Answer: Yes as you have to drill a hole and attach it yourself

Answer: Yes this one or the Big Kahuna will add the extra smoke you would need to smoke cheese.

Answer: As far as size, yes it will make plenty of smoke for you. As for mounting, you need to drill a hole. That could be a bit hard in ceramic.

Answer: Thank you for your interest in our cold smoke generators. Yes you are correct. They produce the same amount of smoke but have different smoke times on one fill.
Answer: Don't have a bigger one, so I don't know. That said, the smaller one puts out more than I could possibly need if I crank the air pump to full and have it started well (put a little charcoal on the bottom), but it would be nice to have a longer time between refills. I got the smaller one 1) because I wanted to see how well it worked before forking over a bunch more money and 2) I took it abroad to my main home in my suitcase, and every pound counts with the airlines. I recommended the bigger one to my son in CA just because of the capacity, not because there was not enough smoke, and weight is not an issue for him.

This unit works fantastic. It comes with an aquarium pump to regulate the smoke. That works great, but I hooked it up to my air compressor, with a inline regulator, and that is the way to do it. It does get dirty, but it is a smoke generator! If you are looking for a fantastic way to smoke foods, buy this unit. You will wonder how you ever did without it!!!

This is the ultimate solution to adding a smoker option to your grill or to any closed container. You could take a metal trash can and make a great cold smoker with this. I added one to my Big Green Egg…why you ask, to allow smoking at temperatures below 100° F.! This allows the smoking of cheese, salt, fruits and veggies as well as making lox from salmon. I have added a SmokeDaddy to a full size commercial combi oven. This allowed me to offer smoked foods on my menu like; TRUE smoked ribs, brisket and chicken! It is so simple to install, drill the hole, screw in the pipe from the smoker chamber and you are done. As to fuel, it can use chips and or pellets. I like to mix those two. If I use straight pellets, I mix in a few small pieces (3/8”) of charcoal with the pellets to help them burn better. You will not believe the amount of smoke this thing produces…take it from a professional chef, it’s awesome!
