mylar one in Picture 4. Because the entire bag is inside the chamber the vacuum removes the air easily before sealing. NO other standard sealer will do this! The lid presses shut with no buttons to push to release it once the sealing has happened and the Vesta Sealer automatically releases the powerful vacuum. Plus mylar bags are tough to seal; this does fine with the seal bar timer set to 6 seconds. Picture 5 the inside bag clip - which will LOCK DOWN (Picture 8) when I do outer bag vacuum sealing. Very well thought out! Picture 6 the sealed coffee beans in the mylar bag with high vacuum showing the beans. Excellent!
The control panel (Picture 2) features buttons that are raised up and provide a tactile response, not just a standard membrane switch. LEDs light up to show what function is selected. There is a large bright LED that displays time, counts down, provides other alphanumeric info too. I can set vacuum time, seal time, pulsing vacuum for marinades, inner chamber or outer bag vacuum, and other options. Well written instructions are detailed in the manual and stickered to the appliance, which helps. This appliance is made largely of aluminum NOT plastic. I accidentally scratched a bit of the grey pebble finish coating off and could see the metal. The appliance is heavy at about 13.5 pounds. Superior and built to last!
When running it makes a fair amount of noise because it has a piston vacuum pump that can do vacuum to 45 Kilopascals (KPA), a unit of vacuum. Most sealers do 20 KPA at most. This is powerful. The noise is worth it for a top quality high vacuum. The large seal bar is selectable for time on. It can be popped out if needed for cleaning should liquid get into the bar chamber - just press one end and it can be lifted out. Again, excellent design.
One minor problem is this will not handle an 11 inch wide food saver type bag for external sealing (Picture 7). The 10 inch wide seal bar is long enough for other sizes and I did not find that a major limitation given the other outstanding features this Vesta Chamber Vacuum Sealer has. I used it to do a long vacuum bag cut from a roll to vacuum seal some pepperoni sticks (Pictures 8&9) with no problem. I did need to leave about 1 1/2 inches of bag at the top to insert into the vacuum area. That's a bit more than other standard sealers, but bags are inexpensive. I was also able to vacuum and reseal the original commercial Hempler's Pepperoni [YUMMY] package (Last Picture).
I Highly Recommend this Vesta Chamber Vacuum Sealer. It is definitely an upscale food vacuum saver/sealer of superior design and constructed extremely well. This is the BEST by far I have ever used and would be great for a small business too.

I bought this after always having foodsaver vacuum sealers. I have been looking at the chamber vacuum sealers and loved the price and how this one would externally vacuum seal. However it vacuum sealed externally and chamber sealed great it would not seal once the vacuum was finished. I really wanted to love it.
KC : Excellent Machine, So Much Better Than Regular Home Vacuum Sealers
I've been looking at the professional true vacuum chamber sealing machines for awhile now, but the commercial versions are very expensive, bulky and require maintenance that includes oil changes in some instances, so they were out of the question for my home use. I wanted a chamber sealer so that I could have the option of using smooth bags such as those made of mylar or a range of (cheaper) non-textured bags that were not those bumpy ones that general home vacuum machines are limited to. This Vesta Chamber Vacuum Sealer, Chamber Vac Elite gives me that option, and is an excellent choice for home use. This has a small footprint (like a smaller copier/printer size and shape), is much less expensive than even low end commercial chamber vacs, and there is no extraordinary maintenance involved- just plug and press.
I used the inside chamber version for a block of cheese I had just opened (see video- sorry, could not upload) and it was easy to adjust for bag size -Large or Small, with the Large bags vacuuming for longer. The vacuum time can also be customized, as can the sealing time. This machine can vacuum within the chamber, which is good for non-specialty bags as noted, and helps to prevent juices from wetter foods from going directly into the vacuum machinery, as there is a much bigger well here (even so, should freeze wet foods before vacuuming to prolong the life of this machine).
This device also allows for an external vacuum, for food held outside of the machine, with the bag's open edge just held over the sealing bar inside (press down the grey toggle button so the external bag edge can lie smoothly over the sealing bar). The external vac function requires the use of specialty (bumpy) bags like most all standard external machines. I used the external vac function with a smaller piece of cheese for testing in my pics, and this works both with the auto "Start/Stop" one press function (switch to "Vac and Seal" button and press start), as well as a with the "Pulse Vac" function, which allows you to vac just as much as you want- it vacs as long as you are pressing it. If you use the pulse vac, you need to press the Seal button after you complete pulsing but before you open the lid, because you are manually vac and sealing.
I tried all all these different functions with different sized bags, cutting the bags as I went. I was able to reuse the bags several times by cutting right past the seal to open, which is great for high traffic foods like my cheese, for example, and allows for less plastic waste. You do need adequate sized bags, however, and like all vac machines, you should have about 2" of leeway between the sealer edge and the food.
I am loving this machine- esp. the chamber for using smooth bags, and the external pulse function so I don't waste any more bags that only partially vacuum inside using machines that only have auto timing. I did customize the sealer to 1.5 seconds longer than the factory presets on this, because I was getting some leakage on a few test seals, but that extra bit of time fixed it right up. I am donating all my other vacuum sealers (I have tried many), except for one machine that has a vacuum tube feature on it that i use for my canning jars and wine. If this Vesta had the tube feature, I'd get rid of my tube vac too.
I'd highly recommend this device. The limitations are that you can't use bags beyond 9.5" wide, but for most home use, this is gives an excellent quality vacuum with many customizable features.
Update: I just want to say I just love this machine- it provides professional quality vacuums on even random pieces of chopped chicken and beef- see additional pics. I'm not having to finesse how I place my foods in the bag w this machine, and it's just so much easier to use.

My husband is an amazing non-professional chef. He recently started sous vide cooking and we discovered vacuum sealing because of that. This machine works well to vacuum out all the air as well or better as our other vacuum sealer. However, it has the chamber capability, too, which is really impressive and can be used for much more than sous vide cooking. My husband cooks soups and spaghetti sauce and with this machine's chamber, it's easy to seal liquids and store in the freezer for future use.
It's really impressive. Today he used it to package up a big huge batch of sauce and then he decided to try and seal up some beef stew. We had great results and will be able to just take it out of the freezer, drop the bag in boiling water, and eat. Or, of course, we can open it up first and cook in the pot.
This is very easy to use, the instructions are clearly written, and it works as well as you'd hope. the chamber isn't huge but it's a nice size for a batch of stew or soup.
