So if it just dehydrated it (dries) I could freeze the item first then put it in and it would be like freeze drying maybe?

Answer: Unfortunately, this food dehydrator cannot do freeze drying.

Can I freeze dry fruit? Or ice cream sandwiches? Or candy?

Answer: RHFD-19001 is a dehydrator, so it cannot freeze dry fruit, or ice cream sandwiches, or candy. However, you can freeze the drying fruit with refrigerator if needed.

Can you get fruit rollup trays.

Answer: For this dehydrator, it comes with 5 trays for dehydrating fruit, vegetables, meat, herbs etc. But Rosewill don't sell extra trays separately. If any tray is damaged or missing due to non-personal reason, you could contact Rosewill Customer service and provide the order invoice, as long as it is within the 1-year manufacturer warranty , Rosewill could provide a replacement for the whole unit.
