Answer: I wouldn’t use it for grilling since there’s no direct flame. Baking... in a smoker... it can operate at 350 degrees but that’s based on a wood fire. I would imagine some of that wood smoke flavor would be absorbed by whatever you were baking so I would not think of using it that way. It’s primary function is to smoke meats, I would stick with that. Mine sits right next to my grill so if I want to Have a Smokey flavor to my steaks, I can easily move between the two. I’ve even smoked a scallop or two...

Answer: Depends on what you mean by "cold". We have cold smokers (from Louisiana grills, and from masterbuilt) that we use for cheese, nuts, fish, etc. They keep the smoking chamber at just a few degrees above ambient temp. This smoker won't do that. You can smoke low (150 degrees) with it, but that will melt cheese, cook fish, etc.
Answer: Yes, it has a smoke setting where it only makes enough heat to make smoke. If you want it real low, just keep the door cracked. It will spike on you at times, due too fire. Lowest constant setting is 150.

Matthew : Amazing smoking
Great smoker and well worth the $450 I paid at Wally world. Be sure to follow the burn in and start up/cool down instructions as well as keeping the water tray filled while smoking. I keep mine under an overhang on my front porch and put a cover on it when not in use.
This has worked great for me on several 24hr+ smokes and I love that I can just set it and forget it. It does have a temprature swing (your using a fire instead of a heating element) typically will range between 10° under to 20° over what I set it at but will only do this after I have opened the cabinet to fill the water tray or check the meat temperature. Once it has leveled off it maintains temps well.
I don't like temp probes that stay in the meat while cooking I've found that they typically read higher then normal due to thermal conduction. O recommend using a instant read thermometer to check your temps.
Only con I can give this is the location of the control panel. It's conveniently located to collect drippings when you try to apply mops to your meats. I've gotten around this by placing a rack under with a tray when I'm doing my mop applications that I can just pull out to cover the control panel.

I purchased this smoker and was extremely impressed.... at first. It worked great. It had good temperature, generated great smoke and produced an awesome smoked meat equivalent to a professional smoker. Then it stopped.... only after about 5 or 6 smokes, I started having issues. I keep getting an error message (ErL), and the smoker would shut off during the cook. There was no way to re-start the smoker, and this cost me some quality meat and a lot of embarrassment..
I searched for a fix, and found no resolution that would solve the issue.
I attempted tr ed to contact PitBoss, but wa greeted with a phone tree. I tried to start an online chat to resolve the issue, but have not heard back from anyone in over a week. It is impossible to reach anyone in thier service department and I cant even get this device to turn on at this point.
I was so happy with this smoker, but it was short lived. And turned out to be a turd!

I've been using this smoker for a while now and it does a incredible job. Lots of smoke flavor and consistent cooking. Its definitely set it and walk away kind of deal. I've cooked Turkey, Ribs, Brisket, Pork Butts, Whole Chickens, chicken breast and steaks in it. They all come out fantastic. I've even had people ask me to do pulled pork for them for parties, after they ate mine. So I highly recommend this smoker.
Most of the complaints on here I see are easily corrected. The main thing you must do is clean the smoker after each use;
1. Do a high temp burn off after each use. You have to burn off grease buildup. Any left should be removed with cleaner or scraped off with razor blade. After a couple slow cooks, Grease buildup can catch fire.
2. Clean the glass (409 cuts through the buildup and leave it looking brand new)
3, Vacuum out the fire chamber and bottom of cabinet. Failing to clean out the fire chamber will lead to reduced smoke and the unit clogging up. Just like most pellet smokers.
4. Don't leave it out in the weather, pellets don't like moisture. It will get all gummed up. I store mine inside the garage, Its on wheels so not a issue.
5. Clean off thermostat at the back of the pit. Just a quick wipe and you will get more consistent temps.
The one down side is the control unit. It is cheaply made and the plastic rubber cover over the readouts comes loose with heat. Food and liquid gets in behind it. Doesn't impact the great cooking, but is definitely a defect. Thus I had to give this incredible machine 4 stars.

The unit died after about a year and a half of occasional use. It turned off in the middle of smoking some ribs. I stepped through the equipment with a multi-meter and confirmed power was being supplied to the board and the main fuse was still good. I think some component within the main board failed. It sucks this is $400+ down the drain. I used this unit for about 15 cooks in the ~1.5 years I had it.

Do not buy. The control board for this product is junk and poorly designed. The electronics sit right next to the fire box part at the bottom of the unit. I bought this unit at costco (they sell under the Louisiania Grills brand, but same thing with the same parent company). 3 months in the control board started giving constant error codes. Called customer support, wait in line for 45 minutes before they answered, they sent a new control board to install. The shipment of the replacement part took almost 6 weeks. It worked great again for 3 more months, then constant error codes. If you search for Pit Boss erL erH you will see lots of videos and forum discussions about these issues. The smoker would be great if they had done a little bit more design work on where to put the control board and the temperature sensor, right next to the hottest part of the box for both seems like a really dumb move to me.

My pit boss was originally had a scheduled delivery for Sunday and never showed up. I was contacted Sunday saying there was a delivery delay and I would receive it on Tuesday. Tuesday comes and it is delivered...no damage to the box so I assumed it would be a straight forward assembly.....nope I was wrong. First thing I noticed is the wires going to the control panel are under extreme tension once the heat shield is installed. Then once you place the wire cover on top you are essentially crimping the wires.....this is never good. I even called Pit Boss and sent pictures and they said carry on with assembly....um ok. Then comes to the assembly of the grease trap brackets which are misaligned and apparently this is a common problem...probably wouldnt be an issue if the control panel wasnt sitting right there. Last straw for me was when installing the smoker grates into the brackets. The pictures show where one was welded lower than it should have preventing the grate from sliding in all the way. For almost $700 it shouldnt have all these design flaws and manufacturer defects. So it's being returned. I dont know how I missed the reviews of the exploding glass and fires or else I wouldnt have brought it in the first place. Definitely would expect mine to have issues with just how the assembly went.

The smoker was delivered by UPS.
There’s a Dint in the top near the door. The fan motor cage was severely crushed. Had to take a 4x4 and a dead blow mallet to straighten it out. The door doesn’t seal right. I started to do the burn in and the unit failed to fire up dew to the fan wouldn’t work. So I took the 4 screws the hold the fan motor loose and found the wiring was hanging down to far locking up the fan blade I bent it out of the way and got it working. Way to dam much money to have a damaged smoker 750.00 I love these vertical pit boss smokers but this was too much for a damaged unit. Can’t say how it got damaged but after all they was assembled in China and shipped all the way to here to the states. Another US company giving the jobs to China.

Bought the smoker and ran it fine for 6 months, kept it clean and covered, then it threw an error code. Smoker is going off a cliff and I'm buying a Traeger, something I wish I had done the first time.

I have no idea why anyone is having any trouble with error codes or temp issues ? I do have the 5.5 model and I’ve used it 5 times and not one error not one temp problem ? You plug it in you prime the hopper you set it to the smoke setting leave it alone prep your meat turn it to the temp you want or leave it on smoke for about a half hour then set your temp at say 225 for some ribs for about 4 hours wrap your meat in some butcher paper turn up the heat to 275 for an hour or hour and a half remove put some BBQ sauce on them put them back in for about half hour and whala perfect meat:) It doesn’t get any better ???? Oh and fill your water pan and line it with foil for easy clean up .

Temp gauge went out after a week called customer service lady was very rude and told me they won’t warranty the temp control and a new one would be about half of what I paid for the smoker!The problem with this is it the control is at the bottom where the water can drop into it so mine malfunctioned and got so hot it set the pellets on fire that was in the back of the smoker,shattered the glass and burned the paint off.
Marian Hollenberger : Great for an expert but not a novice
Previous owned an electric smoker. Big selling point was the total cooking area of 1657. Previous smoker only had 577. This smoker was not much larger inside than previous one, only had two more racks to put food on. Had problem with pellets feeding into burner, the side slopes of the pellet hopper are not steep enough to allow all the pellets to slide down onto burner. This smoker is a lot more labor intensive, keeping pellet hopper filled, the startup procedure, the turn off procedure, and keeping the water pan filled. My old electric smoker just filled up the water pan, set temperature, set time and walk away. The first meat I smoked was 2 pork shoulders and took almost 9 hours, but was the best pork I had smoked. Had one problem during smoking the pork, didn't realize the water had evaporated and droppings in the water pan caught fire. Turned off smoker and fire went out. Realized that have to check the water pan frequently and insure there is water present. I would recommend this smoker only to die hard meat smokers since it did do a great job of smoking the pork. For novice meat smokers I recommend an electric smoker,

I love this thing. There’s a learning curve if you’ve been using a horizontal pellet grill. Stick with it and you’ll live it.

Works great but the quality of pellets makes a big difference. The first 30 min. was Kingsford hickory, major swings. Second 30 was treager hickory, with half sized swings. You get what you pay for.
Jared : Horrible control board
Do not buy. The control board for this product is junk and poorly designed. The electronics sit right next to the fire box part at the bottom of the unit. I bought this unit at costco (they sell under the Louisiania Grills brand, but same thing with the same parent company). 3 months in the control board started giving constant error codes. Called customer support, wait in line for 45 minutes before they answered, they sent a new control board to install. The shipment of the replacement part took almost 6 weeks. It worked great again for 3 more months, then constant error codes. If you search for Pit Boss erL erH you will see lots of videos and forum discussions about these issues. The smoker would be great if they had done a little bit more design work on where to put the control board and the temperature sensor, right next to the hottest part of the box for both seems like a really dumb move to me.

Do Not Buy....I purchased this smoker and within two times of wheeling it in and out of my garage the base frame broke. I have contacted Pit Boss and filled out a support case immediately but have not received a response in the last two weeks. I have tried calling numerous times but no one answers the phone. Very disappointed in the quality and customer service. I recommend you look into a different manufacturer for your Pellet Smoker.

Absolute junk. Good concept, great looking, terrible function. I bought one it worked for 1.5 smoke and started giving erl codes. I worked with customer service and all they would do is send parts, that didn’t fix the issue. Not pleased at all with pit boss.
